A stellar 30 minute meal (with our 2g net carb tortillas included!!). These keto quesadillas are bound to become a low carb favorite... guaranteed!

Gluten Free & Keto Quesadillas (With Our Famous Tortillas!)

(15 minute!) keto tortillas

tortilla press (optional (but highly suggested!))

cheese

pickled jalapeños (sliced (optional))

steak (or chicken!) (sliced (optional))

pico de gallo salsa

salsa verde (or roja!)

Make a batch of our keto tortillas!

Heat up a skillet (preferably) or pan over medium heat. You can test the heat by sprinkling a few water droplets, if the drops evaporate immediately your pan is too hot. The droplets should ‘run’ through the skillet.

Reheat your tortillas briefly (think just 3-5 seconds on each side), to make them pliable again before adding in the fillings. Now, you can either do individual quesadillas (i.e. add filling of choice and just fold them up!), or use two tortillas to layer (my choice when adding extra things such as steak!).

Lower heat to low, add the assembled quesadillas back to the skillet, cover with a lid and flip them as soon as they begin to brown. Your quesadillas are done once all the cheese is nice and melty!

Serve right away (!!) with salsa of choice.

These 15 Minute Black Bean and Corn Quesadillas are so perfect for a quick weeknight dinner! They come together incredibly quick and are so flavourful!

15 Minute Black Bean and Corn Quesadillas

tortillas (8-inch (use corn tortillas

corn (freshly cooked or canned and rinsed)

tomatoes (diced)

black beans (freshly cooked or canned and rinsed)

jalapeño (finely diced)

cumin

paprika

chili powder

chopped parsley (finely chopped)

vegan shredded cheese

parsley (for garnish)

vegan sour cream

In a bowl, mix together the corn, tomatoes, black bean, parsley, cumin, paprika, chili powder and jalapeños.

Place the two tortillas down on a plate or cutting board. On one of the tortillas, add black bean mixture and spread over the tortillas. Sprinkle the cheese over the mixture. Cover with the other tortilla and press together.

In a pan over medium high heat, add the coconut oil to grease the pan.

Place the quesadilla in the pan to cook until crispy, about 3 minutes, and then flip. NOTE: If you're having trouble flipping, you can slide it on to a plate then flip it in the plate then place it back onto the machine. Remember that the cheese is holding it together, so press it firmly together to ensure both sides are sticking together.

When crispy, remove from the pan and place onto a plate. Cut into four equal pieces (I like to use a pizza cutter) and top with the greek yogurt or coconut yogurt and some parsley. Enjoy!
