Loaded Sweet Potato Nachos

potatoes,

Tbsp. avocado oil (or other cooking fat of choice)

Salt

chicken

½ cups shredded cheese (such

corn (fresh

tomato

Fresh cilantro, sliced green onions, diced red onion

Kalona SuperNatural™ Plain Kefir

⅓ sup sour cream

taco seasoning (try our Homemade Taco Seasoning)

dill

thyme

parsley

Juice of ½ lime

Pinch of dried chipotle or ancho pepper powder (optional)

Salt and black pepper

Line 2 large rimmed baking sheets with parchment paper. Toss the sweet potato slices with oil. Place slices in a single layer on the baking sheet taking care not to crowd them then sprinkle with salt.

Place baking sheets in the oven and bake for 10-12 minutes, rotating the sheets halfway through cooking time, or until slices are lightly browned and crisp on the edges.

Remove chips to a wire cooling rack to rest while you repeat with the remaining sweet potato slices.

To Make the Sweet Potato Chips:

Layer ½ of the sweet potato chips (homemade or store-bought) onto a baking sheet or in a glass baking dish. 

Top with ½ of the chicken or taco meat, beans or corn if using, and cheese. 

Repeat with this layer, ending with cheese on top. Place baking sheet or dish into the oven and bake 5-10 minutes or until cheese is melted.

While the nachos are baking, combine all of the dressing ingredients in a small bowl and whisk to combine.

Remove pan from oven, add salsa, diced tomatoes, sliced or diced onions, chopped cilantro, avocado or guacamole, etc.

Drizzle Southwest Ranch Dressing over nachos and serve with lime wedges, if desired.

To Make the Nachos:

Preheat oven to 350°F. Divide dough into 12 sections and roll each section into a large ball.

Bake cookies on a baking sheet according to package instructions (about 12 minutes) and cool completely.

Cut each cookie in half. With the wrong sides of the cookie facing up, squeeze a strip of icing around the inside of each cookie half.

Line the icing on one cookie half with mini marshmallows (the round part of the cookie will form the teeth, but add a few marshmallows along the flat edge also so that the vampire teeth mouths stay level.

Place the other half of the cookie on top of the marshmallows to form the mouth and teeth.

Working quickly, before the icing dries to the touch, place a slivered almond to the outsides of the two front teeth to make fangs.

Continue to make your vampire teeth creations with the remaining cookies.

Set out three bowls for breading the beef, one with the flour, one with the eggs and one with the breadcrumbs.

Dip a piece of beef into the flour so it&#8217;s fully coated, then shake off the excess. Next dip into the eggs letting the excess drip off and then into the breadcrumbs so the beef tip is fully coated on all sides. Place onto a parchment lined baking sheet. Repeat until all the beef tips are coated

Cook the beef tips in the oven for 10 minutes.

While the beef is cooking you can make the sauce by adding the oil to a saucepan over low heat. Add the garlic, stir and cook for 30 seconds, then add the rest of the ingredients to the pan. Stir until combined and let simmer until the beef is ready.

Remove the beef tips from the oven and then dip them into the barbecue sauce to coat.

Preheat oven to 350°F.

Combine all ingredients and spoon into shallow 1-quart baking dish.

Bake 20 minutes or until mixture is heated through; stir. Garnish with chopped green onions if desired and serve with crackers and/or vegetables.

Heat oven to 190C/fan 170C/gas 5. Line a 12-cup muffin tin with brown muffin cases. Beat the first 5 ingredients to a smooth batter and spoon between the cases, almost filling them to the top. You may have a little left over. Bake for 20-25 mins until risen and spongy. Cool on a rack.

Beat the butter and icing sugar until smooth. Slice off the very tops of the cakes and cut each piece in half. Spread a generous layer of icing over each cake.

Working on one cake at a time, squirt a pea-sized blob of orange icing onto two Maltesers and use to fix a brown M&M on each. Sit the eyes, two pieces of cake top (curved edge up) and a jelly diamond on the icing to make an owl.

Breton crackers

salami (we used peppered)

red bell peppers (sliced)

cucumber

sleeve Ritz crackers crackers

almonds nuts

candy eyeballs

Slice pear in half lengthwise and place one half cut side down at the bottom center of your serving platter.

Arrange cheeses, overlapping, around the perimeter of the serving platter.

Arrange rectangular crackers to form a second row around the perimeter of the platter, under the cheese layer.

Spread the larger round crackers in the next row.

Pinch salami at one end and arrange below the crackers, placing them tightly together so that the pinched bottoms are touching and the open sides form a fan.

Arrange bell pepper strips tucked in and around the salami pieces to accent the reds of the “turkey feathers.”

Create a few rows of cucumber slices for the turkey back. Lift the pear half and fan out a circle of Ritz crackers to support the pear head.

Place the pear back in shape and fill in the extra space at the bottom of the tray with the almonds.

Cut a small triangle from an extra piece of cheese and place on the pear face to form a beak. Use hummus, peanut butter, or even a little butter to stick the candy eyeballs to the pear face.

Storage: Keep refrigerated and covered in plastic wrap until ready to serve. Assemble as close to serving time as possible to keep
