This recipe will teach you how to make a tender bread, with a crisp crust!

High Hydration Bread Recipe

bread flour

water (105-115°F)

g salt

g yeast

From the water you have measured out, take a scoop out and put it in a small bowl. Add in yeast and a small pinch of sugar. Let the yeast begin to bubble.

Mix the water and flour together. Knead for 3 minutes. Cover with plastic wrap and let rest for 1 hour in a warm area between 70-80°F. This step is know as autolyse.

Create a well in the dough, add in water and yeast mixture. Add in salt. It will be very wet. Continue to knead in the bowl for 5 minutes. Cover and let rise for 30 minutes- 2 hours. Repeat 4-6 times.

Shape the dough into final shape. Work the dough from the top to the bottom. Use a banneton basket if you have one available. If not, line a bowl with a lint free dish towel. Put the top of the dough against the bottom of the dish towel. Cover and let rise for 1-2 hours.

Preheat oven to 450°F. On the bottom rack of the oven add a baking pan. Add a ½ cup of water the the baking pan just before adding your bread to the oven. This will create steam in the oven. Onto another foil lined baking pan plop your bread dough. Score the top of your bread dough with a sharp knife. Place in the oven. Cook for about 40 minutes or until the internal temperature reaches 190°F.

In a saute pan over medium heat, heat the oil. Stir in the fresh herbs and garlic and heat for about a minute. If it looks like the garlic is browning too quickly, lower the heat. Lastly, remove from heat when it is fragrant and the herbs and garlic are lightly cooked.

In a standard bowl, whisk together the warm water, rapid rise yeast, and sugar, and allow it to sit for 5 to 10 minutes until bubbles are formed on the top.

In a large bowl, whisk together 2 cups of flour with ⅓ cup of the oil and herb mixture and the yeast mixture. Then, let it sit for 3 minutes.

Pour in the remaining flour and salt and mix thoroughly using your hands. Break up all the flour particles until you create a smooth dough. Continue to knead it for about 5 minutes. Cover with a plastic bag or warm damp towel and let it rise for about 45 minutes.

Meanwhile, prepare a 9x13-inch pan by pouring ⅓ of the remaining oil and herb mixture into the baking pan and spreading it around with a basting brush or a paper towel.

Preheat oven to 410 degrees F. After the dough has risen, transfer it to the prepared baking sheet and spread it out to fill each corner. Then, use your fingers to poke dimples throughout the dough, spread the remaining herb and oil mixture on top, and lightly press olives into the dough. 

Place into the preheated oven and bake for 25 minutes, until it is lightly browned. If you want a crispier loaf, you can bake for another 5 to 10 minutes until you reach your preferred texture.

French Bread with a KitchenAid Mixer

all-purpose flour

cornmeal

This recipe is best when you can use a Kitchenaid Stand Mixer (or similar mixer).  Dissolve the yeast in warm water in a mixing bowl. 

Next, add salt, butter, and flour.  Attach bowl to mixer and use the dough hook to mix and knead for about 3 minute on Speed 2.  The dough will be sticky, but that's okay!

Transfer the dough to another greased bowl and turn it to coat with oil. 

Cover and let it rise in a warm, draft-free place for about an hour (or until doubled).

Punch dough down and divide in half.  Roll each ball on a floured surface into a 12" x 15" square.  Roll each rectangle up tightly (from the longest side), tapering ends if desired.

Grease baking sheets and dust with corn meal. 

Cover and let rise for another hour (or until doubled) in a warm, draft-free environment. 

Cut diagonal slices in the top of each loaf with a sharp knife. 

Bake at 450°F for 25 minutes, then remove from oven.  Beat egg white and water together; brush each loaf with the mixture. 

Allow to cool and serve with butter, garlic, cheese, etc.

My daughter got a kitchen aid mixer as a bridal shower gift from her grandmother. The first thing she made was this bread recipe.  It was scrumptious. Nice crust and perfect inside. She’ll definately make this again.  So will I. Thanks!

i baked this bread last night! this was the first ever loaf of bread i've ever baked, and it was super easy and turned out so moist and tasty! my only complaint is that its VERY dense... any tips on making it more fluffy and light?

This is the best homemade bread, and I am so grateful that it makes 2 loaves.  It’s no more work to make 2 loaves, so why not!  
I do wonder if there is a way to make the tops crispy.  Thank you very much for the great recipe!  
Tip: if you put the dough in your instant pot (with a regular pot lid on it) on the yogurt setting, it will take half the time to rise.

I use to many this years ago and came across this recipe again. I’m excited but not sure how it will turn out. The dough seemed really dry and I kept adding more water. It still wasn’t sticky but I put it in an oiled bowl anyway. Waiting

Poor mixture that comes out dry and the bread is dense. See earlier comment about lack of sugar in recipe. Waste of time
