cook: Using a 12-inch skillet or larger, place the butter, olive oil, and if using the rosemary, thyme, and 1 smashed garlic clove into a large skillet over medium-high heat. Allow the butter to melt and the olive oil to heat through. When the herbs start popping and sizzling, remove them and the garlic clove, discard. Add the potatoes in a single layer, season with a generous pinch of salt and pepper, cayenne, garlic powder, onion powder, and smoked paprika, toss to coat evenly. Cook the potatoes for a total of 8-10 minute, flipping and tossing them every 2-3 minutes to ensure even browning. Taste for seasonings and adjust to preference. Serve immediately.

Add the potatoes to a pot, and cover with water by a 1/2". Generously salt the water. Bring the mixture to a boil and let the potatoes cook for 2 minutes. our the potatoes into a strainer to drain, and let rest for 5 full minutes.

Add 1 tbsp of oil to a large cast iron skillet, and heat it over medium heat. When the oil's nice and hot, stir in the onions. Cook until the onions are soft and translucent, about 5 minutes. Transfer the cooked onions to a separate plate, and return the skillet to the stove.

Add the rest of the oil and the butter to the skillet, again heating over medium heat. When the oil's nice and hot, add the potatoes- tossing evenly to coat with the oil and butter.&nbsp;

Use a spatula to spread the potatoes out into a single layer. Cook for 10 minutes, only stirring once half way through, so everything gets nice and crispy.

Sprinkle to garlic, paprika, salt &amp; pepper evenly out over the potatoes. Add the onions and stir until everything is evenly combined.&nbsp;

Serve immediately, alongside your other breakfast favorites.

My favorite way to cook potatoes: boiled, smashed, then shallow-fried until golden brown and crisp. They get unbelievably crispy with a great creamy center.

Crispy Smashed Potatoes Recipe

Place potatoes in a large pot and cover with cold water. Season heavily with salt. Bring to a boil over high heat and cook until potatoes are completely tender, about 10 minutes after a boil is achieved (poke a potato with a sharp knife or cake tester to test for doneness).Drain in a colander set in the sink and let rest for 10 minutes to dry and cool slightly. 

Working one potato at a time, place potato on cutting board and smash firmly with the bottom of a heavy skillet to a thickness of about 1/2-inch thick. Transfer to a large plate or tray as you work.

Heat 1/2 cup oil in a large non-stick or cast iron skillet over medium heat until shimmering. Add as many potatoes as will fit in a single layer. Cook, shaking pan occasionally, until bottom side is deep golden brown, about 6 minutes. Carefully flip with a thin metal spatula and cook until second side is golden brown and crisp, about five minutes longer. Transfer to a paper towel-lined plate and allow to drain.

Continue cooking potatoes in batches, adding more oil or fat as necessary, until all potatoes are cooked. Potatoes can then be left aside until ready to serve.

To serve, adjust oven racks to upper- and lower-middle positions and preheat oven to 400°F. Spread potatoes over to large rimmed baking sheets. Transfer to oven and cook until heated through, about 6 minutes. Transfer to a large bowl, season to taste with salt and pepper, add herbs (if using), toss to distribute, transfer to a serving platter, and serve.

Southern Fried Potatoes

medium Russet or Idaho potatoes ((2 to 2 1/2 pounds))

Wash, peel, and slice the potatoes into 1/8-inch rounds.

Heat a large cast iron or nonstick skillet over medium-high heat. Add the oil and heat until it starts to ripple. Add the potatoes evenly and sprinkle the onions over the top. Cover and cook about 8 minutes. Remove the lid and add the salt and pepper. Flip the potatoes and continue to cook for about 10 more minutes, flipping once or twice more, or until golden brown and tender. Drain on paper towels if desired. Serve immediately.

Country Fried Potatoes

potatoes (peeled, washed and sliced.)

oil (I use Canola)

bacon grease (optional)

Have your grease and oil hot.  Add potatoes, onion,  garlic, pepper.  Fry uncovered for about 45 minutes turning down stove after potatoes have browned and cooking until done.   Remove from stove, add salt.

Make the Best Jojo Potatoes Ever

Russet potatoes medium potatoes (4 inches long)

flour

buttermilk

Wash potatoes, and cut them into quarters.   Place potato quarters into a bowl of water.  Prepare seasoned flour by combining 2 cups of flour, 1 teaspoon ground black pepper, 1 teaspoon salt, and 1 teaspoon garlic salt together in a bowl.  Place 2 cups of buttermilk in another bowl.    

Batter potatoes by placing them in the seasoned flour, shake off excess flour.   Place potatoes into the buttermilk, and coat the potatoes well.   Place potatoes back into the seasoned flour and coat well.  Shake off excess flour.  Place the potatoes on a wire rack to rest for about 5 minutes before cooking. 

Preheat oil in a deep fryer to 350 degrees.   Cook potatoes for 8 to 12 minutes or until they are brown, and they float.  Drain on a clean wire rack.

Put the potatoes in a large saucepan of salted water and bring to the boil over a high heat. Cook for 20-25 minutes until the potatoes are tender but not falling apart, then drain well.

Meanwhile, roughly chop the capers on a board. Add the parsley leaves and continue chopping. Finally add the garlic and continue to chop until you have an almost paste-like mixture. Transfer to a bowl and add the lemon zest, then set aside (see Make Ahead).

Put the potatoes on a flat surface. Using something flat, such as a plate or the bottom of a pan, gently squash the potatoes. Don’t completely crush them – you want them to mostly hold their shape.

Heat the olive oil in a large frying pan over a medium heat, add the potatoes to the hot oil and fry for around 10 minutes, turning occasionally, until golden and crunchy. Scatter over the parsley mixture and gently move the potatoes around so they’re coated and the capers become a little crispy. Serve (see tip).

Fried Red Potato Wedges (15 minutes!)

Preheat deep fryer or oil to 320°F

Cut potatoes into wedges and place into cold water until ready to fry. Drain potatoes and dry thoroughly with a clean kitchen towel. Fry for 10 minutes. Drain on a wire rack over a sheet tray to let excess oil drip off.

Turn frying oil up to 375 °F. Fry potatoes again for 2-3 minutes until crispy. Drain on a wired rack.

Generously season with season salt and kosher salt to taste immediately after removing potatoes from the oil. Toss to coat in the seasoning.

Patatas Bravas - Spanish Fried Potatoes

Extra virgin olive oil, (or a healthy natural cooking oil of your choice)

Bravas Sauce Recipe, (our homemade recipe)

Garlic aioli of your choice, (store-bought is fine, optional)

Fill a medium saucepan with water and bring it to a boil.

As soon as the water boils, add the baking soda (it will foam a little). Carefully add the potatoes and allow the water to come to a boil. Boil the potatoes for about 1 to 2 minutes (no longer). Drain the potatoes well in a colander.

Transfer the potatoes to a large sheet pan and season them well with kosher salt. Toss to make sure the salt is well distributed, then be sure to spread the potatoes in one single layer.

Set the potatoes aside or transfer to the fridge to cool completely (you can do this ahead of time and leave the potatoes in the fridge overnight, but it’s important for them to cool completely).

In a medium skillet, heat 1 cup of the oil over medium-high heat. When the oil begins to bubble gently, add one piece of potato to test, if the oil around it bubbles a lot, it is ready. Add the rest of the potatoes and spread them out well. You may need to do this in batches so as to not crowd the pan. Cook in the oil, tossing occasionally and making sure the potatoes are well-coated in the oil, until they are golden brown on all sides, about 20 to 25 minutes. Watch them carefully, as they can go from perfectly cooked to burned in a short time.

While the potatoes are cooking, work on the bravas sauce (if you did not make it ahead of time).

Using a slotted spoon, transfer the potatoes to a tray lined with paper towels to drain excess oil. Immediately season with another pinch of kosher salt.

Finish with a good drizzle of bravas sauce and aioli of your choice (if using). Serve immediately with more bravas sauce to the side.

Crispy fried potatoes with a spicy red sauce!

Tareko aloo, Nepali-style fried potatoes, are a gorgeous dish of crispy fried potatoes that get coated with spiced oil and lemon juice right before serving. Serve as a side dish or with other plates of small bites for a delicious cocktail hour snack.

Tareko Aloo ~ Nepali-Style Fried Potatoes

Mild vegetable oil (for frying)

red chile

ajwain (carom seeds)

(7 oz) yellow onion (sliced)

(5 oz) tomato (deseeded and chopped)

turmeric

cinnamon

cumin

lemon juice

Salt and black pepper

scallion (chopped)

In a large saucepan over medium-high heat, or using a deep fryer, add enough oil to reach a depth of 3 inches (13 cm) and heat to 340°F (160°C). Working in batches, if necessary, fry the potato wedges until golden brown and crispy, about 5 minutes per batch.

Drain

Line a bowl with a paper towel. Use a slotted spoon to transfer the potato wedges to the paper towel.

Fry the potatoes

Sauté

In a large skillet over medium-high heat, warm the oil. Add the dried red chile, ajwain, and garlic. Stir in the onion and tomato and sauté until slightly softened, about 2 minutes.

Cook

Stir in the ground spices. Add the fried potato slices and lemon juice and cook for 2 minutes more.

Season

Season with salt and pepper to taste and scatter over the scallion, to garnish.

Make the tareko aloo

Here's how to make the best fried potatoes: perfectly seasoned and browned to perfection! They're great as breakfast potatoes or an easy dinner side dish.

Easy Fried Potatoes

Air fryer roasted potatoes go with just about anything! These air fryer fried potatoes are crispy on the outside and soft on the inside and they cook in much less time than in the oven. They make a great side dish for dinner or you can serve them as breakfast potatoes! If you don’t have an Instant Pot air fryer or air fryer lid, you can use a traditional air fryer or bake them in the oven.

Instant Pot Air Fryer Potatoes

½ lbs potatoes ((⅔ kg) preferably

½ tsp black pepper powder

paprika

vegetable oil

Pat the potatoes dry with paper towels or a clean kitchen towel until they&#39;re completely dry. This is an important step.

Mix the onion powder, garlic powder, salt, pepper, and paprika in a medium bowl. Stir in the oil to make a paste.

Add the potatoes to the spice mix and coat evenly until every surface is covered.

Place the air fryer basket in the air fryer and coat with oil. You can either use a paper towel soaked with oil or an oil sprayer. Don&#39;t use canned aerosol oil as that can harm the coating of the air fryer basket.

Transfer the potatoes to the basket and make sure they&#39;re evenly spread out.

Close the lid and air fry for 18 minutes at 400 degrees Fahrenheit.

If you are using an Instant Pot air fryer, partway through cooking, the display says turn Food.  If you are using an air fryer without this feature, set a timer to turn the potatoes 12 minutes into the cooking process.

Open the lid and using silicone mitts, lift the basket and shake the contents so the potatoes are tossed well.  Close the lid and continue cooking.

When the cooking time is up, open the lid and check to make sure the potatoes are cooked to your liking. Toss the potatoes again and air fry for another 2 minutes, if desired.

Transfer the potatoes to a serving dish.

Air Fryer Instructions

Preheat oven to 425 degrees Fahrenheit.

Line a baking sheet with aluminum foil and coat the foil with oil.

Spread the potatoes in a single layer on a baking sheet.

Bake for 25 to 30 minutes or until the potatoes are cooked through and golden in color.
