This easy tostones recipe (twice-fried plantains) made with unripe green plantains is a classic Latin staple!

3-Ingredient Tostones Recipe (Twice-Fried Plantains!)

plantains

vegetable oil, avocado oil,

Salt

In a deep nonstick skillet, heat oil over medium-high heat.

Add the thick plantain slices in the skillet, making sure there is enough oil to cover the slices. See video for more info but overall what you want is enough oil where the very top of the plantains are still visible but the rest of the slice is cooking in the oil.

Fry slices for about 5 minutes on all sides. Remove and drain on paper towels to absorb the excess oil.

Using a plantain press or a paper towel folded over, smash the plantains to about 1/2 inch thick.

Fry the now smashed plantains for about 4-5 minutes in the same skillet until golden brown on both sides.

Remove and drain on paper towels and season with salt. (You can transfer the oil to an airtight container and reuse it at a later time, if you’d like)

Fried Plantain with Poulet DG (Director General) is a fabulicious African meal featuring fried plantains, chicken, and vegetables in a tasty French-inspired herb sauce.

Fried Plantains with Poulet DG

onion, (chopped)

garlic

herbs ((parsley, celery, basil, etc.))

chicken,

tomatoes, (diced)

½ teaspoon smoked paprika

chicken broth ((optional))

vegetables ((carrots, green beans, green pepper, etc.))

Oil for frying ((Lard it awesome if you have it!))

Blend the onions, garlic, and fresh herbs in a food processor or blender into a rough paste.

Salt and pepper your chicken, and stir in 2-3 tablespoons of the herb blend to the chicken. Set aside. (You may do this step ahead of time and let it marinate.)

Preheat a Dutch oven or other large, heavy pot over medium-high heat.

Add 2-3 tablespoons of oil to the pot. Add the chicken, sauté for about 5-7 minutes chicken, turning once, until golden brown on both sides—transfer chicken to a plate.

Dump the rest of the herb mixture, tomatoes, and paprika into the pot, scraping up any browned bits with a wooden spoon, occasionally stirring, for 8-10 minutes. Add about ½ a cup of chicken stock if it gets too dry.

Mix the carrots, green beans, and green peppers into the pot; let it simmer for 2-3 minutes. Adjust seasonings to taste. Turn off the stove.

Poulet DG

Using a sharp knife, cut both ends off of the plantain. That will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain; peel only as deep as the peel. Remove plantain peel by pulling it back.

Cut plantains into round slices about an inch thick.

Heat a large, heavy-bottomed or cast-iron skillet with oil about ½ inch deep on medium-high until hot but not smoking. 

Fry the plantain rounds until golden brown, set aside until you’re ready to serve the meal, then toss them in with the chicken and vegetables. 

Serve immediately. Enjoy!

Fried Plantains

Maduros are sweet plantains made from ripe green plantains that are sliced then fried until tender in the middle and crisp on the edges. Plantains are so versatile in Cuban cuisine and make the best side dish for just about any meal!

Sweet Plantains (Platanos Maduros)

plantains ((the darker the skin, the sweeter they will be))

In a nonstick skillet, heat oil over medium-high heat. Pan-fry the sliced plantains for 2-3 minutes per side until they&#039;re golden brown and the edges are crispy.

Transfer them to a paper towel-lined plate to drain and season them with salt. Serve immediately. Enjoy!

Jibarito Plantain and Steak Sandwich are Puerto Rican plantain and steak sandwiches piled high with steak, spicy mayo, lettuce, tomatoes, and onions between two fried and smashed plantains. A sure crowd-pleaser.

Jibarito Plantain and Steak Sandwiches

green plantains

(77 g) mayonnaise

(5 g) garlic, (minced)

(5 g) hot sauce

½ teaspoon (1 g) chili powder

(227-454 g) steak, (thinly sliced)

(12 g) Sazon seasoning

(2 g) cumin

(1 g) oregano

(5 ml) white vinegar

olive oil

tomato, (thinly sliced)

onion,

lettuce

Swiss cheese

Using a sharp knife, cut the plantains in half.

In a large skillet, pour vegetable oil until at least 2-3 inches deep in your frying pan.

Set the stove to medium heat and wait until the oil is hot, about 375°F/190℃.

Gently drop the plantains into the oil using tongs. Do not overcrowd the pan. Fry each plantain until it is light brown, about 3-4 minutes on each side.

Use a large, slotted spoon to remove the plantains from the oil.

Place plantains on a chopping board or flat surface and press down on it firmly with the back of a heavy plate, bottle or skillet until flattened. You want them to be about ¼-inch thick. Repeat with the remaining slices.

Refry the flattened pieces in the 375°F/190℃ oil, turning them occasionally for 2-3 minutes, or until they are golden, transfer them with a slotted spoon to paper towels to drain, and season them with salt and pepper.

Frying the Plantains

Whisk together mayonnaise, garlic, hot sauce, and chili powder in a medium bowl.

Refrigerate until ready to use.

Spicy Mayo

Season steak with salt, Sazon seasoning, cumin, oregano, vinegar, and olive oil. Set aside.

Heat a skillet on medium with 1-2 tablespoons of oil.

As soon as the oil is hot, put the steak in and fry each side for 2-3 minutes or until it reaches the desired doneness. Remove from the pan and set aside.

Steak

Spread some mayonnaise sauce on the fried plantain.

Add tomatoes, onions, beef, lettuce, and cheese.

Top with another plantain.

Cut in half and serve!

Assembly

These fried plantains or platanos maduros are very ripe bananas fried in oil until crispy and caramelized. A quick snack or side dish that can be made in under 10 minutes.

Air-Fryer Plantains

Preheat air fryer to 350F/180C

Cut both ends off the plantain with a sharp knife. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain. 

Slice plantains in diagonal pieces or medium-sized slices then set them aside. Or you can cut them smaller. 

Place the plantain slices in the air fryer, spray with cooking oil, if desired, and cook for 10 minutes while turning halfway through. Don&#39;t crowd them so that they can cook evenly.

Carefully remove plantains from the air fryer and transfer them to a paper-towel-lined plate or tray.

Season with salt and your favorite spices, if desired, and enjoy a bite! Serve them as is or as a side dish to this Instant Pot Black Beans.

Bakabana (battered fried Plantains with a spicy peanut dipping sauce)

peanut butter

Kecap Manis

lime juice

Tablespoons brown sugar

vegetable oil (for frying)

To make sauce, combine peanut butter, galangal powder, Kecap Manis, lime juice and 2/3 cup water in a saucepan.

Simmer for 10 minutes until sauce is smooth and thick.

Garnish with chopped  peanuts.

Sauce Instructions

In a medium bowl, whisk together the egg, flour, buttermilk, sugar and a pinch of salt.  Add the soda water gradually until you make a thick smooth batter. Set the batter aside to rest for 15 minutes.

Peel the plantains by making a slit with a knife, the long way, from one end to the other, and cutting off the ends.  Pull the skin off.

Slice the plantains diagonally into slices about 3 inches long and about 1/3&quot; thick.

In a heavy pot, or deep fryer heat up vegetable oil to a minimum depth of 2 inches. Heat up to 350 degrees or until a drop of batter sizzles.

Once the oil is hot,  dip the plantain slices into the batter to coat them and  carefully drop them in the oil taking care not to over crowd the pan.

Cook until golden brown on both sides turning once, about 3-4 minutes.  Remove with slotted spoon and let drain on a paper towel to remove excess oil. Sprinkle with salt and serve warm with the spicy peanut sauce and a lime.

Vegan Plantain Burrito Bowls with Cilantro Lime Rice, Quick Cuban Black Beans, Fresh Mango Salsa, and Pan-Fried Plantains are the perfect meatless meal to add to your meal plan! 

Vegan Plantain Burrito Bowl with Mango Salsa

white rice,

water

lime (about 2 Tbsp.)

cilantro

Salt and pepper,

yellow plantains,

Tbsp. avocado oil or coconut oil

mango (about 3 yellow or 2 red mangos)

red bell pepper

red onion

jalapeno*

Salt and pepper

Black

Sprouts cumin

Add rice, water, and a pinch of salt to a medium saucepan.

Cover and bring to a simmer over medium-high heat. Simmer for 4-5 minutes, then reduce heat to LOW and allow rice to steam for an additional 10-15 minutes, or until all the liquid is absorbed and the rice is tender.

When the rice is cooked, remove lid and stir in lime juice, cilantro, and salt and pepper, to taste. Gently fluff with a fork to combine.

Taste and add additional salt, pepper, lime juice, or cilantro as needed.

Start the Cilantro Lime Rice:

Heat avocado or coconut oil in a medium skillet over medium heat.

Working in batches so as not to overcrowd the pan, add sliced plantains to the pan and cook 3-4 minutes per side, or until golden. Transfer to a plate and repeat with remaining plantains until they&#8217;re all cooked.

When all the plantains have been cooked, flatten the plantains. To flatten, place the cooked slices between sheets of parchment paper and press down on them with the bottom of a glass, or the back of a spoon.

Return flattened plantains to your skillet and cook an additional 2-3 minutes per side. Season generously with salt, to taste.

Meanwhile, Start Plantains:

Combine diced mango with bell pepper, red onion, minced cilantro, 1 Tbsp. jalapeno, and the juice of 1 lime. Add salt and pepper.

Taste for seasoning, adding additional jalapeno, lime juice, salt or pepper, to taste. Set aside.

While the Plantains are Cooking, Make Your Mango Salsa:

In a small saucepan, heat 2 cans (drained, but not rinsed) of black beans with chili powder and tsp. cumin until the beans are warm. Keep on low heat until ready to serve.

For Quick Cuban Style Black Beans:

Layer cilantro lime rice, Cuban-style black beans, mango salsa, and cooked plantains.

Add additional toppings as desired (such as guacamole, avocado, or tomatillo ranch).

This was AMAZINGLY full of FLAVOR!! I love how you can include what you like best and each person can pick their own ingredients.  I spiced it up as I like heat, finished it with drizzled toasted sesame oil, radish sprouts and dollop of Sriracha.  Next time I'm going to try it with a poached egg as well! YUM, YUM, YUM! Love this recipe and will make this in lieu of plantain black bean tacos from now on.  I used Greek yogurt in the dressing in lieu of mayo and it really kept the flavors of the entire dish fresh and tangy.

We made these burrito bowls pretty much as written except we air-fried the plantain instead of pan frying it. We opted to add in 1 diced avocado as well. This meal was such a treat! We will definitely be making it again and again while mangos are in season. Thank you for sharing!
