Sheet Pan Trader Joe's Cauliflower Gnocchi with Chicken Sausage & Broccoli

Italian chicken sausage

cauliflower gnocchi (DEFROSTED)

broccoli crowns

cooking spray

tsp garlic salt

marinara sauce

tbsp parmesan cheese

Preheat oven to 400F and line a baking sheet with aluminum foil. Spray with cooking oil.&nbsp;&nbsp;

Spread cauliflower gnocchi, chicken sausage, and broccoli accross baking sheet evenly.&nbsp; Spray the top of the gnocchi and broccoli with cooking spray, sprinkle with garlic salt.&nbsp;&nbsp;

Bake for 15 minutes and then remove the pan from the oven.&nbsp; Remove the broccoli and chicken sausage from the pan.&nbsp; Toss the gnocchi individually (using a spatula to turn each one, so they don't stick) and bake an additional 15 minutes.&nbsp;&nbsp;

Divide mixture evenly among three servings and top each one with 1/2 cup marinara sauce and one tablespoon parmesan cheese.&nbsp;&nbsp;

Potato Gnocchi in Mushroom Cream Sauce with pillowy soft gluten-free gnocchi and dairy-free mushroom sauce is a fantastic one pot meal!

Potato Gnocchi With Mushroom Cream Sauce (gluten-free)

oz gluten-free potato gnocchi (or Trader Joe’s cauliflower gnocchi)

0.5 oz garlic (finely chopped)

1.5 oz shallot (finely chopped)

mushrooms

tbsp olive oil

tbsp ghee

chicken stock

califia dairy-free creamer (unsweetened)

yeast

baby arugula (optional)

lemon

Coarse sea salt (to taste)

black pepper (to taste)

Paleo parmesan cheese (optional)

Plan

First take a look how much time it needs to boil the gnocchi to al dente. You want to plan the timing well so that you can combine the gnocchi and the cream sauce at the perfect timing.

Prep

Bring a pot of water to boil for the gnocchi. Prepare the garlic and shallot in one bowl. Slice or use your hands to separate the mushrooms.

Boil

Boil the gnocchi by following the package instructions to al dente texture. Drain the gnocchi and don’t rinse them in water.

Saute

Preheat a large skillet over medium low heat until it feels warm when you place your palm near the surface, about 2-3 inches away. Melt the olive oil and ghee then add the garlic and shallot with a pinch of salt. Saute over medium heat for 10 seconds.

Add the mushrooms. Spread them out in a single layer. Cook, uncovered and without disturbing, until the bottom sides are in light brown color, about 5 minutes. Season with 2 pinches of salt and black pepper.  Then cook the flip side for 1 additional minute.

Add the stock, cream, and the yeast. Stir with a wooden spoon for about 1 minute.

Add the boiled gnocchi. Keep stirring and the sauce should turn thicker in about 1 minute.

Season

Turn off the heat. Stir-in baby arugula until it wilts slightly. Taste and adjust with salt and pepper.

Garnish

Transfer to a serving plate. Drizzle with a dash of olive oi.

Serve

Serve with lemon wedges on the side. Drizzle before serving. Sprinkle with paleo parmesan cheese, if using. Serve warm.

This homemade cauliflower gnocchi is a copycat version of one of my favorite Trader Joe&#39;s products, ever! It&#39;s such an easy, delicious, and versatile meal. Serve with your favorite pasta sauce, or on it&#39;s own with a protein!

Homemade Cauliflower Gnocchi (Copycat Trader Joe's)

lbs fresh cauliflower florets (1 head cauliflower)

cassava flour (plus more for rolling surface)

tsp sea salt

olive oil (for sautéing)

In a large pot, bring water to a boil. Add the cleaned cauliflower florets and boil for about 20 minutes until fork tender.

Drain the water and add the cooked cauliflower to a clean dish towel. Let it cool for about 10 minutes or until it&#39;s no longer hot to the touch.

Using the clean dish towel, squeeze out ALL water possible from the cauliflower. Use those muscles!

Once you&#39;ve squeezed out all the water you can, add that cauliflower to a large food processor along with about half the cassava flour. Pulse until a dough forms.

Add the remaining cassava flour and sea salt and pulse once again. *If your food processor struggles, remove the dough ball and knead in the remaining cassava flour by hand.

Transfer the dough ball to a clean, floured surface. Once it&#39;s kneaded into a ball, quarter the dough and roll in skinny &quot;snakes&quot; about 1/2 an inch thick.

Once you have your &quot;snake&quot; pieces rolled, cut into small 1 inch pieces.

Heat your saute pan on medium heat with a tablespoon olive oil. Add the gnocchi leaving some room in between each piece. Cook each side for about 2 minutes or until golden brown.

Add about 1/4 cup water and a lid to the pan to let the gnocchi pieces steam for about 2 more minutes. Remove the gnocchi, add your favorite sauce, and enjoy!

Easy 1-Pot Marinara Sauce

Preheat your oven to 350 degrees F (176 C) and place the potatoes directly onto the oven’s middle rack. Bake for 1 hour 25 minutes - 1 hour 30 minutes, until they are easily pierced with a knife and completely cooked through.

Let the potatoes cool for 10-15 minutes or until they are cool enough to handle.

Meanwhile lightly dust a baking sheet with flour and set aside. Begin bringing a large pot of water to a boil.

Once the potatoes are cool enough to handle, cut them in half and remove the filling, ensuring no skin gets mixed in. Place the filling into a medium mixing bowl. Add the salt and mash very well with a fork — you want to try to get the potatoes super smooth at this point. Alternatively, pass them through a potato ricer. Once smashed, let the potatoes cool another 5-8 minutes. They should be cool enough to avoid cooking the egg.

Once the potatoes are quite cool, add the egg to the potatoes, gently folding it in with your fork. Finally, fold in about half of the flour and continue working it in until the flour is completely absorbed. Finish by folding in the rest of the flour. Use your hands to bring the dough together into a ball. Try not to knead it — you want to work it as little as possible to keep the pasta light.

Divide the dough ball into 4 quarters. Work with one at a time, keeping the others covered with a clean kitchen towel.

Shape the dough into a tube and roll it out into a long snake about 1/2 inch in diameter. Use a knife to cut the snake into 1-inch pieces. Roll each piece onto the back of a fork to create the iconic gnocchi ridges and place each gnocchi onto your lightly dusted baking sheet. Repeat this step with the other 3 quarters.

Once all of your gnocchi are shaped, gently place them into the boiling water and boil for 3-4 minutes. They don’t need long to cook through. Once done, use a strainer to remove the gnocchi from the water. Place them into your favorite sauce (we like pesto, marinara, or bechamel) and enjoy. They&#39;re also delicious with crispy sage, red pepper flakes, (dairy-free) butter, and walnuts. Leftovers can be refrigerated for up to 2-3 days.

These are best served fresh but can be frozen before boiling. To cook frozen gnocchi, simply place the gnocchi straight from the freezer into the boiling water. They might need an extra minute to fully cook!

Cheesy Gnocchi Florentine is a quick, easy, and delicious weeknight meal! This gluten free dinner recipe is made in one skillet, in 30 minutes.

Cheesy Gnocchi Florentine

sweet Italian sausage

shallot, chopped

garlic, pressed

Italian seasoning

tomatoes (see notes)

half & half

gluten free gnocchi (see notes)

baby spinach, roughly chopped

mozzarella cheese

chicken broth (optional)

Heat a large, 12” skillet over medium-high heat then add Italian sausage and shallots and brown. Add garlic and Italian seasoning then saute for 1-2 minutes or until garlic is very fragrant. Add canned tomatoes, half &amp; half, and gluten free gnocchi then bring mixture to a simmer. Turn heat down to medium then continue simmering until gnocchi are nearly tender, 7-8 minutes, stirring occasionally. Add baby spinach then stir to combine and continue cooking until spinach is wilted and gnocchi are tender, 1-2 minutes, adding splashes of chicken broth if necessary if sauce gets too thick. Remove skillet from heat then sprinkle in mozzarella cheese and stir to combine. Serve immediately.

White bean gnocchi with lamb ragù

tins white cannellini beans

Drain the beans, then pulse in a food processor with the flour, egg, 1 tbsp of the oil and 1 tsp salt to combine. Wrap in cling film and chill for 15 minutes.

Finely chop the onion and garlic. Heat 2 tbsp oil in a pan on a medium heat (see tip). Add the onion and cook for 3-4 minutes until soft. Add the garlic and tomato purée and cook for 1 minute. Turn the hob to medium-high, add the mince and brown for 5 minutes. Chop the oregano, then add with the tomatoes and 375ml water. Season and simmer for 20-30 minutes until thick.

Bring a large pan of salted water to the boil. Roll the chilled dough into 2 thin logs and cut into 3cm lengths. Boil, in batches, for 5 minutes, remove with a slotted spoon and toss with the ragù.

Tuscan Vegan Gnocchi

Add the garlic and olive oil to a skillet and saute over low heat for a few minutes until just slightly golden brown.

Add in the white wine and simmer until it has reduced by half.

Add in the sundried tomatoes, italian seasoning, oregano, thyme, salt, pepper and red pepper flakes. Whisk together,

Bring to a very low boil, then add in the gnocchi. Keep heat low and let simmer in the sauce until the gnocchi is cooked through, stirring occasionally to prevent burning.

add more broth

Depending on the type and brand of gnocchi you used, you may need to add in a splash more broth so the gnocchi can cook fully.

add in kale, serve

Give everything a good stir, then mix in the kale and stir until wilted. Stir through the vegan parm, then garnish with fresh basil. Enjoy!

So good and quick will be making this often. I followed the recipe but, added some walnut/ mushroom meat I made and y’all got a winner right here. I love being vegan trying out different foods so next time I’ll remember the cheese LOL. Thanks for sharing

Loved it!! I made it twice, the 2nd time I used 2 packages of cauliflower gnocchi &amp; omitted the salt. It worked great! I think because my cashew cream had salt, the 1st time around was a little too salty. Will be adding this into my regular rotation!

Another incredible recipe from EWC.  I made the meal as is, no substitutions or deviations.  The cashew cream recipe was easy and came together quickly.  Requires almost no chopping prep (just garlic, tomatoes, kale... and basil if you want), very few dishes, and one pot to cook.  A lovely weeknight meal.
