Glazed Carrots are a classic, comforting, and fan-favorite side dish for a reason! This easy and quick recipe produces perfectly tender carrots that are enrobed in a velvety brown sugar and butter glaze. Simple side dish perfection!

Glazed Carrots

light brown sugar ((73 grams))

Place the carrots in a large skillet and add enough water so all the pieces are submerged by about half an inch. Place over medium heat and bring to a simmer. Cook for 6 to 8 minutes or until fork tender, then drain.

Add the butter, sugar, salt, and pepper to the same skillet. Place over medium-low heat and stir until the butter is melted. Stir in the carrots and toss to coat.

Increase temperature to medium-high and cook, stirring occasionally, until the glaze thickens, about 5 minutes. Garnish with minced parsley and serve warm.

Honey Glazed Carrots Recipe

ginger (freshly grated, optional)

black pepper

rosemary (finely minced)

thyme (to garnish (optional))

Preheat the oven. Preheat oven to 400℉ (200℃). Line a large baking sheet with parchment paper and set aside.

Prepare the carrots. I purchased pre-packaged petit carrots from Trader Joe&#39;s, but any carrots will work. Simply wash, peel, and dry your carrots. If your carrots are thick, I suggest slicing them in half lengthwise so they cook evenly. Transfer to a large mixing bowl.

Make the glaze. In a small bowl whisk together the olive oil, honey, ginger, salt, pepper, and fresh rosemary.

Coat the carrots. Pout the glaze over the carrots and gently toss until all of the carrots are evenly coated. Spread the glazed carrots evenly across the prepared baking sheet.

Roast. Roast the carrots for approximately 20-25 minutes, or until fork tender and caramelized around the edges. Remove from the oven, drizzle with additional honey, and sprinkle with fresh thyme, if desired. Enjoy!
