Southern fried cabbage with bacon is a classic keto side dish with tons of flavor. Make it in your Instant Pot or just whip it up on the stovetop.

Instant Pot Fried Cabbage

bacon, chopped

onion

salt

tsp pepper

Turn the Instant Pot onto the saute function and add the bacon. Cook, stirring frequently, until crisp, about 5 minutes.

Remove the with a slotted spoon and drain on a paper-towel lined plate. Add the onions to the bacon grease, sprinkle with salt and pepper, and cook until tender and translucent, about 4 minutes. Add the garlic and red pepper flakes and cook one minute more.

Add the cabbage and toss to coat in the bacon grease. Add the broth and seal the Instant Pot.

Set on high to cook for 2 minutes. When cooking is complete, immediately vent to release the pressure.

Add the bacon pieces back into the cabbage and stir well before serving.

Fried Cabbage with Bacon

g/ 3.5 oz lean bacon (See note 1)

vegetable oil (See note 1 as well)

onions

garlic

kg/ 2.2 lbs white or green cabbage

sweet paprika powder

sugar

caraway seeds (See note 2)

tomato

vegetable broth

balsamic vinegar +

fine sea salt and black pepper

parsley

Chop the cabbage and set it aside. Cut the bacon into cubes and slice the onions. Finely chop the garlic cloves. Keep the garlic separated from the bacon and onions.

Heat the oil (only if using lean bacon) in a large skillet. Saute the bacon and the onions until the fat has rendered and the onion slices are golden. Pour out most of the rendered bacon fat, keeping only about 1-2 tablespoons of the fat.

Add the chopped garlic cloves to the pan and stir for 1-2 minutes. Add the chopped cabbage. It will seem like a lot, but the cabbage will wilt down after a few minutes of cooking time. Cover and cook for about 6-7, stirring well a few times in between.

Add the sweet paprika powder, sugar, caraway, some salt, and pepper. Stir well and add the finely chopped tomato and the vegetable broth. Cover the pan and saute for another 6-7 minutes or until the cabbage is almost done. You might want to cook the cabbage for a shorter or longer period of time, depending on your taste, the cabbage can remain crunchy or get even softer. But it should not become mushy.

Add 1 tablespoon balsamic vinegar. Stir well and cook the cabbage for another 4-5 minutes without the lid. Adjust the taste generously with more sea salt and pepper, balsamic vinegar, and a little sugar. The cabbage should taste slightly sweet and sour.

Stir in the chopped parsley.

tbsp butter

salt and pepper

Melt the butter in a frying pan on medium high.

Add the sliced cabbage and onions and saute about 7 minutes or until desired doneness is acheived.

Salt and Pepper to taste,  serve immediately.

tbsp Fresh Parsley Leaves (chopped)

Use a large skillet to fry chopped bacon, over medium-high heat. Use a slotted spoon to remove bacon to paper towel-lined plate. Reserve 2 tablespoons of bacon grease and keep the skillet hot.

Core a head of cabbage, slice the leaves and then place in the hot skillet. Stir until crisp-tender, add vinegar and salt and pepper, to taste.

Remove fried cabbage to a serving bowl. Sprinkle with bacon and parsley and serve.

Place the bacon onto a large, cold saute pan in a singer layer. Heat over medium heat for about 10 minutes, flipping halfway through, until the bacon is browned. (You can cook the bacon in batches if it doesn&#39;t all fit in the pan at once.)

Remove the bacon from the pan, leaving the bacon grease in the pan.

Add the onion to the pan. Fry, uncovered, for about 10 minutes, until browned.

Make a well in the center of the pan. Add the minced garlic and saute for about a minute, until fragrant (be careful not to burn it!), then mix it in with the onions.

Add the cabbage to the pan. Season cabbage and onions with salt, paprika, and pepper. Cover and cook for about 15-25 minutes, until cabbage is tender. If you can&#39;t fit all the cabbage into the pan at once, add it in batches and let it wilt down a bit before adding more. (Cook time can vary widely depending on how big your head of cabbage is - just cook until soft and tender to your liking.)

Meanwhile, chop or crumble the bacon. When the cabbage is done, stir the bacon back into the pan.

Very tasty. I followed the recipe, since it’s only me, I used a 1 lb bag of cole slaw. I lost most of my taste and smell years ago. I couldn’t smell my meal , but I could taste it; for this, I’m happy.
