Take full advantage of sweet summer corn and make of batch of this delicious Fresh Creamed Corn. This classic American side dish will be a hit at your next barbecue.

Fresh Creamed Corn

sweet corn, husked (approx. 5 cups kernels), divided

tbsps butter (preferably Kerrygold)

heavy cream

cayenne pepper

salt

Carefully cut kernels from ears of sweet corn. Using the back of a knife, scrape the cob to extract the milk. Divide corn in two and three cup measurements.

Puree two cups corn in a food processor or blender with 1/2  a cup of half and half.

Melt butter in a nonstick saute pan (no smaller than 12&quot;) over medium high heat.

Add remaining corn kernels, pureed corn mixture, cream, remaining half and half, cayenne and salt to taste. Simmer until thickened, stirring often, about twenty minutes.

fresh ears corn,

coconut oil

tbsp arrowroot starch

tsp coconut sugar (plus more to taste)

tsp sea salt (plus more to taste)

full fat coconut milk

Heat oil over medium heat to melt in a saucepan.

Slice all the kernels off the cooked/grilled corn.

Add the corn, arrowroot starch, salt and coconut sugar to the oil in the saucepan and stir to combine.

Stir and cook 1 minute.

Add the coconut milk and cook an additional 5-8 minutes to thicken. Season to taste with additional salt and/or sugar, if needed.

Serve hot.
