Asian Salad Dressing

seasoned rice vinegar

soy sauce (use tamari or coconut aminos to make gluten free)

honey (use agave, brown sugar,

sesame oil

garlic powder

ginger

red pepper flakes

Place vinegar, soy sauce, honey, sesame oil, garlic powder, ground ginger, and red pepper flakes into a mason jar, blender, or food processor.

Seal and shake or blend until well combined.

Taste and re-season if necessary.

Use immediately.

Polenta Shepherd’s Pie

beef

fennel seed

(14.5 oz) can chopped tomatoes, drained

instant polenta, divided

cheddar cheese, divided

Brown ground beef in a large skillet over medium heat. Add fennel seed, chili powder, orange pepper, green pepper, onion, garlic, Italian seasoning, and salt and pepper. Cook until onions are just beginning to turn translucent. Add tomatoes and 2 tablespoons polenta and cook for 5 minutes more. Remove from heat and set aside.

Preheat oven to 350˚F. In a medium saucepan combine water and 1 1/2 teaspoons salt. Bring to a boil then slowly pour in polenta, stirring constantly. Reduce heat to low and cook until thickened, about 3 minutes.

Pour beef and vegetables into 8”x8” deep baking dish. Top with half the cheese, then pour polenta on top. Smooth polenta layer with the back of a spoon then top with remaining cheese. Bake for 25 minutes in middle rack of oven. Then move to top of oven and set under broiler on high for 1-2 minutes to make the top lightly browned.

Mix together all ingredients in a small shaker container (like this one).

Preheat oven to 200˚F. Whip egg whites and lemon juice together using electric mixer until soft peaks form. Gradually add sugar 1/4 cup at a time, whipping all the while. Add the vanilla and whip again until stiff peaks form.

Use a spoon to create dollop shapes with the meringue on a lined baking sheet spaced 2 inches apart. Bake for 1 hour, then reduce heat to 170˚F. Bake for another 30-40 minutes or until outsides of meringues are crisp. Allow to cool completely before assembling.

When ready to serve combine strawberries with lemon juice and and granulated sugar in a small bowl. Set aside.

Whip cream with powdered sugar until stiff peaks form. Then fold in mascarpone cream. Break meringues up and layer with cream and strawberries in individual serving cups. Serve immediately after assembling.

Prepare Ingredients for Shirataki Chicken

First of all, prepare all the ingredients for shirataki chicken noodles. Cut your chicken into small pieces and chop an onion. Slice your mushrooms and cut asparagus as well.

Coconut Oil and Onion

On the cooking pan, add coconut oil and let it melt. Add your chopped onion and let it caramelize.

Chicken, Salt, and Pepper

Once your onions are caramelized, add chicken pieces, salt, pepper, and cook the chicken until almost done.

Mushrooms

Once you see the chicken is done, add your sliced mushrooms and mix while still cooking.

Asparagus

Freshly cut asparagus added to the pan towards the end will ensure the asparagus is not overcooked.

Shirataki Noodles

Compound Butters: Lemon Miso Compound Butter

unsalted butter

miso

lemon

cayenne

ground toasted cumin

fine grain sea salt,

sesame seeds

Use a food processor to whip the butter until fluffy. Pulse in the miso, lemon zest, cayenne, cumin, and salt. Taste and adjust if needed. Fold in the sesame seeds.

Serve on brown rice bowls, roasted delicata squash, baked potatoes, sautéed vegetables, roasted tomatoes.

These spinach and ricotta fritters are healthy, full of flavor and will impress anyone who tries them. They are also gluten free, low carb and easy to make!

Easy Spinach and Ricotta Fritters

scallions, (diced)

oz baby spinach, (rough chop)

ricotta cheese

garlic, (minced)

almond flour

parmesan cheese

mozzarella

tsp salt

tsp Italian herb seasoning

tsp chili pepper flakes

In a medium skillet over medium heat, add in the olive oil and sauté the scallions for 1 minute. Next add in the spinach and stir until mostly wilted. Transfer to a plate to cool slightly then squeeze out any liquid from the spinach with a paper towel.

In a large bowl, add in the egg, ricotta, garlic and whisk together until smooth. Next add in the sautéed spinach, almond flour, grated parmesan, shredded mozzarella, salt, pepper, Italian herb blend, chili pepper flakes and mix until incorporated. Portion each fritter to be about 3 tablespoons of the mixture, form into balls and then flatten them into patties. You should get at least 8 fritters.

COOKTOP: Heat 1 tbs olive oil on medium high in a long griddle pan or your skillet. Cook each fritter for 3-4 minutes per side. Lower the heat if they start to brown to much. You want a golden brown color on each side.

AIR FRYER: Preheat your air fryer to 400℉. Working in batches, place them in the basket in a single layer. Spray lightly with olive oil and air fry for 10 minutes, flipping halfway through.

question...on the Air Fryer instructions, you say to flip at halfway but didn't say how long to cook?
