How to make chia egg

5-ingredient grain-free, vegan, oil-free and paleo breakfast cookies made with 100% flax (no other flours or meals)! They are crispy, chewy, nutty, and made with ease in a muffin tin. A keto option is available, too!

100% Flax Breakfast Cookies {grain-free, vegan, oil-free, paleo, keto option}

(125 mL) unsweetened natural nut butter (e.g., almond, cashew, peanut)

(75 mL) nondairy milk (I used almond milk)

vanilla extract

cinnamon

(80 g) flaxseed meal

(100 g) raisins (omit

Preheat the oven to 325°F (160°C). Grease or spray the cups of a 12-cup muffin pan with nonstick cooking spray.

In a medium bowl, combine the nut butter, maple syrup, milk, optional vanilla and cinnamon, until blended. Stir in the flaxseed meal and raisins until combined.

Evenly divide batter into prepared muffin cups.

Bake in preheated oven for 18 to 22 minutes, until golden brown, the surface of the cookies appears dry, and the centers feel just firm to the touch.

Let cool in pan on a wire rack for 10 minutes. Run knife around edges to loosen, then remove and place on rack to cool completely.

I had been wanting to make a healthy breakfast muffin or cookie that I could bake up once a week for an easy breakfast for me and a grab and go breakfast for hubby.  Anything to get him away from his little debbie addiction.  I'm post cancer treatment and my appetite is hit or miss but some of my meds have to be taken with food.  This and the no sugar slimfast are easy solutions to get something in my stomach.  I had everything I needed except raisins or nuts to add in...(other than the salted kind.) I had a bag of raw macadamia nuts that I snack on (oncologist suggested, they contain a cancer fighting vitamin) so I whipped that up in a mini food processor for the nut butter. Then I realized I had a bag of Coastal Berries trail mix from Costco, awesome stuff with dried berries and nuts and yogurt chips....so I used that as the add-ins.  Turned out absolutely awesome!

I forgot to add: I also didnt use maple syrup as I didn't have any...but I did have molasses.  Still very good and healthy.

where are the raisins in the recipe?

I'm not on a low carb or keto diet, I was just trying to find a way to use up some flax meal in my fridge when i found this. I used almond butter and did a 50/50 mix of chocolate chips and dried berries and used skim milk. I may have under cooked them (my oven takes way to long to preheat) but the insides were soft and chewy and tasted just like cookie dough!! And I ate them without worrying about eating raw eggs :) They were so delicious!! I wish I had doubled the batch. Thanks so much for sharing this recipe!

Made these this morning and tried one, then had to have a second one because they were that good..    These are like the most moist muffins (try saying that 3 times) I have ever had.     I baked them for 20 minutes, maybe that wasn't long enough, but their good!

Thank you for sharing this recipe.  I have much more time on my hands these days and was looking for an eggless cookie. My niece was over when I made them the first time a few weeks ago, and asked for some for her birthday.  I forgot, after dinner she kept saying she was really looking forward to having the cookies.  When I realize I'd forgotten to make the cookies I whipped up a batch, they are so delicious, everyone here loves your recipe!  
I didn't have raisins, and only had peanut butter.  The first time I used cranberries, this time I used cherries. Both times I used nutty peanut butter.  They are quick and easy, and my new go to for snacks.  
I want to try a solar oven with these any suggestions?  Again thank you!

Learn to make your own homemade bread. This Gluten Free Flax Bread is made in an artisan style giving the bread a very rustic look.

Gluten Free Flax Bread

Cups Teff flour

Cups Sourghum flour

Cup Tapioca Flour

Cup Potato Starch

Salt

Tbsp Yeast

Tbsp Honey

Whole Egg whites

Tsp Xanthum gum

Cups Water

Begin by putting the egg whites in a large measuring cup. Then, fill the cup with water until you have 3 3/4 cups of liquid.In a stand mixer, fitted with the paddle attachment, add the yeast to all the dry ingredients. Mix slightly. With the mixer on low speed, slowly add the liquid. When all the liquid is absorbed, let the mixer run for another minute. When the dough has come together, place in a bowl and cover with a towel. Let the dough rise for 2 hours. It will not double in size like the gluten breads will.Next, flour a piece of parchment paper. Cover with plastic wrap and let rise for another hour.While the dough is rising, turn your oven on to 450 degrees and heat a pizza stone for 45 minutes. When ready to put the bread in the oven, add a broiler tray filled with a couple inches of water in the bottom of the oven.Slide the parchment paper with the dough on to the pizza stone. Cook for 45 minutes. Allow the bread to cool a little.Serve and enjoy!

3 Ingredient Sweet Potato Pancakes

sweet potato

gluten-free flour

egg (or flax egg if vegan)

garlic powder (optional)

tsp paprika (optional)

tbsp oil, for frying

If using: Start by making the flax egg.  If regular egg is being used, skip this step. Combine the flaxseed meal and water together in a small bowl and set aside for 10 minutes to allow to congeal before using.

(If using: once flax egg has sat for 10 minutes), add all ingredients to a medium-sized bowl and stir together until a smooth batter is formed.

Preheat a frying pan over medium-low heat with oil of choice (I used coconut oil).

Pour 1/4 cup batter in pan at a time to make pancakes.  Fry for 4 minutes on each side without touching heat settings on stove.

Top with guac u0026 a poached egg and enjoy!

You always hit it out of the park with your smoothie recipes, Laura! I made this one three times in the past week. The acidity and sourness from the lemon and vegan yoghurt works so well with the sweetness from the berries and chocolate. I didn't have any chocolate protein powder, so I added a bit more cacao powder to up the chocolate flavour.

Water should be boiling for the flax to work. You could add salt, pepper, dry garlic, or spices for extra flavor

Grind the Flaxseeds

Place whole Golden seeds into the Magic Buller or Coffee Grinder and grind all of the seeds until you get a perfect grounded flour like consistency

Add Spices

Place the grounded Flaxseeds into a medium size mixing bowl and add garlic and salt

Boiling Water

Add boiling water into the bowl. The water needs to be boiling, otherwise, you will not get the smooth consistency and the dough would become clumpy.

Properly mix the dough until you achieve a beautiful consistency to be able to work easily with it.

Split the dough

With a knife or spatula, separate the dough into 6-8 pieces. it all depends on how thin and big you are able to make your Flaxseed Keto Wraps.

Roll

Either on a Parchment paper or nonstick silicone mat, start rolling the dough into a thin rounded shape. Try to roll it as thin as possible, but not entirely thin, otherwise, you will not be able to lift the wrap from the silicone mat.

Shape the Keto Wraps

Cut a parchment paper into smaller squares. You will need this for placing the wraps on it for easier handling

Lift and roll

With a round bowl or a plate, press onto the rolled wrap to get ever and precise shape.

Prepare to cook

Using a long knife or spatula, slowly get the wraps onto already precut Parchment Paper. Please see the video for better instruction. Preheat the pan on a medium high

Cook the Flaxseed Keto Wraps

Once you have all of the Flaxseed Keto Wraps ready, start with roasting them on a pan. You can use few drops of oil if you do not have a nonstick pan. Cook each side of the Wrap for about a minute, pressing gently from time to time. Once you see, they are done, place them on a plate and serve.

2 Ingredient Flax Bread (Vegan, Oil-free, Keto)

flaxseed meal ((I prefer golden flaxseed meal))

baking powder ((certified GF, as needed))

salt

water ((I use filtered tap water))

Preheat

Preheat oven to 400F (200C).  Line a large baking sheet with parchment paper.

Grind

In a blender or clean coffee grinder, grind the flaxseed meal into a very fine flour. This is a very important step, do not skip it. The bread will NOT work properly unless the meal is ground into a fine FLOUR.

Stir

In large bowl, whisk together the flaxseed meal, baking powder and (optional) salt. Add the water, stirring until completely combined (the dough will look thick and somewhat gooey).

Shape

Divide the dough into 3 equal portions, With wet hands, shape each piece into a 8-inch (20 cm) long baguette style loaf.  Space the loaves at least 2 inches (5 cm) apart on the prepared baking sheet. Flatten the loaves slightly to about 3/4 inch (1.9 cm) thickness.

Slash

Using a sharp knife, make 4 deep diagonal slashes into the top of each loaf.

Bake

Bake in the preheated oven for 45 to 50 minutes until risen and browned; the slashes will open up and the loaves will widen. Transfer to a cooling rack and cool completely before slicing.

Not sure if I missed it, but is there a weight for the flaxseed flour? I grind my own seeds into flour so I can’t measure flaxseed meal

I've been making since you posted the recipe, love it. I use the loaves for sandwiches during the week. I am sad when I run out each week, but decided three days a week is plenty. I recommend pressing the loaves pretty thin, fantastic for splitting and using for fillings.
