One of the things that make me happy is the aroma of fresh homemade granola in the making.

Homemade Delicious Granola

gluten-free rolled oats

nuts use

seeds (I

coconut oil

coconut flakes

sugar

organic turmeric powder

organic ginger powder

vanilla extract

cinnamon

almond extract

orange or lemon essence

½ teaspoon anise seeds

nutmeg

cardamom

black pepper (to activate turmeric’s properties)

fine sea salt

Preheat oven to 350ªF (175ºC).

In a large mixing bowl, combine the oats, nuts and seeds, vanilla, essences, sweetener of choice, oil, salt, and cinnamon and mix well.

Pour the granola onto a baking tray and spread it in an even layer.

Bake until lightly golden, about 30-40 mins, stirring halfway.

Let the granola cool completely and top with the dried fruit.

Store the granola in an airtight container at room temperature.

Serve with your preferred vegetable milk and chopped fresh fruit; I usually go for a combination of berries, banana, apple, and pear.

How To Cook Frozen Cauliflower Rice

Cups Cauliflower Rice (1 medium head)

Prepare Ingredients

First, preheat your oven to 200 Celsius or 400 Fahrenheit. Prepare all of the ingredients. Frozen rice does not need to be thawed, as the fully heated oven helps against it being mushy, and water evaporates quickly. 

Frozen rice

Take out your package of frozen cauliflower rice and try to break the big frozen clumps still in the bag. Using the back of the spatula, ensure all the rice is separated. Place onto the baking sheet. 

Season

Add the garlic cloves pressed onto the rice and add salt and pepper. Mix and spray a bit with olive oil. This will help to get a bit more crunch to the rice. Mix all thoughtfully. 

Bake

Place into the fully preheated oven and bake for 20 minutes.

Scrape and Serve

Once baked, using a spatula, scrape all of the cauliflower rice from the sides of the baking sheet and mix it. The dark pieces are the crunchiest and most delicious.

poblano chile pepper 1.00

garlic divided use

Plain Nonfat Greek yogurt 0.50 cup

cumin 1.00 tsp

0.13 shrimp 1.00 lbs

olive oil 1.00 tbsp

serrano pepper 1.00 whole sliced

black pepper 0.25 tsp

I omitted the Serrano peppers and added a full cup of yogurt as well as lemon juice to taste. Definitely going to keep this one. Nice and light

It typically includes thyme, rosemary, basil, tarragon, marjoram, and sometimes lavender. If you don't have the blend on hand, you could make your own, or use dried rosemary instead.
