I am biased when it comes to Sattu Peda. I wait for this seasonal delight whole year and relish it to the best of my devour abilities. I can live my life on these Sattu Pedas, seriously. It’s that good. The process involves sugar, ghee and Sattu, along with effort. This is a great treat for kids, packed with nutrition and good fat. The roots of this recipe are deep in our food chronicles.Today this post about Sattu Peda is one of the easiest recipes. Teej special Rajasthani methai which is prepared in the festival of Kajali teej of Rajasthan. 

Sattu Peda

Seive Sattu and powdered sugar together in a big parat and mix it properly.

Now add hot melted ghee in it slowly and rub with your hands, So that all the three items get mixed properly. 

Rub with palms and make it a smooth mix. You have to rub and press the mixture until it starts to hold the shape and gets the ability to bind well. 

Add chopped dry fruits. Shape with hands to form ladoos. And decorate with silver leaves  and dry fruits

This strawberry mousse requires the least amount of work, is uncomplicated, unchallenging, trouble-free and is very versatile. Your attempt will result in a  luscious, pillowy, creamy, airy, almost enticing mousse. This post has the substitutes and various tweaking methods for ingredients like gelatine.  

Strawberry Yogurt Mousse

200 ml full-fat yoghurt

strawberries

sugar sugar

ml milk

whipped cream

strawberry

tbsp fresh green/microgreen

Bloom the gelatin by sprinkling it over the cold water in a small container. Set aside. After 5 minutes of rest, microwave it for 1 minute. Be sure to dissolve the gelatine in the milk, by warming and stirring them together.

Add sugar to the fresh strawberries and blend them together. Whisk the yoghurt and strawberry puree together and mix in dissolved gelatine.

 Whip the cream until soft peaks form. Fold in the yoghurt mix. Stir until fully combined, and ladle into individual containers. Cool in the fridge for at least a couple of hours.

puff pastry sheet

Full -fat whipping cream

Thaw the puff pastry sheets. Refer to the article above for the method. Lightly dust the workspace with flour and place the sheet on the top.

Without adding any pressure roll out the sheets gently using a rolling pin.

While the pastry is cooling, prepare the whipped cream. Whip heavy cream until soft peaks, then add in remaining confectioner’s sugar and vanilla.  Whip until stiff.

Cottage Cheese Chips: High-Protein Baked Low-Carb Snack

cottage cheese (low-fat recommended, but 4% works)

cheddar cheese

garlic powder

onion powder

¼ tsp smoked paprika

cayenne pepper

black pepper,

tsp dried herbs (rosemary, thyme, Italian)

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Place the ¾ cup of cottage cheese into cheesecloth or a nut milk bag (or fine mesh sieve) over a bowl. Squeeze or press out as much excess moisture as possible. Discard the liquid. This step is crucial for crispiness.

(Optional) If using powdered seasonings, transfer drained cottage cheese to a mixing bowl and mix them in using a spatula or spoon. Use a bowl scraper to get all the cheese.

Use a small cookie scoop (about 1 teaspoon size) or two spoons to drop small dollops of the drained cottage cheese onto the prepared baking sheet, aiming for ~16 piles. Leave ample space between piles for spreading.

Evenly sprinkle the ¼ cup of shredded cheddar cheese over the cottage cheese piles. Add any optional sprinkle-on toppings now.

Carefully place the baking sheet in the preheated oven. Bake for 10 to 20 minutes.

Watch closely after 10 minutes. Chips are ready when spread, golden brown, and crispy at the edges.

Remove from the over and let cool completely on the baking sheet placed on a cooling rack for 5-10 minutes to fully crisp up.

Gently lift cooled chips from the liner using a thin metal spatula or fish spatula. Enjoy immediately or store as directed below.
