How to Make Vegan Milk Foam

soy milk (or oat or pea)

Choose soy milk. Soy milk works the best for vegan milk foam. Next best options, full-bodied oat or pea milk.

Choose fridge-stable versions of soy milk instead of shelf stable.

Warm up your milk in either the microwave or in a small soup pot on the stove.

Milk temperature: Not too hot! Super hot milk is a bit trickier to foam up.

After warm, pour the milk into a blender and blend for a minute or two. Add the sweetener and any spices (like cinnamon or vanilla) to this step. Turn off the blender and let the milk sit for a minute before using. Foam will rise to the top. (This last part is optional, but can help you see if your foam has formed!)

Prepare your espresso or matcha or coffee or tea shot, in your empty mug while the blender works.

Pour the foamy milk into the mug, top with some coconut sugar if desired and serve hot.

Bonus fluffing step: heat the finished latte in a microwave for 10-20 seconds for extra fluff!

How to make Dalgona coffee two ways - using Instant coffee and Drip coffee.

Dalgona Coffee

Tbsp white granulated sugar

water ((hot))

milk ((low fat, regular, almond, soy, goat's milk))

In a large mixing bowl, add coffee, sugar and HOT water in 1:1:1 ratio.

Whisking by hand - using a whisk, first mix the coffee, sugar and water until everything is melted. Then start whisking!!! It should form a hard peak in about 2 minute and 30-40 seconds OR do the challenge and whisk about 400 times.

IMPORTANT - use large mixing bowl (having enough space for your whisk to whip air in) and round whisk (fork or spoon will be too hard). Tilt at an angle. Watch video.

Whisking using a hand mixer or stand mixer - first mix at lowest speed until all the coffee and sugar are dissolved. Then turn the speed to highest setting and mix for 1 min 30 seconds or until hard peaks form. I have a Kitchenaid stand mixer and on it, it takes about 1 min and 30 seconds on highest speed. Handmixer probably is going to be a little longer since it's not as powerful but should work fine. Set aside.

OPTIONAL - make some Dalgona (Korean sponge candy) by following my recipe HERE. This adds a great crunchy and sweet topping to the foam.

Fill 2/3rd of a cup with cold milk (about 1/2 cup) and add some ice.

Spoon the foam and add it to the top of the cup. Top it with Dalgona pieces or try sprinkle the top with some hot cocoa powder or cinnamon. Mix it with a spoon to enjoy it as a latte or just as it is as you get a little bit of milk and foam in one sip. ENJOY!!!

For this soy lecithin citrus air recipe I wanted to make something that resembled the head on a beer and I decided to use a soy lecithin foam.

Soy Lecithin Citrus Air Recipe

fresh lime juice (7 ounces)

fresh lemon juice (3.5 ounces)

water (1.75 ounces)

Soy Lecithin Powder (0.07 ounces)

(6 oz) box strawberry jello

water

(12 ounces) can chilled evaporated milk

Mexican Milk Jello

Place evaporated milk in the freezer for a minimum of 1 hour before starting recipe.

In a large bowl (ideally with a pour spout), combine jello powder and boiling water and whisk until fully dissolved. Add cold water and mix to combine, then set aside until mixture reaches room temperature.

Pour the chilled evaporated milk into a large mixing bowl and use an electric mixer to beat until soft peaks form. Milk will double in volume!

While continuously mixing, slowly pour jello mixture into the milk until fully combined.

Immediately pour mixture into a 9x13-inch glass dish or individual serving bowl. Refrigerate for 1-2 hours, or until fully set.

Serve with fresh fruit and whipped cream if desired.
