Place the peeled garlic cloves in a small saucepan (2 quarts or larger), cover with the olive oil, and place over very low heat on the stove. As the oil begins to warm, you will slowly see small bubbles form–they will gradually get larger until the oil is simmering slowly.

Place garlic in a medium heat-proof bowl. Pour boiling water over the garlic and let sit until about room temperature and the garlic skins are loosened, 40 minutes to 1 hour.

Peel garlic and trim root end from each clove. Transfer the garlic to a small heavy-bottomed saucepan and add avocado or canola oil and olive oil. Place over medium-low heat and bring to a gentle simmer. Reduce heat to low and continue cooking very gently, pulling pot to edge of burner to keep heat low enough if necessary to prevent the mixture from boiling, until the garlic is very soft when pricked with a fork and golden brown, 40 to 50 minutes.

Cool completely. Strain garlic, reserving oil, and puree the garlic. Store in separate covered containers in the fridge for up to two weeks. Bring oil to room temperature before using if it becomes solid in the refrigerator.

Prepare the garlic by separating it and peel the cloves.TOP TIP: to peel the garlic in seconds, then simply break the garlic head/s up into cloves by bashing lightly with the palm of your hand and then add them to a Tupperware container or mason jar with a lid (or between two metal bowls) and shake VIGOROUSLY for 20-30 seconds. DONE! Even the ones that aren&#039;t fully peeled will be loose enough to peel off super easily.

Add the items to a deep baking tray or casserole dish. I placed the rosemary first, then added the garlic cloves and poured enough oil over to submerge the garlic entirely.It&#039;s best to use a smaller dish here with high sides, so you need less oil than a large oven-tray.

Slow roast the garlic in the oven for around 2 hours at 195ºF/90ºC  (fan-assisted). When ready the garlic will be tender and lightly golden but not too browned.I prefer a slower, low-temperature cook for better flavor but feel free to check on the garlic after an hour as it may already be good enough for you.

Allow the garlic confit to cool enough to remove any herbs (if you want to). To speed up the cooldown time, place your container of garlic confit within an ice bath. When cooled, transfer to a sterilized glass jar and move to the refrigerator immediately.

Garlic Infused Olive Oil

1.2 oz garlic (5-6 large cloves

Peel the garlic, then slice or smash it up. 

In a small saucepan, add the olive oil and sliced garlic. Heat over low for about an hour until the garlic is lightly browned.

Remove from the heat and let cool down to room temperature. Then, remove the garlic and pour the oil into a clean/sterilized bottle. 

Keep in the refrigerator for about a month.

Calamari à la plancha is a delightfully crisp and spiced dish, popular in Spain and Portugal. Seared over high heat in cast iron until caramelized, then given a hearty spicing, it's a quick yet impressive meal.

Calamari à la Plancha

Kosher salt

garlic (3 to 5 cloves)

parsley leaves

red pepper flakes

Sea salt

lemon wedges (for garnish)

Preheat

Put 2 large saute pans (cast iron if possible) over high heat until very hot, about  3 to 4 minutes.

Season

Pat the calamari dry with paper towels and then season them lightly with salt.

Sear

Pour 2 tablespoons of the olive oil in one of the pans and sear the calamari until it releases its liquid, about 4 minutes.

Move

Put the remaining 2 tablespoons of olive oil in the other pan and then remove the pan from the heat and hold it, at an angle, near the pan with the calamari. Lift the calamari from the first pan with a slotted spoon and move to the second pan, leaving the juices in the first pan.

Brown

Return the second pan to the heat and add the garlic and tentacles. Cook until the calamari is nicely browned. Add the parsley and pepper flakes, stir, and remove the pan from the heat.

Serve

Divide the calamari among 4 serving plates, drizzle with extra-virgin olive oil, and garnish each plate with sea salt and a lemon wedge.

We had fresh grilled squid in Croatia a while ago and are hooked. Your preparation for grilling it is spot on.
I made the garlic-parsley oil without the pepper. Fantastic. I will use this recipe again and again.

I find that the author's recipe really was the best, though. They recommended using fresh squid, and so I did today, and the result was really the best of the best. I first boiled the squid for about 15 minutes in some salted water. Then I added the rest of the ingredients as the recipe was saying, but I replaced the hot red pepper flakes with fresh hot red pepper instead. Good job and well done.

Line a baking sheet with parchment paper.

Arrange a layer of tortilla chips on a large baking sheet.

Sprinkle the cheese blend over the tortilla chips.

Distribute the shredded chicken, black beans, corn, diced tomatoes, onions, and pickled jalapeños evenly over the chips.

In a small bowl, mix the minced garlic with olive oil. Season with a pinch of salt.

Place the baking sheet in the oven and bake for 10 minutes or until the cheese has melted and the edges of the chips start to turn golden brown.

In a small bowl, mix together Cholula hot sauce with mayonnaise.

Add dollops of salsa, sour cream, and spicy mayo on top. Garnish with chopped fresh cilantro.
