Peach Scones

all-purpose flour

sugar

baking powder

baking soda

salt

unsalted butter ((1 stick), frozen)

peach Greek yogurt ((I use this kind))

heavy whipping cream

vanilla extract

peaches ((about 1 peach), diced)

milk

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

In a mixing bowl whisk together flour, sugar, baking powder, baking soda and salt.&nbsp;

Grate the frozen butter and add to dry mixture. Use a fork or pastry blender to cut in the butter.

In a separate bowl whisk together yogurt, cream, egg, and vanilla until well blended.&nbsp;

Add to the dry mixture and use a rubber spatula to fold the ingredients in until it starts to come together in large clumps.&nbsp;

Stir in the diced fresh peaches. Gently knead mixture by hand (in the mixing bowl) just a few times until it comes together. Try not to handle the dough too much.

Dust a clean surface with flour and drop dough onto surface. Gently pat and shape into an 8-inch round.&nbsp;

Cut into 8 wedges then transfer to a parchment lined baking sheet.&nbsp;

Bake in preheated oven until golden, about 16 - 18 minutes.&nbsp;

Cool on a wire rack for 10 minutes before drizzling the glaze on top. These are best served the day they are prepared.

Add powdered sugar to a mixing bowl with 1 Tbsp milk and stir until smooth. Add additional milk, if needed.

Peach Recipes: Easy Peach Cobbler

peaches (thinly sliced)

lemon juice

all purpose flour

cane sugar

cinnamon

coconut oil or unsalted butter

Vanilla ice cream (for serving)

Preheat the oven to 400°F and grease a 9x13-inch baking dish with coconut oil.

Layer the peaches into the bottom of the baking dish and drizzle the lemon juice over the peaches.

In a medium bowl, mix the flour, sugar, cinnamon, baking soda, and salt. Add the coconut oil and vanilla and combine until the mixture forms a crumbly dough. Sprinkle over the peaches and bake for 30 minutes, or until the mixture is just lightly browned on top and the peaches are juicy.

Serve warm with vanilla ice cream.

Tablespoons light brown sugar

Preheat oven to 375 degrees F.

In a small bowl add the flour, oats, brown sugar, cinnamon and butter.&nbsp;

Cut in the butter with a pastry blender or fork until the mixture resembles small crumbs.&nbsp;

Peel peaches (Optional! You can leave the skins on) slice in half and remove the pit.&nbsp;

Place the peaches face-up in a small baking pan.&nbsp;

Add a big spoonful of crumb topping to the center of each peach.&nbsp;

Bake for about 12-15 minutes or until crumb topping is golden brown.&nbsp;

Remove from oven and drizzle a little bit of caramel sauce over each peach.&nbsp;

Top with a small scoop of vanilla ice cream (and extra caramel sauce), if desired.&nbsp;
