This lemon pound cake is moist and tender. It's bursting with lemon flavor and covered in a sweet and tangy lemon glaze.

Lemon Pound Cake

(190 grams) cups all-purpose flour

1/4 tsp table salt

1/4 tsp baking soda

1/4 tsp baking powder

1/2 cup (114 grams) unsalted butter, room temperature

1 cup (200 grams) granulated sugar

3 large eggs, room temperature

2 Tbsp lemon zest (from about 2 lemons)

1 Tbsp lemon juice

2 tsp vanilla extract

1/3 cup sour cream, room temperature

(125 grams) powdered sugar

Preheat oven to 325F and grease an 8&#215;5&#8243; or 9X5&#8243; loaf pan.

In a medium bowl, toss together the flour, baking powder, baking soda, and salt. Set aside.

Using an electric handheld or stand mixer fitted with the paddle attachment, cream the butter and granulated sugar on medium speed for about 3 minutes until light and fluffy. Scrape down the sides and up the bottom of the bowl as needed.

Add in the eggs one at a time, mixing well in between. Again, scrape as needed. Then mix in the lemon juice, lemon zest, sour cream, and vanilla extract. The mixture will look curdled, but that&#8217;s ok, it will come together when you add in the dry ingredients.

Stir in the dry ingredients in two equal parts until just combined. Spoon the batter into the prepared loaf pan.

Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before glazing.

To prepare the glaze: whisk all the ingredients together until smooth and pour over the cake. Slice and serve.

I have been baking a number of your recipes since the start of the lockdown in England. I have enjoyed them all but this one is absolutely delicious. Thank you very much. I am sure I will make it often.

Hey I’m in the UK and we don’t have all purpose flour over here. Should I use plain flour or self raising flour instead for this recipe? 

This is my new favorite! Makes up easily and is so worth the wait. Coffee never had it so good!

Glazed cranberry lemon loaf is made up of soft and moist lemon bread, filled with cranberries, and topped with a lemon glaze.

Glazed Cranberry Lemon Loaf

C salted butter (at room temperature)

C white sugar

eggs (at room temperature)

lemon

lemon juice

tsp vanilla extract

& 1/2 C all purpose flour

tsp salt

tsp baking soda

tsp baking powder

sour cream (at room temperature)

cranberries

C powdered suga

Preheat oven to 325 F. Line a loaf pan with parchment paper.

In a large bowl or a stand mixer with the paddle attachment on beat together butter and sugar until light and fluffy (usually take about 3 minutes).

Add eggs one at a time and mix in completely before adding the next egg. You want this cake to be light and fluffy so after all eggs are added continue to mix for another 2 minutes.

Stir in the lemon zest, lemon juice, and vanilla extract.

In a separate bowl whisk together flour, salt, baking soda, and baking powder.

While continue to mix, add in 1/3 of the dry ingredients, half of the sour cream, another 1/3 of the dry ingredients, the rest of the sour cream, and finally the last of the dry ingredients.

Fold in the cranberries.

Add batter to your lined loaf pan and bake for 1 hour or until a toothpick inserted into the centre comes out clean.

Cool in the pan for 10 minutes before moving to a wire rack to cool completely.

Loaf Batter

In a medium sized bowl add lemon juice, and powdered sugar. Mix until smooth and no lumps remain. If the mixture is too thick you can add a little more lemon juice.
