Tomato sauce from fresh tomatoes is an easy and tasty pasta sauce, made with cluster tomatoes or San Marzano. Fresh tomatoes, red ripe but firm and free of spots. With them we'll make a tomato passata which we'll cook with a delicious soffritto, herbs and spices.

Tomato Sauce from Fresh Tomatoes

Kg (2,2 lb) of very ripe red tomatoes

extra virgin olive oil

onion

garlic

basil leaves

oregano

sugar

salt

First thing first wash the tomatoes under running water. Then place them in a bowl and start cutting in half.

With a knife, remove the seeds and all the internal part of the tomato, . Now place them in a pot and cook over low heat, covered with a lid.

When the tomatoes are cooked, smash them with a food mill in order to completely remove the tomato skin.

Finely chop the onion (or shallot). In a saucepan, sautè the garlic clove (whole and without peel) and the onion in extra virgin olive oil over low heat for 2/3 minutes

.Add the tomato passata. Stir and season with salt to taste and 1 teaspoon of sugar, which is necessary to lower the acidity of the tomatoes.

When the tomato sauce with fresh tomatoes is ready, with the heat off, add the basil leaves and, if you like, even a little oregano.

Roma tomatoes are perfect for this easy homemade fresh tomato sauce. With only 10 ingredients, toss it with your favorite pasta shape or even spread it on pizza.

To peel the tomatoes, bring a large saucepan of water to a boil. Score an X into the bottom end of each tomato. Boil the tomatoes for 1 minute and then transfer them to a bowl of ice-cold water. Peel the tomatoes and halve them. Scoop out the seeds and  roughly chop the flesh.

Heat the oil in a large skillet over medium high heat. Sauté the onions until they start to soften, about 4 minutes.

Stir in the tomato paste, garlic, oregano, rosemary and red pepper flakes. Cook until fragrant, about 1 minute.

Add the tomatoes, reduce the heat to medium and simmer for 15-20 minutes until thickened.

Use the back of a wooden spoon or potato masher to break up the tomatoes.

Slice the tomatoes in half and scoop out the seeds. Set a box grater over a large bowl and press the cut side of the tomato flesh against the large holes of the grater. Grate the tomato flesh into the bowl, leaving the skins behind.

Heat the olive oil in a medium pot over low heat. Add the shallot, garlic, salt, and a few grinds of black pepper and cook for 3 minutes, stirring often.

Add the tomatoes, tomato paste, balsamic vinegar, cane sugar, oregano, red pepper flakes, and basil sprig. Cover and simmer over low heat for 30 minutes, stirring occasionally. Remove and discard the basil sprig and season to taste.

Fresh Summer Tomato Sauce

Preheat a skillet over medium heat.

Add the olive oil to the pan. Add the onion and garlic and sauté while stirring for 2-3 minutes.&nbsp;

Add the tomatoes, parsley, basil, oregano, thyme, red pepper flakes, salt, and pepper. Reduce the heat to low, cover the skillet, and simmer for 30 minutes. For a chunky sauce, simply keep warm until ready to use.

For a Smooth Sauce: Remove the pan from the heat. Puree the sauce with a food strainer, food processor, or immersion blender. Return the sauce to the heat and keep warm until ready to use.

This recipe makes about 5 cups. Store extra in the refrigerator for 2-3 days or freeze for longer storage. Calories based on 1/2 cup serving size.

Wash the cherry tomatoes and place them on a roasting tray. Drizzle them with a little olive oil and sprinkle them with a pinch of sea salt, then place them in the oven to roast for. 18-20 minutes.

Blending

Transfer the tomatoes to a high-speed blender alongside the herbs. Blitz for a minute until smooth, then strain the sauce through a fine sieve to remove any tomato seeds.

Cooking

Transfer the sieved tomatoes to a saucepan, add the tomato paste and stir to combine. Cook the contents on a low heat, stirring regularly for about 20 minutes until a thicker tomato paste has formed.

Roasted Tomato Pasta Sauce - How to Make Homemade Spaghetti Sauce

A delicious tomato sauce made with roasted fresh tomatoes, onions, and garlic, then pureed until smooth with herbs and seasoning.

Preheat the oven to 425°F/218°C

Be sure the onions and tomatoes are cut into evenly sized pieces. Add the tomatoes, garlic, and onion to a mixing bowl or food storage bag. Add the olive oil and, season with salt &amp; pepper, and toss to coat.

Transfer to a sheet pan with a raised 1-inch lip and spread evenly over the pan.

Roast for 30 to 35 minutes or until soft. Drain any excessive liquid from the pan and set it aside.

Add the roasted vegetables to a blender or food processor and puree until it reaches desired consistency. If it&#39;s too thick add some of the reserved liquid or water to thin it out.

Mix in the chopped herbs, taste for seasoning, and add salt as needed before serving.

There is nothing better than roasting your tomatoes in the oven in preparation for a homemade tomato sauce!! I don't think people understand how much more rich and tasty the sauce will be if your veggies are roasted first. I usually add homegrown tomatoes (cherry and regular sized), red bell pepper, onion and chopped garlic to my pan. You can just eat it with a spoon after blending or add spices according to the final dish you want to make. I like to wait until I see the tips of the onions and peppers get a little charred. Adds great flavor. Great job!

Spaghetti with Fresh Pasta Sauce

oz pasta (linguini, spaghetti or angel hair)

onion-

garlic cloves, rough chopped

lbs juicy ripe tomatoes, diced (about 6 cups chopped, save juices)

splash vermouth, red wine or white wine

cracked pepper

15-20 basil leaves, torn, more for garnish

Pptional: fresh grated Pecorino Romano cheese (or Parmesan),

Optional additions: chili flakes, Kalamata olives or capers

Set a big pot of salted pasta water to boil on high to cook pasta. Cook pasta according to directions on the package.

Make the Fresh Tomato sauce. In a large skillet heat olive oil over medium-high heat. Add chopped onions, saute 3-4 minutes, until tender. Turn heat to medium. Add the rough chopped garlic. Saute a few minutes until garlic is fragrant and golden. Add the chopped tomatoes and all their juices and seeds. Turn heat up to medium-high.

Add vermouth or wine, cook this off then bring to a simmer and simmer 5 minutes until tomatoes begin to break down and wine cooks off a bit.

Turn heat to low, simmer on low, covered, until pasta is cooked is ready to add.

When pasta is cooked to al dente, drain and add it to the fresh tomato sauce, continuing to cook pasta on low for a few minutes in the sauce. Stir in the basil leaves.

Divide among bowls and top with fresh grated Pecorino cheese and top with fresh basil ribbons.

Absolutely delicious! I agree that tomatoes fresh from the garden are required. I use cherry tomatoes early in the season, as we always have them before the larger tomatoes ripen. This dish screams summer!

This is quite possibly the best pasta sauce I've ever eaten. I was leery of the called-for 8 cloves of garlic; nonetheless, I pressed on and oh my...incredible! I made this a few nights ago with my heirloom tomatoes that are still ripening in my garage after being picked green in October! Heaven. So easy and so delicious. This sauce will be on my regular rotation when the tomatoes are is season.

I've made this a few times already and it's so light and delicious!  For those who are wondering, I froze some of this sauce last year - no problems at all!

This recipe was last night's dinner with a small portion left over for today's lunch!  :) So easy, so quick and so delicious!  I added kalamata olives and a drizzle of our best EVOO for serving.  We have an over abundance of tomatoes, so was able to deploy a good portion of our recent harvest and some garden basil.  Every recipe I've tried from this site has been wonderful!  Thank you!!
