Veggie loaded, hearty, and comforting! Instant Pot sneaky veggie chili is going to go down as one of the best chili recipes you have made in your pressure cooker. Best part? This is even better the next day so it makes a perfect lunch meal prep recipe!

Instant Pot Sneaky Veggie Chili

lb turkey

beef

onion,

garlic,

red pepper, diced

carrot,

medium zucchini, grated (1-2 cups)

jalapeno, seeded, and diced

28 oz can crushed tomatoes (not diced) (3.5 cups)

broth (beef

chili powder

tsp cumin

oregano

Salt and Pepper,

Press the saute feature, and brown your meat, breaking it up as it cooks.

When the meat is done, add the onion and garlic. Stir and saute for 2 minutes.

Pour in the broth and deglaze the pan (scrape the bits off the bottom). THIS IS IMPORTANT so you don&#x27;t get the burn signal.

Stir in the spices to the meat and broth.

Add the veggies on top if the meat. Do not stir.

Add the crusted tomatoes on top of the veggies. DO NOT STIR.  You do not want the tomatoes touching the bottom of the pot - or you may get the burn notice.

Secure the lid. Seal the pot, and set the pressure time for 10 minutes.

When the pressure cycle is done, carefully do a quick release.

Top with desired toppings.

No Foil Roasted Garlic Hack

Garlic bulbs (as many as you want!)

Olive Oil (approx 1 tablespoon per bulb)

Salt and Pepper (a pinch on each bulb)

Preheat oven to 400°F

Slice 1/4&quot; inch off the top of the garlic.

Place each bulb with the cut side up into each well of the muffin tin.

Season with salt and pepper.

Drizzle with oil.

Use the second muffin tin to cover the bulbs.

Place into the oven and bake for 30-45 minutes - until the cloves are soft and like a paste.

Remove the trays from the oven and allow to cool for 15 minutes.

When the bulbs are cooled enough to handle, squeeze each clove out.

To freeze : squeeze cloves into a souper cubes tray (see post) or into an ice cube tray.

Once frozen, pop the frozen garlic cubes out and transfer to a freezer safe container.
