gluten free rice

A healthy and naturally Gluten-free dish, made in one pot, with ground turkey, rice and beans and spiced with bell peppers and cumin.

One Pot Ground Turkey, Rice and Beans (GF)

olive oil

lbs turkey

onion powder

garlic powder

cumin

oregano

tsp black pepper

salt

red bell peppers (diced)

tomato paste

Tbs apple cider vinegar

chicken broth

jasmine rice

Add olive oil to a large pot/ pan with a tight fitting lid, and heat over medium- high heat. Add the ground turkey, onion powder, garlic powder, ground cumin, dried oregano, black pepper, and salt, and mix. Stir often, until turkey is browned and cooked through, about 5 to 7 minutes.

Then, add the diced bell peppers, mix and cook, about 2 more minutes.

Push the ground turkey mixture to the sides of skillet, leaving a hole in the center of the pan. Add the tomato paste and vinegar to the center and cook, stirring constantly, for about 30 seconds.

Then, add the red kidney beans, chicken broth, and jasmine rice. Mix everything together. Bring the mixture to a boil, and then quickly reduce the heat to low and simmer, covered, until the rice is tender, about 40-45 minutes.

Check the mixture at 40 minutes and mix. Test the rice. If it needs 5 more minutes, let it cook a little longer. 40 minutes was perfect for me.

brown rice (rinsed)

scallion (sliced)

tsp of all purposes seasoning (see post)

black pepper

pimento berries (or 1/8 tsp of ground allspice (optional))

tbsp of dairy free butter

scotch bonnet

thyme

vegetable stock (can use water)

On medium heat, in a dutch oven or casserole dish begin to sautee the scallion, onion and garlic until transparent.

Then add your all purpose seasoning, black pepper, sprigs of thyme, pimento berries, scotch bonnet and continue to cook and stir for another 1-2 minutes.

Add the pumpkin along with the vegetable stock and finally add the rice grains.

Bring to a rolling boil before adding the butter and reducing the heat to medium/low.

Put the lid on the pot and allow the rice and pumpkin to cook through for 25-30minutes.

Leave the rice to cook for the given time, don't stir the rice or the grains will fall apart. The rice will be fluffy with liquid asborbed completely.

Once the rice is cooked, adjust for salt levels if needed
