Spinach Stuffed Flank Steak Rolls

lb. flank steak (butterflied)

onion (chopped)

garlic (minced

cream cheese

Provolone cheese (or mozzarella

baby spinach

Salt and pepper (to taste)

Preheat oven to 375F degrees. Butterfly Steak by slicing horizontally across and pounding. Season with salt and pepper. Set aside.

Heat 2 tablespoons oil to a small saucepan over medium-high heat. Add onion and cook for 2-3 minutes or until tender and almost golden. Add the garlic and sautee for another minute. Remove from and stir in cream cheese until fully combined. Season with salt and pepper.

Spread the cream cheese mixture on the steak, then layer the spinach and cheese. Roll up steak and tie with kitchen twine or pierce with toothpicks or short kabob skewers&nbsp;to keep the roll intact. Using a sharp knife, slice roll between pieces of toothpicks or twine. Season pinwheels lightly with salt and black pepper.

Heat a large heavy-duty pan to medium-high heat. Add the steak pinwheels and sear for 2-3 minutes per side. Transfer to a baking dish or place the entire pan in the oven if it is oven safe, and bake for 10 minutes. Remove from oven, tent with aluminum foil and let rest for 5 minutes before serving.

How to Cook the Perfect Flank Steak

Rub the flank steak on both sides with oil and season with salt and pepper. Let the steak rest on the counter at room temperature for 10 minutes.

Heat skillet or griddle on medium heat. Hover your hand over the skillet or grill a couple of inches to ensure that it is nice and hot.

Slowly lay the flank steak on skillet or griddle. Let it cook for about 3-4 minutes. Flip the flank steak and cook for another 3-4 minutes or until it reaches your preferred doneness (125F for rare - 130F for medium rare - 135F for medium).

Take the flank steak off the skillet and let rest for 5 minutes before slicing. Carve the steak into thin slices against the grain.

Grilled Korean Flank Steak

Tbsps soy sauce

Tbsp Gochujang chili sauce

ginger paste

garlic paste

Tbsp brown sugar

tsp sesame oil

green onions

Optional dipping sauce: I Tbsp soy sauce

In a bowl whisk together the soy sauce, Gochujang chili sauce, ginger paste, garlic paste, brown sugar, and sesame oil.

Put the flank steak in a dish or gallon size plastic bag. Pour 3/4 of the marinade over the steak and mix until evenly coated. Save the remaining marinade to brush over top during grilling. Marinate the steak at least 1 hour or overnight.

Place the steak on a grill over medium high heat for 3-4 minutes per side for medium doneness. Brush with the remaining marinade during grilling.

Let the steak rest for a few minutes. Slice the flank steak against the grain and garnish with sesame seeds and green onions if desired. Serve with the optional dipping sauce if desired.
