Simple &amp; delicious gingerbread waffles - vegan &amp; gluten free! The best breakfast treat in the Christmas time (yes, breakfast!). I hope you enjoy this recipe as much as I did!

Gingerbread Waffles (Vegan &amp; Gluten-free)

oat flour

tsp baking soda

tsp baking powder

ginger

cinnamon

nutmeg

cloves

tbsp ground flaxseeds

maple syrup

300 ml soy milk

water

Combine all dry ingredients in a bowl, including the spices and stir to combine.

Create a well in-midst the dry ingredients and pour in the maple syrup and plant milk. Stir until combined and set aside for 10 minutes.

Pour 200ml water into the mix and blend to combine. Carefully grease your waffle iron (I use coconut oil) and pour the waffle batter in, leaving about 1 inch on the outer edge as the waffles will expand.

Cook until the waffle only lightly steams, then carefully open and remove it from the waffle maker.

white whole wheat flour, (or unbleached, all-purpose

tbsp baking powder

tsp nutmeg

tsp salt

eggs

coconut oil

tbsp molasses

tsp vanilla extract

milk (regular, almond, coconut, hemp, etc.)

Prep: Heat waffle iron on medium.

Whisk: In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, cloves and salt.

Mix: In a medium bowl, whisk together the eggs, coconut oil or butter, molasses, maple syrup, vanilla and 1 cup of milk.

Blend: Pour the wet ingredients into the dry ingredients and whisk until smooth. If your batter is too thick, add more milk in 1/4 cup increments until the batter resembles cake batter. I have found that the gluten-free flour needs more milk than the white whole wheat flour.

Pour: Pour 1/4 cup of waffle batter onto each waffle mold and cook according to your waffle irons directions.

Eat: Let cool slightly and serve.

What a great recipe this is a recipe which anyone can eat and they will love it. These gingerbread waffles are very delicious and easy to make.

Question though, everytime I bake with melted coconut oil it gardens into lumps when I add all the other liquids. What am I doing wrong?

all-purpose flour ((300 grams))

baking powder

baking soda

salt

milk (room temperature (360 milliliters))

unsalted butter (melted (113 grams))

⅓ cup unsulphured molasses ((80 milliliters))

eggs (room temperature)

dark brown sugar

Preheat a waffle iron.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and spices.

In a separate bowl, whisk together the milk, melted butter, molasses, eggs, and brown sugar until well combined. Stir the wet mixture into the dry mixture until just combined.

Grease the hot waffle iron with more melted butter or cooking spray. Drop about ½ cup of batter into the center of the waffle iron. (The amount will depend on the size waffle maker you are using, so adjust accordingly.)

Cook until the waffle is golden brown and crispy, 3 to 5 minutes or according to your waffle maker instructions. Place on a wire rack to keep the waffles crispy. (You can store them in a warm, 250°F, degree oven to keep warm while cooking the other waffles if you’d like.) Serve hot with butter and maple syrup.
