I can’t rate the exact recipe since I only had 1/4 cup pan drippings and changed the broth to chicken as the drippings were from roasted chicken. I also added 1/8 tsp more of the xanthan per another review. It tasted very good! Even my picky adult daughter asked me to always make it this way. 
A tip for the XANTHAN GUM: Mix it with the Worcester, garlic, salt, pepper and add some of the hot drippings from the pan. (Use a glass measuring cup and just scoop the liquid)  Whisk immediately. Continue adding more hot liquid. It’ll become paste. When it’s no longer clumpy add to the pan and continue to whisk away.

This recipe was excellent! The only modification was I cut the recipe in half, used bacon drippings, and added a little garlic salt/parsley mix. Yummy! In the end, I did also add another shake of xanthem gum to get the thickness right. As a gravy lover, this recipe will be a staple.

Had turkey and keto gravy tonight and I am happy 😊  I thought I was running out of good ideas but I keep finding more substitutions and being satisfied with my keto meal's.

In a medium saucepan bring Beef Stock to a boil. Reduce heat to medium-low and whisk in the beef base, Worcestershire sauce, garlic, salt, and pepper.

If desired. thicken into a rich gravy by adding corn starch into 1/4 water and stirring into a slurry. Pour into the boiling Beef Stock to thicken. Corn starch needs to heat to a boil to activate the thickening agent.

Add the dried mushrooms to a large pot or saucepan with the vegetable broth, bring it to a boil, allow it to cook for about 1 minute before turning off the heat and setting it aside. Meanwhile, finely dice the onion and mince the garlic and fresh herbs.If you’re using fresh mushrooms, sauté them in a skillet to remove excess liquid, and they begin to brown (don’t overcrowd the pan).

Heat the oil in a large skillet over medium heat. Once hot, add the onion and sauté for 2-3 minutes. Then, add the garlic, herbs, and seasonings, and sauté for another minute, stirring frequently.

Meanwhile, in a small bowl, combine the plant-based milk and cornstarch and stir/whisk until lump-free.

Next, deglaze the skillet with the soy sauce and red wine (optional) while stirring to scrape up any bits from the bottom of the pan.

Pour in the mushroom and broth mixture and stir to combine. Then stir in the cornstarch milk mixture and let the gravy simmer and thicken for about 5 minutes.The longer you leave it to simmer, the thicker and more flavorful the vegan mushroom sauce/ gravy will become.

Then, either use an immersion blender directly in the pot or transfer it to a stand blender and blend until smooth.If the gravy is too thick, add more vegetable broth. If it’s too thin, add more cornstarch (in a slurry) and heat on the stovetop until thickened, stirring constantly.

Finally, taste and adjust any of the seasonings and enjoy over mashed potatoes, vegan meatloaf, vegan meatballs, etc.

Warm

In a heavy-bottom saucepan, whisk together the flour, nutritional yeast, and thyme. Place the pan over medium-low heat, and while whisking, drizzle in the olive oil. Whisk until smooth, and then continue to whisk and cook for about 30 seconds or until glossy and hot.

Simmer

Add the salt and pepper. While whisking, slowly pour in the broth and water. The gravy may look clumpy for a moment but will smooth out as you continue to whisk. Keep stirring and cook until hot and thickened, 2-3 minutes. Taste for seasoning.

Serve

Serve hot or allow to cool completely before storing in the refrigerator.
