Garlic Aioli Recipe

garlic (click

mayonnaise

lemon juice (about ½ lemon)

Worcestershire Sauce

cayenne pepper

Heat oven to 400°F.

Trim off ½ inch off the top of each head of garlic. Rub the garlic heads with your fingers to remove all except one layer of skin around the cloves.

Drizzle each garlic head with 1 teaspoon olive oil, sprinkle with kosher salt and freshly ground black pepper and wrap in aluminum foil. Place in a small baking dish to catch any juice.

Bake 50-60 minutes or until the garlic is soft and golden brown. Unwrap and cool to the touch, about 10 minutes, then mash with a fork. Discard any hard spots. .

In a small mixing bowl, whisk together the mayonnaise, lemon juice, Worcestershire Sauce, cayenne pepper and mashed roasted garlic. Mix until well incorporated.

Refrigerate at least 30 minutes to 48 hours in-advance.

Homemade Aioli couldn&#039;t be more simple to make and this roasted garlic version is no exception. Prepare to never get store bought aioli again!

Roasted Garlic Aioli

Garlic

/ 250 milliliters Oil ((see notes))

Egg Yolk

Lemon, (or to taste)

Dijon Mustard ((optional))

Salt & Black Pepper, (to taste)

Slice the tip off bulb of garlic, exposing the cloves. Drizzle with a little oil, wrap foil and pop in the oven at 180C/350F for 45mins or until golden and completely soft throughout.

Squeeze out the garlic into a bowl with a good pinch of salt and mash with a fork.&nbsp;Allow to cool.

Add your egg yolk and a gentle squeeze of lemon juice. Whisk until smooth.

Grab a towel and fold into a circle (see video). Place your bowl on top - this will stabilise the bowl and allow you whisk/pour at the same time.&nbsp;

Drip by drip, begin pouring in your oil, ensuring you continually whisk. It&#039;s essential you start with tiny amounts to keep it from splitting. Ensure you whisk very vigorously throughout the whole process.

Very gradually increase to a gentle stream and keep whisking until your desired texture. Add mustard and check for seasoning. Store in the fridge or eat right away!

🍴 NOTES 🍴

a) Olive Oil - Traditionally aioli is made with olive oil, however I personally find it way too bitter. My preference is to use a neutral flavoured oil such as canola or rapeseed. If you are adamant you want to use olive oil, I'd recommend using a light extra virgin olive oil and have a neutral oil on hand to balance it out if needed. Oils I have personally used include Rapeseed, Canola and Sunflower Oil.

 

b) Consistency -  You most likely won't need the whole cup of oil so don't feel like you have to use it. Adding more oil will actually thicken the aioli. If you've gone past your desired thickness then thin out with lemon juice and/or a splash of water.

 

c) Roasting Garlic - Timing will depend on the age and size of garlic. You'll struggle to burn the garlic, especially at 180c/350f, but just be vigilant after 45mins. The longer you roast, the deeper golden it turns and arguably the more sweeter the garlic will be.

How To Make Aioli

lemon juice

garlic (finely chopped)

canola oil

extra virgin olive oil

Blend the ingredients. Combine 1 egg, a chopped garlic clove, 4 tsp fresh lemon juice, and ½ cup canola oil in the cup of a Zwilling Enfinigy Personal Blender. Seal tightly with lid, then secure onto the base of the blender. Process until smooth and thick. Note: you can let the blender run independently, it will shut off when done!

Stream in olive oil. Transfer the mixture to a large mixing bowl, then very slowly stream in ½ cup extra virgin olive oil while continuously whisking. If you add the oil in too quickly, it will not emulsify. Do this slowly, a few drops at a time or a slow, steady stream of olive oil, and once it&#39;s all incorporated, you&#39;ll be rewarded with thick, creamy aioli. Season with ½ tsp Kosher salt and ¼ tsp black pepper. Stir well, then serve immediately or refrigerate.

Caramelized Brussels Sprouts with Bacon

Brussels sprouts (trimmed

unsalted butter

black pepper

sea salt (to taste)

bacon

Dijon mustard

Rinse Brussels sprouts and pat dry. Trim stems and cut each in half lengthwise.

Place into the basket of a microwave steamer with 2 tablespoons of water. Microwave for 2 minutes. Remove from steamer to stop the cooking.

While the Brussels are steaming, melt the butter in a cast iron skillet over medium heat. Add freshly ground pepper and stir until just sizzling.

Add the Brussels to the skillet in a single layer, cut side down as much as possible. and sprinkle with salt. Cover without turning for 4 to 5 minutes. Flip the Brussels over and continue cooking for another 3 to 4 minutes, or until soft and lightly charred. Add the crumbled bacon and stir.

To serve, drizzle with half the aioli, reserving the rest for extra dipping, if desired.

Prepare the aioli by combining the mayo, Dijon mustard, lemon juice, and garlic in a small bowl. Add salt to taste and refrigerate.

This homemade garlic aioli recipe made with fresh garlic, egg yolks, lemon juice, mustard and oil, is ready in around 15 minutes.

Egg Yolks

TBSP Lemon

¾ Cup Extra Virgin Olive Oil ((¾ cup = 180 milliliters))

Finely grate or mince the garlic as much as possible or use a garlic press to crush it.

Measure out the oil and set it aside so that it is ready to pour.

Add the egg yolks, lemon juice, mustard and garlic to a blender or food processor or a bowl if using an immersion blender.

Very slowly add the oil a few drops at a time while mixing. As the aioli starts to emulsify, increase adding the oil to a thin stream, while continuing to mix until emulsified and the sauce has thickened. It should take you at least 2 minutes to pour the oil in, pausing occasionally to scrape down the sides. If you can’t pour in a steady stream, add 2 tsp/10ml at a time.

Once the oil is completely incorporated, the mix should be thick and pale. Add the salt and possibly more lemon juice if needed, pulsing several times to incorporate.

Scrape into a glass container and refrigerate until ready to serve.

Keeps in a sealed container in the fridge for 3 days.

Food Processor / Blender

This recipe can also be made using a Thermal machine.Place the garlic into the bowl and mix for 4 seconds, speed 8. Then scrape down the sides of the bowl, then repeat the mixing and scrape again. Insert the butterfly attachment then add the mustard, lemon juice, egg yolks and salt.Mix for 1 minute, at 37˚, speed 3.When done, gently remove the butterfly attachment and scrape down the sides.Very carefully, turn the machine on to speed 4 and remove the MC. Very, very slowly drizzle the oil through the hole. Once the oil has been added, increase the speed to 5 for 1 minute. The mixture should be thick and creamy.Remove and store.
