Easy garlic sesame noodles that happen to be vegan, gluten-free, and protein-packed thanks to Explore Cuisine chickpea spaghetti! Ready in just 10 minutes of cooking and seasoned with a sweet and savory, super garlicky sesame sauce.

Garlic Sesame Noodles

Explore Cuisine chickpea spaghetti

vegetable oil

red bell pepper (thinly sliced)

carrot

broccoli

green onions

soy sauce

garlic (minced)

tbsp coconut sugar ((or use brown sugar))

tbsp chili-garlic sauce ((or use sriracha, etc.))

hoisin sauce

tbsp toasted sesame oil

Boil a large pot of water. Cook the Explore Cuisine chickpea spaghetti according to package directions until cooked through. Drain and rinse with cold water.

Whisk together all of the sauce ingredients in a small bowl. Adjust the seasoning to taste if desired.

While the pasta cooks, heat the oil in a large skillet or wok over medium-high heat. Add the bell pepper and carrot. Cook, stirring frequently, until starting to become tender, about 3 minutes. Add the broccoli, and cook for another 2 minutes until the broccoli turns bright green.

Add the cooked chickpea noodles and sauce mixture, folding gently to combine. Continue to cook for about 3 more minutes, or until the sauce is thickened slightly and heated throughout. Serve hot, garnished with green onion and sesame seeds if desired.

Noodles are a girls best friend and these easy garlic sesame noodles are without a doubt my favorite noodle recipe to date! They require just a few ingredients, are gluten free, ready in 15 minutes, and can be eaten hot or cold!

15 Minute Garlic Sesame Noodles (Gluten Free)

brown rice noodles

tbsp olive or avocado oil

garlic

soy sauce*

tbsp veggie broth

tbsp rice vinegar

honey

tbsp tahini

tsp sriracha

tsp ground ginger

Bring a large pot of water to a boil and cook the pasta according to package instructions. 

Mince the garlic very finely or use a garlic press to get it super small since we won't be blending up this sauce. 

Add the minced garlic to a pan with the neutral oil. This can be avocado, olive, or refined coconut oil. 

Saute until the edges of the garlic look golden brown. 

Meanwhile, whisk together all of the remaining sauce ingredients in a bowl until there are no visible clumps of ginger and the tahini is spread throughout. 

Pour the sauce into the pan with the garlic and mix well. 

Let simmer for 2-3 minutes or until the sauce thickens slightly. 

When the pasta is done cooking, combine with the sauce. 

Garnish with scallions, red pepper flakes, crushed peanuts and enjoy!

10-Minute Sesame Noodles (Ma Jiang Mian)

oz (113 grams) wheat noodles

cucumber, cilantro, green onion, chili

tbsp Chinese sesame paste (Zhi Ma Jiang)

tbsp light soy sauce

tbsp dark soy sauce

tsp rice vinegar (or Chinese black vinegar)

tsp sesame oil

tsp sugar (or honey)

tbsp hot water (or to taste, preferably from boiling the noodles)

Cook noodles according to package instructions, reserving some of the hot water for the sauce. Drain and rinse the noodles under ice-cold water, carefully tossing them to cool evenly. Drain well and place in a bowl.

Combine all sauce ingredients in a bowl. Garnish the noodles with cucumber, cilantro, green onion, chili oil, and/or crushed sesame seeds, and pour the sauce on top. Mix well to combine and serve immediately. Enjoy!

Cold Sesame Noodles with Tahini Sauce and crunchy vegetables is a simple recipe that&#039;s ready in just 20 minutes. This sesame noodle recipe is perfect for an easy weeknight dinner, lunch or a healthy side dish that everyone will love.

Cold Sesame Noodles with Tahini

rice noodles

Tablespoons toasted sesame oil

red cabbage (about 1/8 head)

red bell pepper (sliced thin)

carrot (grated (about 1/2 cup))

snow peas (cut on bias)

onions

creamy tahini

tamari

maple syrup

Tablespoons unseasoned rice vineagar

garlic (zested)

ginger

red pepper flakes

water

sesame seeds

Bring a large pot of salted water to boil over high heat. Stir in noodles and turn down the heat to barely boiling, so the water doesn&#x27;t spill over. Cook pasta according to package instructions. Grab 1/2 cup of the boiling water and set aside to use in the sauce. Start to check for doneness 2 minutes before the package says. When pasta is al dente, pour into a colander to drain and rinse with cool water.

While the pasta cooks, whisk together the sauce. Measure tahini into pyrex measuring cup. Add tamari, maple syrup and vinegar. Grate garlic and ginger over the cup. Sprinkle red pepper flakes over everything. Whisk well. Add enough pasta water to create a creamy sauce that is pourable.

Prep the veggies: Thinly slice cabbage, red bell pepper, snow peas and scallions. Cut ends of carrot and use a box grater to shred.

Transfer cooked noodles to a large colander and rinse with cold water.  Then, add to large bowl and drizzle with sesame oil. Mix well to evenly coat all noodles.

Add cabbage, red pepper, snow peas, scallions and carrots to the bowl.

Whisk dressing again.  If it has thickened too much, add 1-2 Tablespoons additional water. Pour on 1/2 the tahini sauce and mix well.  Determine if additional sauce is desired and add.

Sesame noodles can be served at room temperature or cold.  Add garnish when ready to serve.  For spicy tahini noodles, add more crushed red pepper.  Pass around some toasted sesame seeds and additional sliced green onions.

Refrigerate any leftovers in airtight containers.
