Lamb tagine is a classic and this slow cooker recipe uses the best of Moroccan ingredients.

Slow cooker lamb and sweet potato tagine

lamb

harissa paste

garlic cloves, finely chopped or grated

90 grams/3¼oz dried apricots, roughly chopped

90 grams/3¼oz drained pitted green olives

350 milliliters/12fl oz chicken stock,

90 grams/3¼oz low-fat plain yoghurt

lemon, zest and juice

tsp sweet smoked paprika

red onion, finely chopped

green peppers, deseeded and roughly chopped

chicken stock cube

250 grams/9 ounces cherry tomatoes, halved, quartered if large

mint, leaves picked and roughly chopped

This delicious recipe for vegetarian bolognese sauce from Eat Well for Less makes enough for 2 meals. Brilliant with spaghetti or in a lasagne.

Tasty and filling, dal makes a cheap, healthy and satisfying meal.
Try freezing it in portion-sized containers - it will keep for up to 2 months.

Slow cooker dal

300 grams/10½oz yellow split peas

onion, chopped

fresh root ginger, finely grated

tsp cumin seeds, 1 tsp crushed finely in a mortar

tsp turmeric

garlic crushed,

freeze-dried curry leaves

700 milliliters/1¼ pts hot vegetable stock

hot green finger chilli, thinly sliced

tbsp vegetable or sunflower oil

A rice bowl is a wondrous thing, but often – despite the simplicity of its title – a rather cluttered and complicated one. Here, I have pared it back, to make a gorgeously seasoned rice bowl, with nothing more than a few seeds, herbs and radishes stirred through it, and an avocado to top it. It’s a simple take on an inspiringly expansive idea. So please use this as a starting point only. It’s very much a non-recipe recipe, and every time I make it, I add something different, depending on what’s to hand.

Rice bowl with ginger, radish and avocado

150 grams/5½oz short grain brown rice

fresh root ginger, peeled

radishes,

1½ tbsp tamari or soy sauce

tsp cloudy apple cider vinegar

tbsp mixed seeds,

coriander

avocado

This tasty vegetarian chilli is packed with lentils, veggies and beans. Serve with rice and guacamole, and top with soured cream,  cheese, coriander, fresh chillies...  the list goes on!

Each serving provides 265kcal, 15g protein, 33g carbohydrate (of which 12g sugars), 5g fat (of which 1g saturates), 12g fibre and 0.4g salt.

Healthy chicken breasts and butter beans get a flavour boost from a little bit of cooking chorizo and red wine. Green beans are excellent when in season, but you can also use broccoli, green cabbage or kale on the side.

Easy Spanish chicken 

tbsp extra virgin olive oil

chicken breasts (each about 150 grams/5½oz), sliced

onion, thinly sliced

yellow pepper, seeds removed,

courgette, trimmed, halved lengthways and cut into 1cm/½in slices

grams/3½oz cooking chorizo, sliced

100 milliliters/3½fl oz red wine

tin chopped tomatoes

tin butter beans, drained and rinsed

½ tsp dried chilli flakes

160 grams/5¾oz long-grain rice

green beans, trimmed (optional)

A super-filling, meat-free wonder. Omit the Worcestershire sauce to make it a hearty vegetarian dinner.

Each serving provides 400kcal, 15g protein, 47g carbohydrate (of which 9.5g sugars), 12.5g fat (of which 6g saturates), 9g fibre and	0.6g salt.

This porridge is made with water and skimmed milk to keep the calories low. A little ground cinnamon  and juicy grated pear makes it taste sweeter.
