Gingerbread Cookies

c. (1 1/2 sticks) butter, softened

brown sugar

molasses

pure vanilla extract

c. all-purpose flour

ginger

baking soda

cinnamon

cloves

nutmeg

kosher salt

tsp. black pepper (optional)

Super delicious!! I left the dough in the fridge overnight and it really allowed the flavors to come together. Easy bake. I did about 8 minutes, flipping them around at the midpoint. Two thumbs up, we’ll bake again!

This was my first time trying this with my gf we started doing this at 4pm on Saturday then realized the directions said they had to go in fridge for 2-3 hours and she had to work at 7 so i took her to work and decided ill try to bake them myself. Welllllll it started off with me taking the dough out putting it all in a pan just to then realize i forgot to put the parchment paper or something down under the dough. Got mad ran to giant eagle since its 10 seconds from my house got back 5 minutes later to find out there was a reason it needed to be in the fridge for 2-3 hours cause now it was sticky and i couldnt form it. So i put it back in the fridge and went to my room called her and told her im done and she can do it when she comes back over. Now its monday and i said ill give it a second try since shes with her family. And i got it on the sheet made a make shift roller out of a can cut it out and now im about to throw it in the oven. This tasks takes alot of patience. P.S. also will be my first time even eating gingerbread men. Im 22

I made the dough ahead of time a couple days ago. I don’t own a hand mixer or a stand mixer so I just mixed with a whisk and a wooden spoon. These cookies turned out great! I found that 6 minutes was just enough time for baking them in my oven as it runs hotter than most. They are a hit! I love this recipe and I will be making them again! I also used vegetable oil instead of butter because the only butter I have is frozen.

I have never written a bad review before. I followed this recipe to the letter, left it to chill an extra hour (4 hours total) It was still SO sticky! I attempted to roll it out and it melted in to my counter. I had to use a metal spatula to remove it. No matter how much flour I added, it didn't help. I ended up just making rough circles and cooking those. I cooked them for 16 minutes and they kind of came out? I haven't tasted them yet, but this was super stressful! Definitely would not suggest.

The best trick to rolled cookies is to mix and put in refigerator overnite and roll the next day. These gingerbread cookies turned out great, very flavorful.

why doesn't it say when to put in the vanilla?

These cookies were really good. I was trying to find a recipe that was as good as Betty Crocker Gingerbread cookie packets that come out before Christmas, and this recipe was perfect. My kids loved the cookies!

First time making Gingerbread men and this recipe was excellent. Followed the directions exactly and they came out delicious I just finished eating one. They weren’t hard like others I have eaten I like a softer cookie and these were perfect. Thanks

The Gingerbread Cookie That's Not Afraid To Be Spicy

Perfectly spiced, these Gingerbread Cookies come together so easily and are great for decorating. Soft, chewy, but still crisp, these are going to be your new favorite holiday cookie!

flour ((360 grams))

ginger ((4 grams))

cinnamon ((2 grams))

baking soda ((6 grams))

nutmeg ((1 grams))

salt ((1 grams))

butter (170 grams) room temp)

brown sugar ((150 grams))

molasses ((118 milliliters))

egg (room temp)

vanilla extract ((5 milliliters))

lb confectioners sugar ((454 grams))

¼ tsp cream of tartar ((1 grams))

tsp vanilla ((5 milliliters))

water ((10-20 milliliters))

In a large bowl, combine flour, ginger, cinnamon, baking soda, nutmeg and salt.

Using a stand mixer fitted with a paddle attachment, cream butter, and brown sugar on medium. Mix until fluffy.

Add in the molasses, then the egg and vanilla and mix until combined. Scrape the bowl down and mix once more.

Add in flour gradually while mixing on low until a nice dough form until combined.

Divide dough into two portions and roll into disks. Cover with plastic wrap. 

Refrigerate for about 4 hours or overnight. This step is important because the dough gets soft quickly and really needs to be thoroughly chilled.

Preheat to 350 degrees F. Roll out chilled dough to about ¼-inch in thickness.

Cut out gingerbread people/ shapes with a cookie cutter. Carefully transfer to a baking sheet. 

Bake cookies for 10 minutes. Let cool.

For the Cookies:

Sift the powdered sugar and cream or tartar into a bowl then whisk together.

Add the egg white in an mix together.

Once combined, mix in a teaspoon of vanilla and then add water until desired consistency is reached. Transfer to a piping bag fitted with a small round tip or with the tip snipped off.

Pipe decorations onto the cooled cookies with the royal icing.

Attach sprinkles and or candies for added visual interest.

If you made any cookies with bend arms swap out the foil for peppermint balls.

Classic Gingerbread Cookies Recipe

Gingerbread Man Cookies are my favorite Christmas treat to decorate with my kids.&nbsp; &nbsp;These soft gingerbread cookies are perfect for preschool or kindergarten Christmas parties, and they taste delicious!

Gingerbread Man Cookies

all-purpose flour

dark brown sugar (, packed)

salt

Tablespoons butter (, room temperature, cut into 12 pieces)

molasses ((dark molasses))

Tablespoons milk

Tbs butter (, room temperature)

sugar

Add flour, brown sugar, baking soda, cinnamon, ginger, cloves and salt to a&nbsp;mixing bowl and mix.

Add the butter pieces and use a pastry blender to cut the butter in until the mixture resembles fine meal.

With a mixer running on low speed gradually add the molasses and milk and mix until combined, about 30 seconds.

Divide the dough in half, forming each into a ball. Wrap each in plastic wrap and refrigerate for 2 hours or overnight, or place in the freezer for about 20 minutes, until firm, if you’re in a hurry.

Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.

Remove one dough sheet from the fridge/freezer and place on the counter. Roll out the dough (use a little flour on your rolling pin if needed), until it’s about ½ inch thick. Cut gingerbread men and place them on prepared baking sheets.

Refrigerate the gingerbread men for 5 minutes (meanwhile you can roll out the other dough ball).

Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 11 minutes (depending on the size of your cookie cutter). Do not overbake!!

Remove the cookies to a wire rack. Allow to cool to room temperature before frosting.

Store gingerbread cookies in an airtight container with parchment paper between the layers. Freeze for up to 3 months.

Add butter, milk, and 1 cup of powdered sugar to a bowl.  Mix until smooth.  Add additional cup of powdered sugar and mix until smooth.  Add frosting to piping bag if desired.

Want to get all the flavor you can out of your gingerbread cookies? Make sure your spices are fresh and stored correctly. 
If your bottle of ground cloves or ginger has been in your pantry for years, it’s time for a change. 
Ground spices should not be kept for more than a year. If they have lost their potency in terms of smell and if their color has faded, you won’t get a ton of oomph out of them when it comes to baked goods. 
Make sure you write the date on your spices when you buy them. The best gift you can give yourself is to use fresh and flavorful spices that will bring out the best in your baked goods.

How Do You Make Gingerbread Cookies Spicier?

Freezing these Gingerbread Men is easy to do and means you will always have fresh tasting holiday cookies on hand for gifts or simply to enjoy whenever you need a taste of the holidays.
For the absolute freshest flavor, freeze your cookie dough unbaked, then bake when needed. Here’s how:
To freeze cookie dough cutouts, place them in a single layer on a waxed paper-lined cookie sheet. Cover and freeze for 20 to 30 minutes or until firm. Then quickly transfer to an airtight container and line each layer of raw cookies with waxed paper. To thaw cookie dough cutouts, immediately transfer frozen shapes to baking sheet. Let stand 15 minutes to thaw. Then, bake as the recipe directs. Frozen cookie cutouts will keep for 3 months in the freezer. 
Baked cookies can also be frozen in airtight containers, in between layers of wax or parchment paper and kept in the freezer for up to 2 months. Let thaw at room temperature. 
Frosted cookies don’t freeze as well. The condensation that occurs during the thawing process can result in frosting that runs or bleeds onto the cookies. For that reason, it’s best to freeze the cookies unfrosted and decorate after they have been thawed out.

Can You Freeze Gingerbread?

When your cookie dough is already a dark brown going into the oven, it can be hard to know when they have cooked enough and are ready to come out. 
Because cookies recipes typically tell you your cookies are done when lightly browned, Gingerbread Men can provide an extra level of difficulty, as it can be impossible to tell when the cookie is lightly browned. 
For this reason, look for these cookies to be puffy all over and set around the edges. 
They may seem too soft when you first remove them from the oven, but they will become firmer as they cool on a cooling rack.

How Will I know the Cookies Are Fully Cooked?

In large bowl, beat granulated sugar, butter and molasses with electric mixer on medium speed, or mix with spoon, until well mixed. Beat in water and egg until blended.

Stir in flour, baking soda, cinnamon, ginger, salt, cardamom and cloves. Cover and refrigerate about 1 hour or until firm.

Heat oven to 350°F. Roll 1/3 of dough at a time on floured surface to 1/8-inch thickness. (Keep remaining dough refrigerated until ready to roll.) Cut with floured 2 1/2-inch gingerbread boy or girl cookie cutters. On ungreased cookie sheets, place cutouts 1 inch apart. 

Decorate with currants or candies; sprinkle with colored sugar, if desired.

Bake 6 to 7 minutes or until set. Remove from cookie sheet to cooling rack; cool.

If desired, spoon frosting into decorating bag fitted with round tip. Pipe frosting on cookies. Decorate with currants or assorted candies.
