Crispy Coconut Chicken with chicken tenders breaded in coconut flakes and spices, then baked until golden brown and dipped in your favorite sauce. Your kids will love this healthy version of chicken strips!

Crispy Coconut Chicken

1.5 lbs boneless & skinless chicken breasts (3 large)

egg (large)

coconut flakes (unsweetened)

flour (I used whole wheat)

garlic powder

tsp salt

black pepper (to taste)

Cooking spray

Preheat oven to 425 degrees F and line large baking sheet with unbleached parchment paper or silicone baking mat.

Cut chicken breasts into 1 inch wide strips. Set aside.

In a shallow bowl, add egg and whisk with a fork. On a large plate, add coconut flakes, flour, garlic powder, salt and pepper; mix well with a fork.

Dip both sides of each chicken tender into an egg wash, then coat in coconut flakes mixture and place on a baking sheet. Repeat with remaining meat.

Spray chicken fingers with cooking spray and bake for 25 minutes or until golden brown. Depending on the oven, you might have to flip tenders half way. Just keep an eye on it.

Coconut crusted chicken tenders are best served right away for maximum crispiness. Kids love these and they are healthy!!!

Rhubarb and apple pie

flour

Tbsp Caster sugar

Tbsp Water,

Granny Smith apples, peeled, cored and sliced (Main)

Rhubarb, (or 5 stalks) rhubarb, washed and sliced (Main)

Cinnamon

Place the flour, sugar and butter in a kitchen whizz and blitz until it resembles fine breadcrumbs.

Add the egg, and blend to form a soft dough. Add water if needed. Wrap in cling film. Refrigerate for 30 minutes.

To make the filling, melt the butter in a saucepan, add the apples and stir over medium heat for 3 or 4 minutes. Add the rhubarb and stir for 3 or 4 minutes until starting to soften. Add sugar, cinnamon and zest. Stir until the sugar has dissolved. Set aside to cool until needed.

Roll two-thirds of the pastry to 3mm thick, and line a 22cm pie tin. Bake blind for 15 minutes or until the pastry is almost completely cooked. Remove from the oven.

Place the cooled rhubarb and apple in the tin. Roll the remaining pastry into a square and cut 1cm strips. Arrange on top in a lattice.

Return to the oven for 20 minutes, till the pastry is golden. Serve with cream or custard.

Saltine Crusted Chicken Tenders

chicken tenderloins (tenders)

salt

black pepper

poultry seasoning

chicken bouillon cube, crushed ((or 1 teaspoon chicken bouillon powder))

sleeves saltine crackers (about 72 crackers)

eggs,

all-purpose flour

vegetable or peanut oil

In a small bowl, whisk the salt, pepper, garlic powder, poultry seasoning, and chicken bouillon together. Add the chicken tenders to a large bowl or zip-top bag. Add the seasoning and toss to coat. Set aside and allow to marinate for about 20 minutes.

Finely crush the saltine crackers using a food processor, food chopper, or by placing the crackers in a zip-top bag and crushing with a rolling pin.

Set up a dredging station by placing the flour, beaten eggs, and crushed crackers in three separate, similarly-sized shallow dishes.

Toss each chicken tender in flour. Dip in the egg wash, coating both sides, then allow the excess egg to drip away. Coat in the cracker crumbs pressing a little to get the crumbs to stick. Place the prepared tenders on a large baking sheet.

Pour 2 to 3 inches of cooking oil into the bottom of a deep dutch oven. Heat over medium heat to about 365°F. Once at temperature, cook 3 to 4 tenders at a time in the oil for about 4 minutes, or until golden brown and the center reads 165°F on an instant read thermometer. The exact cook time will vary based on the thickness of the chicken. Drain on a large pan lined with a cooling rack. Adjust the heat to maintain the oil temperature at about 365°F.  Work in batches keeping the cooked tenders in a warm oven until serving.
