Keto Key Lime Pie

Almond Meal

Golden Flax Meal

Swerve

Butter (melted)

Eggs

Sugar-free sweetened condensed milk

Heavy Cream

Lime

Limes (zest only)

fluid ounces Heavy Cream

Preheat fan forced oven to 170C/340F.

Combine almond meal, flax meal and Swerve and mix well.

Add the melted butter and mix well.

Pour mixture into the base of a 9in spring form pan and press into the base and at least 1in up the sides.

Bake the crust for 12 minutes, or until golden and firm. Set aside to cool.

Base

Reduce the oven temperature to 150C/300F.

Whisk together the eggs and sugar free sweetened condensed milk in a stand mixer on medium speed.

Drop the speed to low and slowly pour in the lime juice, and then the cream and the lime zest.

Pour the mixture into the cooled base and bake in the oven for 35-40 minutes, until there is only a slight wobble in the center.

Leave the pie at room temperature for 20 minutes to rest before placing in the fridge for at least 2 hours to cool.

Slice into 16 pieces and enjoy. We recommend serving it with a dollop of softly whipped cream.

Filling

Whip cream and spread over the top of the cooled pie.

Keto Key Lime Pie Recipe - The BEST Low-Carb Sugar Free Version Around (Delicious)

A delicious low carb chayote squash mock apple pie that tastes very close to the real thing! Enjoy this fantastic pie without guilt. It's gluten-free too!

Chayote Squash Mock Apple Pie

butter (melted)

almond flour

coconut flour

eggs

whole psyllium husks

salt

chayote squash

low carb sugar substitute

cinnamon

ginger

nutmeg

xanthan gum

lemon juice

apple extract (optional)

butter (cut in small pieces)

sugar

Mix crust ingredients to form dough.

Separate into two dough balls.

Roll each crust ball out into pie crust.

Transfer one crust to 9 inch pie dish. Smooth out any cracks.

Reserve remaining crust for pie top.

Crust

Peel chayote and cut into slices.

Boil sliced chayote until fork tender. Drain. Return to pot.

Add cinnamon, ginger, nutmeg, sweetener, xanthan gum, lemon juice, and apple extract to cooked chayote squash.

Pour chayote mixture into prepared pie crust. Dot filling with butter.

Cover filling with reserved pie crust.

Flute edges of pie crust together and cut slits on pie top.

Brush egg on top crust and sprinkle with additional sweetener, if desired.

Bake at 375°F for 30-35 minutes (I took mine out after 30 minutes).

Gluten-Free Pumpkin Pie! A crowd-pleasing holiday favorite made from scratch with a flaky gluten-free pie crust. Thanksgiving isn’t complete without it!

Gluten-Free Pumpkin Pie (with Homemade Crust)

butter ((1 stick))

(ice water)

sour cream

white vinegar or rice vinegar

gluten-free 1:1 baking flour (180 grams)

cloves

15 pumpkin

(1 can) evaporated milk (or 1 cup full-fat coconut milk)

Cut the butter into small 1/4-inch pieces and freeze for 10-15 minutes.

Combine the ice water, sour cream, and vinegar in a small bowl. Whisk until smooth and set aside.

Process the flour, sugar and salt in the bowl of a food processor until combined. Scatted the butter over top and pulse until the butter is the size of large peas, about 10 pulses.

Add the sour cream mixture and pulse until the mixture begins to clump around the blade, about 10 pulses.

Turn the dough out onto a piece of plastic wrap. Gather into a a flat disc and wrap tightly in the plastic wrap. Refrigerate for 1 hour or up to 2 days.

If you refrigerated the dough longer than 1 hour, let the dough sit at room temperature for 15 minutes before rolling. Roll the pie crust out between 2 large pieces of plastic wrap, to ¼ inch thickness.

After rolling, remove the top piece of plastic wrap and flip into a 9-inch pie plate. Gently ease the dough into the edges of the pan before removing the 2nd piece of plastic wrap. Trim any excess edges with scissors and shape the edges as desired.

Wrap the shaped pie crust loosely in plastic and place in the freezer for 15 minutes or up to 1 hour until chilled and firm.

For the Crust:

Preheat the oven to 425 F.

In a medium bowl, whisk together the sugar, cinnamon, ginger, cloves and salt. Whisk in the remaining ingredients until smooth.

Pour filling into the prepared pie shell - pouring any extra filling into ramekins if needed. Bake for 15 minutes. Reduce the heat to 350 F and bake for another 40-50 minutes until the custard is set.

Cool on a wire rack for 2 hours. Cover and refrigerate for up to 2 days. Serve chilled with whipped cream!

FINALLY, a gluten free pie crust that is Tender, Flaky, &amp; doesn&#x27;t fall apart! I&#x27;ll walk you through this easy, fail-proof recipe for the perfect pie crust!

Gluten Free Pie Crust

butter

shortening (I used spectrum)

butter-flavored Crisco shortening

In bowl of stand mixer (see notes for other options), combine cold butter and shortenings. Mix on medium speed for 30 seconds. It should be fairly creamy with pieces of butter throughout.

Don't expect the dough to be smooth and solid like cookie dough, it should be a little choppy because you don't want to over-mix it. See the step-by-step pictures in the post for reference. Using the gluten free pie crust recipe, roll one half of the dough and place it into a 9&quot; pie plate.

Prepare pie crust

Preheat oven to 375 F.

In a small bowl, mix together the granulated sugar, brown sugar, flour mix and spices. Set aside.

In a large bowl, mix the apples with the lemon juice.

Add the sugar mixture and toss to fully coat the apples.

Pour apples into pie crust. Dot with small, 1/4 inch cubes of vegan butter.

Roll remaining crust into a 10-11 inch circle and place on top of the apples and butter.

Seal the edges. Cut 3 slits in the top of the crust.

Brush crust with beaten egg white. Sprinkle with additional cinnamon-sugar mixture.

Form pieces of foil around the edges of the pie. Bake for 20 minutes.

Remove the foil, bake for another 25 minutes. Serve warm.

How to Make Gluten Free & Dairy Free Apple Pie

Using up leftover Beef Bolognese Sauce has never been tastier! We’ve thrown it into a tasty Parmesan Crust and created a Low Carb Spaghetti Bolognese Pie.

Keto Bolognese Pie - With Low Carb Crust - Saucy &amp; Rich!

Parmesan Pastry Crust

Low Carb Beef Bolognese Sauce (chilled)

Shirataki Spaghetti

Parmesan cheese (grated)

Cheddar Cheese (shredded)

Preheat your oven to 170C/340F.

Spoon the Low Carb Beef Bolognese Sauce into the Parmesan Pastry Crust. Set aside.

Prepare the shirataki spaghetti according to the packet directions and drain well.

Place a nonstick frying pan over medium-high heat and add the drained noodles. Dry fry for 3-5 minutes.

Top the Bolognese with the sauteed spaghetti and sprinkle over the Parmesan and Cheddar cheeses.

Bake in the oven for 20-25 minutes, until the cheese is melted and browned. If the crust begins to brown too quickly, cover with foil.

Cut into 8 slices and serve.

This custard-based pie is made with apple butter and topped with a layer of cinnamon sugar - all baked in a flaky gluten free pie crust!

Cinnamon Sugar Apple Butter Pie

tbsp sugar

tsp salt

(220 grams) unsalted butter, cold and cubed (European style preferred)

(60 grams) sour cream

apple butter

eggs, divided

(50 grams) dark brown sugar, packed

tbsp Bob’s Red Mill 1-to-1 Gluten Free Baking Flour

condensed milk

vanilla

Homemade whipped cream

In a large bowl, whisk together the gluten free flour, sugar, and salt.

To the bowl, add the cubed butter and toss to coat the cubes in flour.

Using your fingers, two forks, or a pastry cutter, work the butter into the flour until the butter is evenly dispersed into small pea sized lumps. If the butter starts to melt, place the bowl into the refrigerator to chill for 30 minutes before continuing.

Pour in the 1/4 cup of ice water and stir to evenly hydrate. Then mix in the sour cream.

If the dough looks too dry and crumbly, try working it together with your hands. If it&#8217;s easily able to form into a large mass, it&#8217;s ready. If it&#8217;s still too crumbly, mix in 1 tbsp of water at a time until it&#8217;s properly hydrated.

Split the dough into two pieces, one that&#8217;s slightly larger than the other. One will be for the bottom crust and the other will be for the pie leaves on top.

Place the two pieces of dough onto two separate sheets of plastic wrap. Form into a 1-inch thick disk and wrap tightly. Chill for at least 1 hour.

After 1 hour, remove the larger piece of the pie dough and let it sit at room temperature for about 10 minutes. Then, roll it out onto a well-floured surface using the gluten free flour.

As you roll, continue to flour the surface underneath. Do this more often in the beginning stages as it&#8217;s easy to move around the dough when it&#8217;s more compact. Continuous flouring early on will prevent the pie dough from sticking to the surface when it comes time to transfer it to the pie dish.

It may crack in a few places, so I like to switch off between rolling the dough and pushing it into shape using my fingers.

Once it&#8217;s rolled out to a diameter that&#8217;s about an inch larger than your pie dish, carefully roll the pie dough onto your rolling pin and then roll it back into the pie dish. Carefully lift the edges and press the pie dough into the sides of the dish. Use your fingers to patch up any cracks.

Tuck under any excess overhang and crimp the edges.

Take 1 egg allotted for the pie filling and separate the egg white and the yolk. Save the yolk for the filling and use the egg white to brush the bottom and sides of the pie dough. This will create a barrier between the pie filling and the pie dough, so the bottom will not turn soggy.

Freeze the pie shell until the egg white is frozen solid (about 15 minutes). While it freezes, preheat the oven to 400F and roll out the second half of dough.

Press out the leaves using cookie cutters (I used these) and transfer to a small baking sheet lined with parchment paper. Place the pan in the refrigerator.

Once frozen, tear off a square sheet of parchment paper that&#8217;s a bit larger than the pie dish. Wrinkle it up into a ball and then open the sheet (it&#8217;s easier to mold into the pie shell when it&#8217;s wrinkled). Place into the pie shell and fill with pie weights or dry beans (see picture in post for reference).

Bake the shell and leaves for 15 minutes. Then remove the pie weights and parchment paper and bake for another 5-8 minutes, or until the center no longer looks soft and raw. If the leaves are golden brown by the 15 minute mark, you can remove those from the oven. If not, bake for another 5 minutes with the pie shell.

Make the cinnamon sugar topping and toss to coat the warm pie leaves. Reserve the rest of the mixture for the pie filling.

Allow the pie shell to cool while you make the pie filling.

In a large bowl, whisk together the apple butter, 2 large eggs + 1 egg yolk, and sugar.

Finally whisk in the sweetened condensed milk and vanilla.

Pour the filling into the pie shell and top the rest of the cinnamon sugar mixture.

Bake at 400F for 10 minutes. Then reduce to 350F and bake for 30-40 minutes.

Allow the pie to cool at room temperature for 30 minutes, then transfer to the refrigerator to chill uncovered for at least 2 hours to set. It can also be left overnight.

Once it&#8217;s ready, top with whipped cream and enjoy!
