This Ground Beef and Broccoli recipe is an easy 30 minute meal with a simple, flavorful sauce that your family will love eating with vegetables!

Ground Beef and Broccoli

peanut oil (can sub vegetable

broccoli florets (washed and patted dry)

rice (any kind)

beef

onion

red bell pepper (sliced)

Salt/White Pepper (to taste)

beef broth

soy sauce

brown sugar

honey

garlic (minced)

ginger

sesame oil

cornstarch

Combine cornstarch + 2 Tablespoons water in a covered container and shake to combine. Place in the fridge.

Combine remaining sauce ingredients in a medium bowl and set aside.

Prep Work

Heat the oil over medium heat. Add the broccoli and toss to coat. Cook for 4-5 minutes, until slightly softened. Remove and set aside.

Cook the Broccoli

Season the beef with salt/white pepper if desired. Cook and crumble the ground beef and diced onions over medium-high heat until browned and cooked through. Drain grease. Add sliced bell peppers and cook for 1 minute.

Cook the Beef

Add sauce mixture and bring to a gentle boil. Let it simmer/reduce for 2-3 minutes. Remove cornstarch mixture from the fridge and give it a shake. Slowly stir it into the sauce. Let it continue to bubble gently until desired thickness is obtained.

Add the Sauce

Reduce heat to low. Add broccoli back and stir to combine and heat through. Garnish with green onions and serve over rice!

First, preheat your oven to 180 Celsius or 350 Fahrenheit. Prepare all of your ingredients, such as pre-cooked chicken, broccoli, cheese and crumbled bacon cut into small pieces or bacon bits. Ranch dressing is made using our recipe as it contains the least carbohydrates you can have.

Into a casserole of your choice, add the broccoli as the base.

Chicken

Onto the broccoli, spread chicken pieces.

Bacon

Ranch dressing

Add half of the ranch dressing and spread it all over the casserole.

Repeat

Depending on the depth of your casserole, you can repeat the steps again. 

Shredded cheese and bake

On top of the casserole, lay all of your shredded cheese and place it into the oven for 30 minutes.

How to Cook Frozen Broccoli

Preheat oven to 425°F. Line a large baking sheet with parchment paper for easy clean up.

Add the frozen broccoli to the baking sheet in a single layer, taking care not to overcrowd the pan. Place in the oven and roast for 10 minutes. This extra step assists in removing excess water.

Remove from the oven and add oil and seasonings of choice. Toss with tongs until broccoli is well coated. Place back in the oven and roast for another 10 minutes. If you want it to be extra crispy and brown, broil on high for 5 minutes or so.

Add broccoli to a large skillet. Add 1/4 cup of water for every 1/2 pound (8 ounces) and cook covered over medium heat until the ice from the broccoli melts, about 2 minutes.

Transfer broccoli to a colander and shake off excess moisture. Wipe down the pan.  Cut any large florets so they are all uniform in size.

Add oil to the same skillet and heat over medium-high heat. Add back in the drained broccoli and  saute for 5-7 minutes, taking care not to toss too much. Add seasoning(s) of choice and a squeeze of fresh lemon always brightens it up! It makes all the difference in the world!

Saute

Place water in a pot, add steamer basket, and bring to a boil. Add broccoli, cover, reduce heat to medium, and cook for 3-4 minutes, until tender. Transfer to a bowl and toss with seasoning(s) and lemon juice.

Steam

Place 1/2 pound of broccoli and 2 tablespoons water into a microwave safe dish. Cover with a lid or microwave safe dish. Microwave on high for 2 minutes. Stir and cook for 2-3 additional minutes. It will take about 5 minutes. Strain and season.

Crispy Air Fryer Frozen Broccoli (15 Minute Recipe)

Stir: In a large bowl toss together all ingredients to evenly coat the broccoli.

Preheat: Preheat your air fryer to 400°F (204°C) for 5 minutes.*

Best Ever FROZEN Broccoli (In The Air Fryer!)

This Broccoli Potato Soup is made with just 7 simple, healthy ingredients! Easy to make, rich &amp; creamy (without the butter or cream), and so comforting.

Vegan Broccoli Potato Soup

yellow onion

garlic garlic

lb. gold potatoes (about 2 medium/large)

vegetable broth

plant milk (plain + unsweetened)

nutritional yeast

dill (optional)

Dice onion and mince garlic.

In a large stockpot over medium-high heat, sauté onion for 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)

Meanwhile, dice potato.

When onion is softened, add garlic. Stir and sauté 1 minute.

Add potato, broccoli, broth, milk, and nutritional yeast. Stir and bring to a light boil. Then reduce heat, cover, and simmer for 20 minutes or until potatoes are tender. Stir occasionally.

Add fresh dill (if using). Then blend soup with an immersion blender.* Blend as much or as little as you prefer to desired texture. Salt/pepper to taste.

So, true confession… I didn’t exactly measure the fresh dill… so I probably used about twice the amount of fresh dill as called for in the recipe.  But, it was amazing!! We loved it with the extra dill taste!  Definitely a keeper recipe!  Thanks so much for such a delicious soup!
