Southern-fried corn cooked in a cast-iron skillet is the perfect side dish. With only five ingredients, including fresh sweet corn and bacon, this is a real family favorite. 

Southern-Fried Corn Recipe

sweet corn (shucked)

bacon (not thick sliced)

unsalted butter

salt

black pepper

Add the bacon to a cold 10-inch, cast-iron skillet over medium-low heat and cook for about five minutes or until the fat starts rendering out of the bacon.

Turn the heat up to medium and cook, frequently turning, for another four to five minutes or until the bacon is browned and crispy. Remove the bacon and drain it on paper towels. Set aside. Leave the grease in the skillet.

While the bacon is cooking, grab a deep bowl and a sharp knife. Hold each ear of corn up and slice the kernels off. You may have to go around several times to get all of the kernels. Then, take the back of the knife and scrape the cob to get all of that milky goodness. Don't skip this step.

Add the butter to the skillet and when it is melted, add the corn. Season it with salt and pepper.

Stir and cook it for anywhere from five to fifteen minutes. (The amount of time it will take to cook depends on how fresh the corn is; just-picked corn barely needs any cooking at all, and if it's older, it will take longer.) For this dish, it's important to taste it as it cooks to know when it's done.

Remove it from the heat, top with crumbled bacon and serve immediately.

Southern Fried Sweet Corn

This fried corn is cooked with bacon and chives until golden brown and caramelized. The ultimate easy summer side dish that pairs well with grilled meats, fish and hamburgers. A Southern classic that never goes out of style!

Fried Corn with Bacon

bacon (diced)

onion (finely diced)

corn kernels (fresh or frozen (thawed))

sugar

salt and pepper

chives (sliced)

Place the bacon in a large pan. Cook over medium high heat until browned and crisp.

Remove the bacon from the pan with a slotted spoon and set on a paper towel to drain.

Drain grease off pan until approximately 1 tablespoon remains.

Add the onion to the bacon grease. Cook for 2-3 minutes or until translucent.

Add the corn, sugar, salt and pepper to the pan.

Cook for 8-10 minutes, stirring occasionally, until corn starts to caramelize and brown on the edges.

Stir the bacon back into the corn. Top with chives and serve.

With your corn shucked and cleaned, place it standing up in a large bowl or pan in your sink.  (Cutting corn off the cob is quite a task and a messy one at that.  I think it’s best to do it in the sink.  You’ll thank me later when it’s time to clean up.)  Run a sharp knife down the cob cutting the kernels off.

Next, we’re going to scrape all the starch and “goody” out of the remaining kernels.  This is what gives fried corn it’s unique texture and flavor.  Simply turn the back of your knife nearly perpendicular to the cob and scrape down the sides.

Heat a skillet (preferably cast iron – I always use my great-grandmother’s – it’s one of my most prized possessions – it’s second to be grabbed in case of a fire after my kid) over medium heat and add bacon grease and two tablespoons of butter (or 4 tablespoons of butter if you’re not using the bacon grease – but you should use the bacon grease).  Once melted, add corn.  Salt and pepper to taste.

Reduce the heat to medium low and stir frequently, cooking for 20 to 30 minutes - or until it&#x27;s cooked to your liking.  Immediately before removing from heat, add remaining butter and stir until melted.

This creamy savory corn side dish is quick and easy to make and it goes with just about anything. Make it a regular addition to your dinner menu.

Skillet Corn with Parmesan Cheese

Tablespoons butter

corn

water

Tablespoon all-purpose flour

milk

Tablespoon Parmesan cheese

Melt butter in skillet over medium heat. 

Add corn, salt and pepper and toss to coat. 

Pour water over corn and simmer for 15 minutes, stirring occasionally.

Reduce heat to low. Stir flour into milk and pour over corn.  Cook, stirring frequently until thickened.

Remove from heat and stir in Parmesan cheese.
