Blueberry Peach Feta Salad

Blueberries 12 oz

Peaches 2

Persian cucumbers 2

Feta cheese ½ cup

Lemon juice 3 tbsp

Dijon mustard 1 tbsp

Honey 1 tbsp

Olive oil 1 tbsp

Kosher Salt

Black pepper

Combine peaches, cucumbers, blueberries, and feta

In a large salad bowl, combine 12 ounces blueberries, 2 diced peaches, 2 sliced cucumbers, and ½ cup crumbled feta.


Make dressing

To a mason jar with a lid, add 3 tablespoons lemon juice, 1 tablespoon Dijon mustard, 1 tablespoon honey, 1 tablespoon olive oil, 1 tablespoon basil, kosher salt and black pepper to taste. Screw the lid on and shake the dressing until well combined.


Dress salad

Pour the prepared dressing over the salad and gently mix to coat. Taste and adjust the seasoning if needed.


Serve

Garnish the salad with extra basil leaves and serve. Alternatively, cover and refrigerate until you are ready to serve it.
