Chickpea Salad Recipe

Tbsp extra virgin olive oil

Tbsp lemon juice (from 1 large lemon)

garlic (pressed

tsp sea salt (or

tsp black pepper

cherry tomatoes (halved)

Cucumber

oz chickpeas (or garbanzo beans, drained, rinsed)

red onion (thinly sliced)

avocado (sliced)

cilantro (chopped)

oz feta cheese (diced)

Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt and 1/8 tsp pepper and whisk to combine (or shake them together in a small mason jar).&nbsp;&nbsp;

Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste (we used all of it) and toss to coat.&nbsp;

This Garbanzo Bean Salad is loaded with veggies, dressed in an Italian-inspired vinaigrette, and finished with some herbaceous parsley!

Italian Garbanzo Bean Salad

olive oil

(51 grams) red wine vinegar

(1 grams) dried parsley

onion

(17 grams) lemon juice

EACH dried basil, dried oregano, salt

(15 grams) grated Parmesan cheese

white granulated sugar

(15 oz., 432

sweet corn ((or 1 can corn, drained))

(76 grams) chopped English (or Persian/Salad) cucumbers, ((~3 Persian/1 English cucumber))

red bell pepper, (diced (1 cup; (138 grams))

avocado,

(90 grams) diced red onion ((~1/2 of 1 onion))

(16 grams) finely diced flat-leaf Italian parsley ((~1/2 of 1 bunch))

Fine sea salt and fresh cracked pepper

DRESSING: Add all of the ingredients to a Mason jar, place the lid on the jar, and then shake vigorously until ingredients are incorporated. Place in the fridge while you prepare the salad. I like to make this first so it can chill and flavors can intensify.

SALAD: Drain and rinse the garbanzo and black beans; shake in a colander to rid of any excess water. Place in a large bowl. Add the corn, the chopped cucumber, diced pepper, chopped avocado, diced red onion, and finely diced parsley.

DRESS: Remove the dressing from the fridge and give it a good shake. Pour over the salad (See Note 1) and gently toss to coat. We like to use all the dressing in this salad, but if you&#039;d like a less-dressed bean salad, add less. Season with additional salt and pepper (I add another 3/4 teaspoon fine sea salt and 1/4 teaspoon pepper, but add to preference.), tasting often. The amount of salt needed will vary, depending on the freshness/ripeness of ingredients used). Toss salad once more and enjoy.

STORAGE: Store salad, avocado, and dressing separately. Combine right before eating a portion. Salad (stored separately) will last 3-4 days in the fridge. The dressing will stay good for up to 2 weeks.

Indian chickpea salad is quick and very refreshing summer recipe ,combined with juicy tomatoes, refreshing cucumbers , onion and some green chili all tossed along with lemon.

Best Indian Chickpea Salad | Easy vegan chickpea salad

Chickpeas, (boiled and cooked)

Cucumber ((partially peeld))

Tomato ((large size))

½ Onion ((red onion))

Green chili

Cooking oil

½ tbsp Black pepper powder

½ tbsp Rosted cumin powder

Ginger ((sliced))

coriander leaves (,chopped)

tbsp Fresh lemon juice

¼ tbsp Chat masala

Salt

Slice the cucumber, red onion and tomato in cube shape.

In a small frying pan heat 1 tablespoon cooking oil over medium high heat, toast the boiled chickpea with red chilli powder and salt to taste until aromatic, about 3-4 minute and keep a side.

Transfer to the bowle and keep aside.

Mix in fresh sliced ginger, fresh chopped green coriander, green chilli,black pepper, cooked chickpea and roasted cumin powder to the cucumber, red onion and tomato.

Add chaat masala, fresh lime juice &amp; a pinch of black salt.

Mix it very well.

Ready to enjoy.

An easy, healthful chickpea salad recipe that takes minutes to make and tastes fresh. With Greek yogurt, crunchy celery, and plenty of fresh herbs. Adapted from Lidey Heuck / NYTimes.

Chickpea Salad With Fresh Herbs

whole or low-fat plain Greek yogurt

lemon juiced (about 2 tablespoons)

wholegrain mustard,

salt

black pepper

dill,

parsley

chickpeas,

small-diced celery

Combine the yogurt, lemon juice, wholegrain mustard, salt, pepper, dill, and parsley in a small mixing bowl. Whisk until smooth. Set aside.

Place the drained chickpeas in a large mixing bowl. Use a potato masher or the back of a serving fork to lightly mash about 1/3. Add the celery and scallions and toss to combine.

Add the yogurt dressing and stir until well mixed. Serve, topped with additional fresh herbs. TIP: This can be made up to 2 days in advance and kept in the fridge. If making in advance, remove from the fridge about 30 minutes before serving. Give it a good stir before topping with fresh herbs.

Mediterranean Chickpea Salad

extra virgin olive oil (or sub tahini for oil-free)

lemon

sea salt

Black pepper,

(665 g) cooked and unsalted chickpeas*

dry pint fresh tomatoes, diced or cut in half

cucumber, diced (about 2 cups or 275 g)

red bell pepper, diced

½ red onion, diced

(65 g) kalamata olives, cut in half

parsley,

mint,

Make the Dressing

Add the oil, lemon juice and zest, salt, and black pepper to the base of a large bowl. Whisk until emulsified.

Add the Veggies

Toss the chickpeas, tomatoes, cucumber, bell pepper, onion, olives, parsley and mint into the bowl and mix until everything is evenly coated in the dressing. Season with additional salt and pepper, if necessary.

Serve &amp; Store

this Salad can be served immediately, but is best if you let it sit for 4 hours, preferably overnight. This gives the flavors a chance to mix together! Refrigerate leftovers in an airtight container for up to 6 days.

This quinoa chickpea salad is loaded with fresh ingredients and flavor! It’s delicious, nutritious, and best of all, incredibly easy to make.

Quinoa Chickpea Salad

quinoa (cooked (1 cup uncooked, rinsed and cooked according to package directions))

red bell pepper (diced)

cucumber (diced)

shallots (finely diced)

(14.5 oz chickpeas)

feta cheese (crumbled)

green olives (halved)

parsley (chopped)

rice vinegar

Dijon mustard

Salt and pepper

Wash and dice the cucumber, bell pepper, and shallots.

Rinse and drain the chickpeas.

With your hands, crumbles the feta cheese into small pieces.

Cut the green olives in half and finely chop the parsley.

Add all the ingredients to a large salad bowl.

In a small bowl, add all the dressing ingredients.

Mix well to combine everything.

Pour the dressing over the salad, and mix to combine all the ingredients.

You can serve it immediately or wait 1 hour for the flavors to develop.

OMG!!!! I absolutely loved this recipe, I planned on splitting it between lunch for one day and lunch for the next, however; I ended up eating all of it the day I made it. I usually just open cans of beans and add them to my salads but this is so much better! Next recipes I am trying are the White Bean and Black Bean recipes, thank you.
