Fritos Corn Salad is a unique dish that can be used as a side or a dip! Packed with corn, black beans, peppers, onion, a blend of spicy and savory seasonings, and of course crunchy Fritos, this corn salad is perfect to bring to any potluck or BBQ. It’s so simple and quick to make, you’ll want to whip this up for every occasion!

Fritos Corn Salad

mayonnaise

sour cream

Lime (juiced)

salt

½ teaspoon of ground black pepper

garlic powder

chili powder

½ teaspoon of ground cumin

Cups of Fritos corn chips

15-oz Can of sweet golden corn, drained

15-oz Can of black beans, rinsed and drained

pepper

Red bell pepper

onion

Add the mayonnaise, sour cream, lime juice, salt, pepper, garlic powder, chili powder and cumin to a small bowl and stir to combine.

Add the corn chips, corn, beans, green pepper, red bell pepper and onion to a large bowl and toss to combine then pour in the sauce mixture and gently toss to combine once again.

Serve with freshly minced cilantro and additional Fritos chips.

Hot Corn Salad

whole kernel corn, (drained)

celery, (chopped)

green onions, (sliced)

pepper jack cheese, (grated)

¾ oz bag of Chili Cheese Fritos®

sour cream for topping, (optional)

Preheat oven to 350° and spray an 8 x 8 baking dish, or a casserole dish, with a non stick spray. Set aside.

Drain corn and add to a large mixing bowl.

Stir in celery, green onions, mayo, sour cream and cheese. Stir until combined.

Pour into prepared baking dish and cook uncovered for 30 minutes.

Carefully remove from oven.

Stir in bag of coarsely broken up chili cheese Fritos® right before serving.

Top with a spoonful of sour cream, optional.

Fritos Corn Salad (Easy Recipe Idea!)

8-ounces shredded Cheddar Cheese

Green Onions, sliced (green and white parts!)

1, 14.5-ounce can Fire-Roasted Tomatoes, drained

Mayonnaise

Sour Cream

1, 1-ounce packet Taco Seasoning

Honey Barbecue Fritos Twists

In a large bowl, add the 2 cans of drained corn, 8 ounces of shredded cheddar cheese, 5 sliced green onions, and 1 can of drained fire-roasted tomatoes.

Add in half a cup of mayonnaise and half a cup of sour cream with the packet of taco seasoning to the large bowl with the corn and veggies.

Mix everything together really well. You can do these steps up to 24 hours ahead of when you want to serve your Fritos Corn Salad.

Just before serving, smash up the bag of fritos slightly and pour into your large bowl of corn.

Mix around to distribute the Fritos into the salad.
