If you’ve never heard of Funeral Potatoes before, you are in for a treat! This creamy, cheesy potato casserole is a real crowd-pleaser, and is ubiquitous at most social gatherings here in Utah.

Cheesy Funeral Potatoes

Simply Potatoes shredded hash browns*

cream of chicken soup

sour cream

cheddar cheese (grated)

butter

onions

corn flakes (crushed + 2 Tbsp melted butter)

Melt the 1/2 cup of butter in a a saucepan on your stovetop. Add the cream of chicken soup, sour cream, cheese, and green onions to the pan. Stir over low-medium heat until the cheese has melted and everything is well combined. Remove from heat.

Spread hash browns evenly across the bottom of a 9” x 13” baking dish.

Pour the creamy, cheesy mixture from the saucepan over the top of the potatoes and stir.

Stir together the crushed corn flakes and the 2 tablespoons of melted butter.

Then sprinkle the corn flakes mixture over the top of the potatoes and cream mixture.

Put the baking dish into your oven, and bake for 45 minutes at 325 degrees. When the top is golden-brown and the potatoes are hot and bubbly, you’ll know it’s done!

Remove the baking dish from the oven and let it stand for 15 minutes. Then dig in and enjoy!

Filled with freshly diced potatoes, cheesy goodness and topped with crispy Kellogg&#x27;s corn flakes this casserole is easy to pull together and oh so delicious!

Funeral Potato with Real Potatoes

6-7 medium potatoes (30-35 ounces)

sour cream (1 pint)

green onions

salt

cheddar cheese

cornflakes

Preheat oven to 400° F.

Cube and boil potatoes until just soft enough to eat, but still firm when bitten into. (al dente) Drain off the water and set aside to cool.

In microwave melt your butter. Once melted stir in can of cream of chicken soup.

In separate bowl mix sour cream, chopped green onions, salt, and shredded cheddar cheese. Add the butter and soup mixture. Mix well and set aside.

Fold in potatoes to the sauce mixture. Do not over stir, just long enough to coat all potatoes.

Spoon mixture into a greased 9x13 baking dish.

To prepare the topping melt butter and mix with crushed Kellogg&#x27;s Corn Flakes.

Spread cereal topping over the mixture in the pan.

Bake in oven at 400° F for approximately 35 to 45 minutes or until bubbly and corn flakes appear golden and crispy.

These potatoes are delicious! I use Campbell’s cheddar cheese soup instead of cream of chicken and they turn out great every time!

This is a favorite in our home. I had this dish made slightly different and DID NOT like it, but gave it another try after seeing Ashley make it. 
Last night I added two cooked and diced chicken breast when I added the potatoes, it made a yummy and cozy dinner.

Such a solid recipe!! I dream about these once they are all gone!

These were absolutely delicious! Such a comfort today! Adding it to my faves!

Made them, ate them, loved them! I saw another recipe with honey bunches of oats on top instead of cornflakes and I’m not brave enough to try it because this is so good. Maybe one day I’ll try it. But for now, this one is a keeper!

This is my second time making this I substitute the cream of chicken for mushroom and it’s delicious

When we moved into our house over a year ago, I watched a vlog where Ashley was making this and I was inspired. This was the first time I made funeral potatoes with real/fresh potatoes rather than frozen hashbrowns- either way it hit the spot on a cold day

These are great and using real potatoes makes all the difference. If you want a little more flavor, use a sharp cheese. Yummy!

So easy yo make, potatoes are creamy and full of flavor

I made this last night with the chili recipe. It was really good but next time I won't use the green onion. I am not a fan of green onions so I used half the amount in the recipe but still wasn't a fan of the flavor it gave them. I still liked the dish alot but I think if I make them without the green onions I would give it 5 stars.

This recipe changed my life. As a potato lover, this dish has my heart. This will have everyone asking for the recipe at parties and your family will beg you to make it again. The ultimate comfort food
