Garlicky Shrimp Alfredo Bake

tsp each, salt & pepper ((more to taste, if desired))

Parmesan cheese

Romano cheese ((shredded))

Mozzarella cheese

Preheat your oven to 350 degrees F (175 degrees C) and coat your oven safe large frying pan or skillet with vegetable oil (about a tsp), then bring to a medium heat.

Melt the first portion of butter (1 Tbsp) and then add garlic and cook for about 30 seconds before adding the shrimp.&nbsp; Add the first portion of chopped parsley (2 Tbsp) and dill and continue to cook the shrimp until pink (3-4 minutes, about 2 minutes per side).

Remove the shrimp (slightly under cooked, as they will continue to cook when the dish is baked) to a plate and set aside.

Add the second portion (2 Tbsp) of butter to your frying pan or skillet and melt, stirring into the cooked juices from the shrimp. Add flour and whisk in the pan juices for 30 seconds to a minute, until all of the flour has been incorporated with the butter and begins to turn a golden color.

Add the chicken broth, then the milk and stir or whisk to combine. Add tomatoes and salt and pepper. Bring to a simmer, then add the first (1/2 cup) portion of Parmesan cheese and the Romano cheese. Stir until the cheese has begun to melt and the sauce is creamy, then add the first (1 Tbsp) portion of Mozzarella cheese.

Add about half of the cooked penne pasta, then more if there is plenty of sauce and room in your frying pan or skillet. Add a bit more of the chopped parsley (if desired) then add the cooked shrimp back into the frying pan or skillet. Stir to combine.

Top the creamy pasta dish with the remaining Mozzarella and Parmesan cheese, as well as the remaining chopped parsley. Then transfer to the oven and bake at 350 degrees F (175 degrees C) for about 8-10 minutes, or until the sauce is bubbling around the edges of the pan.

If the top of the dish isn't a nice golden color yet, you can broil it for 2-3 minutes (watching closely!) to finish it off with that lovely golden topping. Serve immediately.

Garlicky Orzo shrimp scampi with asparagus made entirely from scratch! This orzo shrimp scampi is loaded with tons of garlic, toasted orzo pasta, the most delicious lemony shrimp, and tender asparagus spears!

SHRIMP STOCK: Add a small drizzle of olive oil into a medium saucepan over medium-high heat. Add the shrimp peels and saute them in the skillet for about 2 minutes or until they change color. Then add 3 cups of water, parsley sprigs, peppercorns, and 2 smashed cloves of garlic, along with a ½ teaspoon of salt. Allow the stock to come to a boil, then lower the heat and let simmer for 15 minutes. Strain the stock through a mesh strainer, reserve 2 ¼ cups of the stock. If you have a little less than that, just add enough water to make 2 ¼ cups and stir to combine.

MARINATE: While the stock is simmering, add the shrimp, 1 tablespoon olive oil, lemon zest, red pepper flakes, half the garlic, and ½ teaspoon salt. Stir to combine; set aside for later.

COOK: Add the butter to the skillet and allow it to melt over medium heat. Stir in the orzo pasta and allow the orzo to toast for 3 minutes or until you can smell an almost nutty aroma. Then, stir in the remaining garlic and allow it to cook for 30 seconds. Carefully pour in the reserved shrimp stock and lemon juice, stir to combine, and kick up the heat to high for it to quickly come to a boil. Then, lower the heat to medium-high and allow the orzo to cook for 9-10 minutes or until most of the liquid is soaked up by the pasta. Nestle the shrimp in the orzo (so the shrimp touch the pan) in a single layer, place the asparagus on top, cover the dish and allow the orzo to continue cooking on the low setting for another 5-7 minutes or until the shrimp steam and cook through. Turn the heat off and allow the dish to just sit covered for a couple of minutes, so the flavors have a chance to mingle. Then, uncover the dish, stir to combine, sprinkle with parsley, and serve with lemon wedges to squeeze on top!

Garlicky Lemon Shrimp

lb shrimp (peeled, deveined, cleaned, raw)

olive oil spray

lemon pepper seasoning

light butter

parsley (chopped)

Pat the shrimp dry.

Add the shrimp to a bowl and add the lemon pepper seasoning, toss to coat.

Preheat a frying pan over medium high heat.

Spray the frying pan with olive oil spray.

Sear the shrimp on both sides, for about 5 minutes.

Mince the garlic.

If the pan seems dry, add another spray of olive oil.  (The shrimp will still be in the pan).

Add the garlic to the pan. Cook for 1 minute.

Add the lemon juice and chicken broth and bring to a boil.

Cook for 5 minutes.

Remove the pan from the heat and stir in the butter until melted.

Stir in the fresh chopped parsley. Taste for seasoning.

Wow! This was completely delish! I cut it down to one serving and used half the butter since I didn’t have the lower fat option. Still the flavor was incredible. I’m thinking about trying this with cut up chicken bites too. Half the family do not like shrimp, but I think lemon garlic would be good with chicken bites too!

This was a super fast meal to throw together. The sauce was yummy spooned over a potato mash paired with baccicia beans!!
