Our Keto Coleslaw is a creamy, tangy and colorful side dish. This classic cabbage salad is a staple recipe that everyone can enjoy!

Keto Coleslaw & Creamy Dressing

green cabbage (thinly sliced)

red cabbage (thinly sliced)

scallions (thinly sliced)

parsley (fresh)

Low Carb Mayonnaise

sour cream

apple cider vinegar

lemon juice

garlic powder

salt

pepper

In a large mixing bowl, add the cabbages, scallions, and parsley and toss together. Set aside while you make the dressing.

In a small bowl, add the remaining ingredients and whisk together until smooth.

Pour half the dressing into the salad and mix well. Continue to add the dressing until the salad reaches your desired level of dressing (we like to add it all).

Taste your coleslaw and season with additional salt and pepper if desired.

Serve and enjoy.

Best Keto Coleslaw & Dressing Recipe - How to Make this Simple Low Carb Salad in Minutes (Easy)

A quick and easy watermelon feta salad, with basil, flaky sea salt, and a generous drizzle of extra virgin olive oil. This is the best side dish and will be on repeat all summer long!

Watermelon Feta Salad

watermelon

oz feta (crumbled,

Tbsp basil (thinly sliced)

½ Tbsp extra virgin olive oil

tsp flaky sea salt

tsp black pepper

Combine all ingredients in a large bowl, then gently toss to combine. Taste and adjust seasonings as needed. When ready to serve, garnish with a little extra feta cheese and flaky sea salt on top.

This Curried Quinoa Salad with Maple Curry Dressing has everything going on, warm curry spices, fresh herbs, bright citrus flavours, nuttiness, and sweet apple crunch and it's gluten free and vegan too! You HAVE to make this Quinoa salad!

Curried Quinoa Salad

Quinoa

Water

smoked almonds, rough chopped

carrots, grated

apple,

red onion, diced

curry paste * (yellow curry paste)

Apple Cider Vinegar

balsamic vinegar

maple syrup

cumin

turmeric

grapeseed oil*

green onions, rough chopped (1/4 -1/3 cup)

lemon lemon

For the quinoa

Soak the quinoa in water for 10 minutes, rinse drain and add too a medium pot with the 2 cups water. Bring to a boil, cover and reduce to a simmer and cook for 15-17 minutes. Remove from heat, let sit covered for 10 minutes. Fluff with a fork. Cool on counter then in fridge. (you could also use your rice cooker for quinoa it works great!)

While the quinoa is cooking make the dressing

add all ingredients to your Nutra bullet or blender. Blend until smooth.  Set aside.

Prep the fruit, veggies and fresh mint, add to a salad bowl along with the cooled quinoa.

Pour over the dressing. Enjoy right away or chill first.

I made this salad to go with our Christmas dinner and everyone loved it!

Wish we’d made this sooner is so good. My mother in law wanted to take the leftovers home.

Made this up for a barbeque for Patti's birthday.  It went over really well.
I didn't have all the ingredients so substituted macadamia nuts for almonds, Thai red curry paste for Madras, used two apples and arilled cauliflower.  YUM!

Make this mayo-free healthy broccoli salad side dish with a handful of nutritious ingredients in under an hour with zero cooking required! Vegan Option.

Healthy Broccoli Salad (Mayo-Free)

Tablespoons extra virgin olive oil

Tablespoons honey

Tablespoon balsamic vinegar

¾ – 1 teaspoon kosher salt

black pepper

broccoli florets

berries blueberries

roasted nuts

sliced/diced red onion

baby spinach leaves, chopped

Kosher salt and black pepper,

In a small bowl, whisk together the yogurt, oil, optional honey, vinegar, lemon juice, salt and pepper. Set aside.

Yogurt Sauce

Combine the broccoli, onion, blueberries and nuts/seeds together in a large bowl. Pour the yogurt sauce over the salad and gently mix until combined.

Add optional spinach and toss again until well coated.

Season to taste then place in the fridge to chill for 45 minutes to an hour before serving.

Cup Vegan/Soy-Free Mayo

TB Nutritional Yeast

TB Fresh Lime Juice

Tsp Lime Zest

Cup Chopped Cilantro

to 1 Tsp Chili Powder (to taste)

First, remove the husks of the corn cobs and lightly brush the corn with olive oil (or directly grease your grill).

Heat the grill you'll be using, and place the corn cobs on the heated grates. Using tongs to rotate the corn, slightly char the kernels for about 10-15 minutes.

Once you get the amount of char you want, remove the corn cobs from the grill and allow them to cool slightly

This was delicious!  We are having a Super Bowl party and needed some vegan options.  This compliments the vegan sweet potato black bean enchiladas I made.  The non-veg attendees raved about it and couldn't believe it was vegan.

I made this today and wowza so good!!! I did add some diced up peppers (red yellow green), and I added 1 T crushed red pepper seasoning and a bit (1/2 teaspoon) of tajin seasoning. I used an epicure mayo which is vegan. I will totally make this again!!

Made this last night with leftover corn I had and wow, was this delicious! I threw in some grilled jalapeño I had, but otherwise followed the recipe to the T. Super flavorful and enjoyed this with some tortilla chips! Will definitely remake again :)
