Fig and Arugula Salad with pecans, basil and goat cheese, tossed w/ a balsamic vinaigrette. Original Recipe 8/2010

Fig and Arugula Salad w/ Pecans, Basil and Goat Cheese

red onion, thinly sliced

pecans (or make these maple glazed pecans)

baby arugula (about 6-7 cups)

6-8 figs, stems removed, quartered

10-15 basil leaves, torn

teaspoons maple syrup

salt

pepper

vanilla (optional)

If sensitive to red onions, thinly slice and soak in salted water for 15 minutes.

Toast pecans in a dry skillet over medium heat, stirring occasionally until fragrant and lightly toasted, about 5-6 minutes.

Place arugula, pecans, drained onions, and torn basil leaves in a large bowl. (At this point you could refrigerate until serving, placing figs and goat cheese overtop of the greens).

Drizzle the dressing ingredients into the salad bowl (or feel free to mix dressing together in a small jar or bowl first) tossing the salad until all the leaves are lightly coated. Add the figs and goat cheese, and lightly toss to incorporate.

Taste, adjust vinegar and maple to your liking, adding more if you prefer.

Delicious! Served with Kale. Used honey instead of maple syrup, added a little lemon to the dressing. Yum!

This Fig and Mozzarella salad is going to become your new favorite twist on a classic Caprese salad. This is a Fig Caprese! Yes, we are talking figs with cheese. The ripe fresh figs replace the tomatoes, making this a fruity yet savory addition to your dinner table. What could be better than ripe figs, fresh mozzarella, good olive oil and fragrant basil? A perfect lunch or light dinner.

Fig and Mozzarella Salad (Fig Caprese)

mozzarella

basil leaves

tbsp extra virgin olive oil

tsp sea salt

Cut the figs into halves or quarters and arrange on a platter/plate.

Tear the mozzarella into rough chunks and arrange amongst the figs.

Sprinkle the fresh basil over the salad, then dress with extra virgin olive oil and the sea salt.

Easy and flavor-packed prosciutto fig salad with creamy burrata cheese, pistachios, fennel, and easy dressing. A seasonal summer salad at its best!

Easy Prosciutto & Fig Salad Recipe (video)

oz baby arugula

fennel bulb (thinly shaved/sliced)

Persian cucumbers (sliced)

basil (chopped)

prosciutto

oz burrata cheese

pistachios (salted & roasted; chopped)

tbsp honey

tbsp balsamic glaze

sea salt & ground black pepper (to taste)

Start by prepping some of the ingredients: slice the cucumbers, quarter the figs, chop the fresh basil, and chop the pistachios.

Trim the green parts off the fennel bulb and save them for garnish. Also trim off the bottom and any brown bits. Use a mandolin slicer to very thinly shave the fennel bulb.

Preparing the Salad Ingredients:

On a large serving platter or in a large salad bowl, combine the baby arugula with the thinly sliced fennel. Toss the two together until they’re well combined.

Next, top the salad with sliced cucumbers and chopped fresh basil. Pull apart the prosciutto slices into small, bite-sized pieces and add those next.

Gently pull apart the burrata cheese and drop the cheese evenly over the top of the salad. Next, top with the quartered figs.

Garnish the salad with diced pistachios and sprigs of fennel greens.

When ready to enjoy, season the salad generously with sea salt and ground black pepper.

How to Make Fig Salad:

Drizzle olive oil over the top, followed by honey and balsamic glaze. Dig in and enjoy!

Enjoy this salad on its own, or pair with grilled steaks, roasted chicken, roasted lamb, or duck.
