These Make-Ahead Freezer Breakfast Sandwiches are easy to make, healthy, and perfect as a grab and go breakfast during busy mornings.

Make-Ahead Freezer Breakfast Sandwiches

wheat english muffins, (split)

lbs low sodium ham, (sliced thick)

eggs, (divided)

tsp sea salt, (divided)

tsp pepper, (divided)

cheddar, (divided)

tbsp olive oil, (divided)

Toast the english muffins, then set aside.

For each sandwich, I make one scrambled egg and then fold it into a small omelet shape.  To do this, I add one egg to a small bowl, followed by a little sea salt and black pepper and then I whisk it really well, just like you would an omelet.

Heat just a tiny bit of oil over medium heat in a small pan, and then pour in the scrambled egg.  Allow it to sit for a second, and then gently till the pan so the scrambled egg spreads all across the bottom of the pan, forming a circle.  Then, let the egg cook completely - no need to flip it or scramble it.

Once the egg is no longer giggle or shiny, carefully lift up a corner of the egg and fold it in half, then fold it in half once again.  Transfer this egg to cool and repeat with the remaining eggs.

To assemble the sandwiches, lay out a square sheet of aluminum foil and then layer on top of that a sheet of plastic wrap.

Lay down the bottom half of the toasted whole wheat english muffin, followed by the sliced ham (divided into roughly 2 oz. portions), folded fried egg, and then the sliced cheese (divided out into roughly 1/2 oz. portions).  Top it all off with the other half of the english muffin and then wrap the sandwich tightly in the plastic wrap, then again tightly in the foil.

Then, repeat with the remaining ingredients.

Place the sandwiches into a 1-gallon size freezer safe bag or storage container, and then place into the freezer for up to 3 months, making them an awesome make ahead breakfast option.

Make-Ahead Freezer Breakfast Sandwiches | A Sweet Pea Chef

Make-Ahead Freezer Breakfast sandwiches are a hearty and satisfying breakfast for early working days and school mornings. They are also ideal for camping trips! This recipe comes together fast and is easy to scale up or down.

eggs ((large))

milk

sour cream (or plain Greek yogurt)

tsp sea salt (or

tsp black pepper

mozzarella cheese (shredded

English muffins

Tbsp butter (plus more to grease the pan)

oz Monterey Jack Cheese ((6 slices)

oz Black Forest Ham ((12 slices)

In a large mixing bowl, combine 8 eggs, 1/4 cup milk, 1 Tbsp sour cream, 1/2 tsp salt and 1/4 tsp pepper and whisk thoroughly. Stir in 1/2 cup mozzarella cheese.  Pour mixture into buttered 9x13 casserole and bake at 350˚F for 18-20 minutes or until fluffy and not wet on top when poked with your fingertips. Remove from the oven cool 10-15 min in the pan then cut into 6 equal squares or use a large round cookie cutter to cut out 6 circles.

Set the oven to broil on high heat. Cut English muffins into halves and butter the cut side and place cut side up on a rimmed baking sheet. Broil in the center of the oven for 2-4 minutes or until the tops are golden and lightly crisp. Remove from the oven and lightly cool while preparing toppings.

Assemble the breakfast sandwiches with the bottom bun first, then the egg, followed by a slice of cheese, 2 slices of ham and finally the top bun.

Wrap tightly in plastic wrap (or in aluminum foil if using for camping) then place in a large freezer-safe ziploc bag and refrigerate up to 1 week or freeze up to 2 months.

How To Make Freezer-Friendly Breakfast Sandwiches | Meal Prep

Made with baked eggs, melted cheese and various breakfast meats all stacked together on hearty English muffins, these make-ahead Freezer Breakfast Sandwiches are an easy, delicious option to get a hot breakfast on the table quickly on busy mornings!

Preheat oven to 350 degrees Fahrenheit.

Homemade English Muffins (or 10 store bought english muffins,

salt and pepper

deli ham, bacon, sausage or canadian bacon

Preheat oven to 325 degrees. Grease a 9 x 13 pan with butter or non stick cooking spray.

In a medium bowl whisk eggs, milk and a sprinkle of salt and pepper until combined. Pour into the greased pan and bake for 18-20 minutes or until the eggs look set.

Remove from the oven and allow the eggs to cool before cutting into rounds using a round biscuit cutter or an english muffin ring.

Top each english muffin with your choice of meat, egg then cheese.

Individually wrap each breakfast sandwich in aluminum foil then place them in a large ziplock bag. Freeze for up to 3 months.

To reheat the sandwiches thaw overnight in the fridge for best results then heat up in the toaster oven until warmed through and crispy, 3-4 minutes. If you are reheating from frozen I suggest microwaving for 30 seconds then placing it in the toaster oven. I prefer the toaster oven to the microwave to crisp back up the english muffins.
