These chicken wings recipe is keto diet compliant.

Extra Crispy Air Fryer Chicken Wings

chicken wings ((drumettes and wingettes, not whole ones))

tsp kosher salt ((plus more to taste))

Tbsp chili powder

granulated garlic

Tbsp baking POWDER ((NOT baking SODA, it's not the same))

Dry the wings really well with paper towels and place in a medium bowl. Add the salt, chili powder, garlic and baking powder. Gently rub the seasoning all over the wings, ensuring even coverage. Set aside.

Lightly rub the cooking rack of your air fryer with some cooking oil to reduce sticking. Arrange the chicken wings on the rack so that there is some space between the wings to allow for free air circulation.

Place the rack with the wings inside your air fryer. Set the temperature to 410F. Set the cooking time to 20 minutes. Press start.If you air fryer goes only to 400F, set the temperature to 400F and the cooking time to 22 minutes.If you like your wings extra crispy, add 5 more minutes to the times above.

When time is up, check your wings for doneness. They should be deep golden brown as shown on pictures. If not, let them cook for another 3-5 minutes.

Carefully remove the wings from the air fryer and arrange on a plate or a serving platter. Serve immediately.If tossing with a hot wing sauce, or a BBQ sauce, let the wings rest for 5 minutes. This will help them retain their crispiness much better after applying the sauce.

Latin Style Tempura Chicken Wings

chicken wings (renders 12 pieces)

tbs kosher salt

corn starch (separated)

tsp baking powder (separated)

Corn oil

all-purpose flour

water

vodka

tsp adobo (I used Loisa

tsp sazon (I used Loisa

Cut chicken wings in thirds and toss the wing tip. Rinse well.

Mix kosher salt with ¼ cup cornstarch and ½ tsp baking powder in a large bowl and whisk well.

Add the chicken wings one at a time and coat evenly. Shake any excess coating.

Transfer the coated wings as you go on to a wire rack in a rimmed baking sheet.

Place in refrigerator for at least 30 minutes or overnight, uncovered.

When ready to fry, combine the remaining ½ cup cornstarch, ½ tsp baking powder and flour in a large bowl and mix well.

Add water slowly and then the vodka. Whisk until it’s as smooth as batter texture. Should be a thin batter.

Once this is mixture is ready, heat oil over medium-high heat in a large frying pan or deep fryer.

Add wings one at a time to the batter. Make sure to allow any excess batter to drip off before placing in the hot oil.

Place carefully into the oil and add as many as you can into the frying pan without overcrowding. Sprinkle with just over half of the adobo and sazón.

Turn over wings as you see fit after they begin to turn golden and crispy. Sprinkle the remainder of the adobo and sazón. It could be up to 20 minutes over medium high heat. It also depends on the size of your chicken wings.

Move to a paper towel-lined plate. Keep warm while you fry the rest of the wings.

How to Fry Chicken Wings at Home

Vegetable or canola oil, enough

Sauce (like Buffalo)

In a large pot, pour in 1 and 1/2 inches of vegetable or canola oil. Attach candy thermometer so it&#8217;s in the oil, but not touching the pot. Heat on medium to 350°F.

Meanwhile, cut wings into two pieces each. Learn how here.

Use tongs to carefully lower the 8 wing pieces into the oil. The oil temperature may drop when the wings are added. Try to keep oil at 350-375°F. If it drops too low, increase heat. If temperature rises, reduce heat. If it keeps rising, take the pot off of heat and transfer to a cool element for 1 minute. Monitor.

Flip wings occasionally until well browned and the chicken&#8217;s internal temperature reaches 165° F on an instant-read thermometer, 8-10 minutes. Place on a plate with a paper towel to remove excess oil.

@VADA....just to be honest...if you don't have a deep fryer that regulates the temperature or, at the very least, a thermometer to check the oil....you really shouldn't be deep frying anything. The main 2 reasons why I say this is because 1) If you're unsure what the temperature of your oil is, you won't be able to guarantee that the food was cooked properly which can cause food poisoning, and 2) You could end up with a grease fire because the oil got too hot. Deep frying for most people is a very simple task, but it can be extremely dangerous. I would suggest baking them until you at least have a thermometer to check your oil temps. Safety is always more important, no matter how delicious the recipe is. Have a great day and stay safe.

Salt & Pepper Chicken Wings (椒鹽雞翼)

chicken wing

oz mini sweet pepper

garlic

shallots

red chilis

green onion

tbsp all-purpose flour

cornstarch

corn oil

tsp sugar

0.5 tsp white pepper

tbsp light soy sauce

oyster sauce

tbsp cooking wine

0.5 tbsp dark soy sauce

tsp garlic salt

Wash & cut chicken wings

To wash the chicken wings, put them in a large bowl of clean water. Scrub off debris and any dangly bits. When they're washed to your satisfaction, pull the wings out and pat them dry with a paper towel.

Marinate wings

In a medium-sized bowl, mix together salt, sugar, white pepper, light soy sauce, oyster sauce, cooking wine, and dark soy sauce. Add the chicken wings and toss to evenly coat. Massage the wings to help push the marinade in a bit more. Then, set them aside to absorb the marinade as you prepare the rest of the ingredients.

Prepare ingredients

Create seasoning & coat chicken

In a small bowl, mix garlic salt, salt, and white pepper. Stir it up a bit.

Fry chicken wings

In your deep-frying vessel (a deep pot is best, in our opinion), heat up oil to 300°F. There should be enough to cover the chicken wings.

Stir-fry everything

Heat up a wok on medium heat. Add oil, taken from the frying oil from the previous step.
