Sausage & Hash Brown Balls

lb hot sausage, (uncooked)

(8-oz) package cream cheese, (softened)

Bisquick

cheddar cheese

½ (30 to 32-oz) package frozen shredded hash brown potatoes ((about 4 cups))

Preheat oven to 400°F.

Mix all ingredients until well combined. (I use my KitchenAid mixer with the dough hook attachment)

Roll into 1 1/2-inch balls. Place on rimmed baking sheet.

Bake for 18 - 22 minutes, or until brown.

Sausage Hash Brown Breakfast Casserole

lb sausage ((cooked, crumbled, drained))

eggs ((room temperature))

milk

salt

tsp black pepper

garlic powder

onion powder

cheddar cheese ((grated - reserve 1/2 cup for topping the casserole))

yellow onion ((optional, diced))

red bell pepper ((optional, diced))

green bell pepper ((optional, diced))

Preheat your oven to 350°F (175°C) and lightly grease or spray a 9x13 baking dish with non-stick cooking spray.

Brown and crumble the sausage in a skillet over medium-high heat then drain the fat.

In a medium mixing bowl combine the eggs, milk, and seasoning (salt, pepper, garlic powder, and onion powder).

Layer the hash browns, cooked sausage, optional ingredients (red or green bell peppers and/or onions) plus 1 1/2 cups of grated cheddar cheese then pour the egg mixture over the ingredients. Mix to combine if desired, then top with remaining 1/2 cup of shredded cheese.

Bake at 350°F (175°C) for 55-60 minutes, or until the egg in the center is fully cooked. *Cooking times may be longer if you add additional ingredients, or your hash browns are not fully thawed.

Pepper Jack Potato Casserole

(30 to 32-oz) bag frozen shredded hash browns

chicken soup

shredded pepper jack cheese

heavy whipping cream

butter, (melted)

sour cream

Parmesan cheese, (divided)

salt and pepper

sleeve Ritz crackers (crushed)

bacon

paprika

Preheat oven to 400ºF. Lightly spray a 9x13x2-inch baking dish with cooking spray.

In a large bowl, combine hash browns, cream of chicken soup, pepper jack cheese, heavy cream, butter, sour cream, ¼ cup grated parmesan, onion powder, garlic powder, salt and pepper.

Spoon potato mixture into prepared pan.

Combine crushed crackers, bacon, remaining ¾ cup grated Parmesan cheese, and paprika. Sprinkle over potatoes.

Bake, uncovered, for 45 to 50 minutes, until bubbly.
