Southern Sweet Chocolate Pie

Preheat oven to 375 degrees F.

Combine sugar, cornstarch and salt; add eggs and vanilla and beat until smooth. Set aside until needed.

In a small saucepan, melt chocolate and butter over low heat; whisk until smooth. Remove from heat.

Gradually whisk evaporated milk into melted chocolate.

Blend chocolate mixture into sugar mixture until completely incorporated.

Pour into pie crust. Do not over fill. If there&#039;s too much filling, see notes for remaining.

Combine coconut and pecans; sprinkle over chocolate filling, covering the entire pie.

Bake for 35 to 50 minutes or until browned and puffed up. If the center of the pie is puffed up, the pie is done.  Be sure to drape the pie with foil about 20 minutes into cooking to prevent over-browning.

Let cool for a minimum of 4 hours before cutting to let the filling set up.

Blind Bake Pie crust and allow to cool completely.

To a medium sauce pan over medium heat, add the sugar, and milk and whisk well to combine. Bring mixture to a simmer, whisking frequently.

Meanwhile, add the egg yolks and cornstarch to a bowl and whisk until smooth.

Once the saucepan mixture is simmering, add a few spoonfuls of the hot liquid into the egg yolks and whisk to temper the eggs. Add a few more spoonfuls of the hot liquid into the egg yolks. Then slowly whisk the egg yolk mixture back into the saucepan. Whisk constantly until the mixture begins to thicken and comes to a very gently boil (big bubbles begin to break the surface).

Remove pan from the heat and whisk in the butter, chopped chocolate, and vanilla extract. Stir until completely smooth.

Pour filling into the cooled crust and smooth into an even layer. Place a piece of plastic wrap gently on top and refrigerate until filling is set, about 4–6 hours or overnight, if desired.

Chocolate Filling:

In a medium saucepan add brown sugar, granulated sugar, butter, egg yolks, and evaporated milk. Stir to combine and bring the mixture to a low boil over medium heat. Stir constantly for several minutes until the mixture begins to thicken.

Remove from heat and stir in vanilla, nuts and coconut. Allow to cool completely before layering it on the pie.

Preheat the oven to 325ºF and grease a 9-inch glass or ceramic pie plate.

In a large saucepan over medium low heat, combine the butter and sweeteners, whisking until the sweeteners are dissolved. Stir in the cream, vanilla, and cocoa powder, and whisk until the mixture is well combined and there are no lumps of cocoa powder.

Remove from heat and whisk in the eggs until well mixed, then stir in the coconut, pecans, and chocolate chips.

Spread the mixture in the prepared pie plate and bake 25 to 35 minutes, or until the pie is mostly set but still jiggles a little in the center.

Remove and let cool completely in the pan.

Place the Oreo cookies in a food processor and process until you have fine crumbs. (Do not remove the filing.) Add the melted butter and pulse a few times until fully combined.

Press

Press the Oreo mixture into a 9-inch deep dish pie dish. (I like to use a measuring cup with a flat bottom to press the crust into the bottom and sides of the dish.) Bake in the preheated oven for 10 minutes. Remove and let the crust cool completely.

Whisk

To make the filling, whisk together the egg yolks, sweetened condensed milk, and cornstarch in a medium pan. Whisk in the milk.

Cook

Set over low heat and cook, stirring often, until it starts to thicken. Once it starts to bubble and the mixture has thickened up, remove from the heat and adding the German chocolate, semi-sweet chocolate, butter, and vanilla. Stir until the mixture is smooth.

Refrigerate

Pour the filling into the cooled pie crust. Smooth the top with a spatula, the cover with plastic wrap, with the wrap touching the top of the filling. Refrigerate at least 4 hours, but preferably overnight.

To make the topping, mix together the brown sugar, cream, and butter in a medium saucepan. Cook over medium heat until the sugar has dissolved.

Place the egg yolks in a small bowl and whisk. Slowly whisk a small amount of the brown sugar mixture into the eggs, whisking constantly. Transfer it all back to the saucepan and continue to cook over medium heat, whisking constantly , until the mixture thickens.

Once thickened, remove from the heat and stir in the coconut, pecans, and vanilla.

Spread

Spread the topping over the chilled pie. Cover and return the pie to the refrigerator for 4 hours, or until cold and set.
