Crispy, crunchy roasted frozen cauliflower with garlicky breadcrumbs is an easy, fast &amp; flavorful vegetable side dish for dinner. 
To make a main dish, toss the cauliflower and breadcrumbs with pasta and top with parmesan cheese. 

Crispy Roasted Frozen Cauliflower with Garlicky Breadcrumbs

cauliflower florets (32 ounces)

olive oil,

panko (Japanese-style breadcrumbs)

garlic powder

¼ teaspoon salt, plus more to taste after the cauliflower is cooked

Heat oven to 425 degrees CONVECTION ROAST

Line a rimmed baking sheet with parchment

(otherwise, the panko and frozen cauliflower will stick to the pan)

On the baking sheet, toss the cauliflower with 2 tablespoons of olive oil

In a small bowl, mix together the panko, garlic powder and salt. 

Sprinkle the panko and seasonings evenly over the pan,

covering the cauliflower and letting some of the panko cover the pan. 

Roast for 15 minutes without mixing or turning the frozen cauliflower,

then drizzle another tablespoon or so of olive oil over the cauliflower and panko if the pan seems dry (don’t mix).

Roast at least another 5 minutes, for a total cooking time of 20 minutes,

or until cauliflower is browned to your liking. I often keep the pan in the oven for closer to 30 minutes, as long as the breadcrumbs aren't getting too dark.  

What a quick, colorful and tasty side dish!  Perfect for any day but a must-have for Thanksgiving!

My kids are not huge fan of veggies, but love the taste of roasted cauliflower. Going to have to head to Trader Joes for this rainbow cauliflower.

How To Cook Frozen Cauliflower Rice

Oil to spray

Garlic Cloves

Salt and pepper

Cups Cauliflower Rice (1 medium head)

Prepare Ingredients

First, preheat your oven to 200 Celsius or 400 Fahrenheit. Prepare all of the ingredients. Frozen rice does not need to be thawed, as the fully heated oven helps against it being mushy, and water evaporates quickly. 

Frozen rice

Take out your package of frozen cauliflower rice and try to break the big frozen clumps still in the bag. Using the back of the spatula, ensure all the rice is separated. Place onto the baking sheet. 

Season

Add the garlic cloves pressed onto the rice and add salt and pepper. Mix and spray a bit with olive oil. This will help to get a bit more crunch to the rice. Mix all thoughtfully. 

Bake

Place into the fully preheated oven and bake for 20 minutes.

Scrape and Serve

Once baked, using a spatula, scrape all of the cauliflower rice from the sides of the baking sheet and mix it. The dark pieces are the crunchiest and most delicious.
