30-Minute Smoky Black Bean Soup

15 ounces. can fire roasted diced tomatoes (1.00)

Dice the onion and mince the garlic. Remove the stem and seeds from the jalapeño, then dice the remaining jalapeño flesh. Add the onion, garlic, jalapeño, and olive oil to a soup pot and sauté over medium heat for about 5 minutes, or until the onions are soft and translucent.

While the onion, garlic, and jalapeño are sautèing, use a blender to purée two of the three cans of black beans (with liquid from the can). If the beans are too thick to purée, add just enough water to make them blend.

Add all three cans of black beans to the soup pot (one can of whole beans with liquid, two puréed), along with the can of fire roasted diced tomatoes (with juices), the cumin, oregano, and smoked paprika. Stir to combine.

Place a lid on the pot and allow the soup to come up to a simmer. Allow the soup to simmer, stirring often, for about 15 minutes. After simmering for 15 minutes, taste and add salt to taste (I added 1/2 tsp). Serve hot with your choice of toppings.

What month do you start eating pumpkin everything?

Peeling a raw pumpkin was EXTREMELY hard.  

I added some basil leaves while simmering to give a little punch.  It was a thicker, more hearty chicken soup. Next time I will dice and pan fry chicken and add it in.  Make it a pumpkin base chicken soup.

Super easy and delicious. Even my keto niece loved it (without the cream-subbed butter instead). I cut it in half (just in case). Now I'm going to do the other half of the pumpkin but add 2 slices cut up bacon with the onion and garlic. Will repost after tasting. I have been medically really compromised recently so thank you very much for a recipe I was able to do. It got me back in the kitchen (a little restricted, but feeling some accomplishment). This is my first time trying this soup and it was delicious and I used garlic salt I’m a vegetarian so I couldn’t put the meat base in it so I added a few extra seasonings with the onion and the garlic salt and pepper and it was delicious

The Best Instant Pot Broccoli and Cheese Soup

Select browning/saute to preheat the pressure cooker. Add the butter and onion and saute until the onion is tender, about 3 minutes.

Add the garlic and cook until the garlic is fragrant, about 30 seconds.

Stir in the chicken stock, broccoli, carrots, salt, pepper, and red pepper flakes.

Lock the lid in place, make sure the vent is set to seal, and select high pressure and 1 minute cook time.

When the cooking time ends, use the quick pressure release. When the valve drops, remove the lid carefully.

In a small bowl whisk together the corn starch and cold water until smooth.

Set the pressure cook to saute/browning and slowly add the corn starch mixture to the pot. Stir constantly until the soup comes to a boil and thickens.

Turn off the pressure cooker. Slowly stir in the cream or half-and-half.

Add the cheese a handful at a time and stir until it melts.

Adjust salt and pepper to taste and serve hot.

Warm and comforting, this Low Carb Chicken Pot Pie Soup has all the delicious flavors of a freshly baked pot pit, but is soup form and without all the extra carbs.

Chicken Pot Pie Soup - low carb, gluten free

Heat the olive oil in a large dutch oven or stock pot, over medium heat. Add the celery and carrots and sauté until they are crisp-tender.

Add the chicken, garlic, salt, thyme, onion powder and black pepper. Continue cooking until the chicken is cooked through.

Pour a little bit of the chicken stock into the pot to deglaze. Scrape up and mix in any bits that are stuck to the bottom of the pan. Add the remaining chicken stock, bring to a boil and then reduce to simmer. Simmer for 10 minutes.

Stir in the heavy cream, cheddar cheese and peas, simmer for an addition 30 to 40 minutes, stirring frequently.

Wow!  So good.  We had both leftover rotisserie chicken and homemade chicken tenders, so we needed a recipe to use this chicken up.  My sister was so excited about the prospect of me making this recipe that she rushed to the store to buy celery.  Her efforts were rewarded.  This soup is YUMMY!  I used Poultry Seasoning in place of the Thyme, but made no other revisions.  This soup is even better the next day!

Excellent soup however I wish the recipe indicated the amount of carrots in either a measuring cup measurement or by weight. "Large" carrots can vary in size.

You will be so surprised how much this actually tastes like chicken pot pie that you will never miss the crust!  For personal preference we always add a bit more chicken. This is creamy, comforting and delicious. We got 2 big bowls for supper and have enough left over for lunch for both of us.

Made this in my instapot. Added diced onion &amp; cauliflower. Sautéed onion, veggies &amp; garlic in pot, added seasonings, broth &amp; raw chicken breasts. Cooked on poultry setting. Shredded chicken, added peas &amp; heavy cream. Sprinkled cheese on individual bowls. Excellent!

This Instant Pot vegetable beef soup is incredibly simple to make! But the final product still delivers in richness and depth of flavor.

Instant Pot Vegetable Beef Soup

2.5 lbs. stew beef (near room temperature)

Tbsp. sea salt

olive oil (separated)

yellow onions (large dice)

carrots (roughly chopped)

celery (diced)

mushrooms (roughly chopped)

Worcestershire sauce

tomatoes

1.5 lbs. new potatoes (quartered)

green beans

Season beef with salt and pepper. Then, using sauté setting – once hot add 2 tablespoons of oil and thoroughly brown beef. Do this in two batches and do not stir too frequently. After the first batch, add 1 tablespoon of oil.&nbsp;Do not wipe or rinse bottom of pot! There’s so much flavor in there!

Continuing on sauté setting – add onions, carrots, garlic, celery, mushrooms, thyme, Worcestershire sauce, and bay leaves.&nbsp;Cook for about 5 minutes, stirring frequently, making sure to scrape up any bits on bottom.

Then, return beef to pot and add all remaining ingredients (you can really add whatever vegetables you prefer) and mix well. Lock lid and cook for 10 minutes at high pressure.

Once cook time is complete, allow pressure to release naturally (will take about 25 minutes). Remove thyme bundle and bay leaves. Serve and enjoy!

Reduce heat, cover and simmer for 15 minutes. Add instant brown rice. Cover and continue cooking for 10 minutes.

...let me just tell you a secret....I wish I was sick and it was cold out!  I could eat this for all 3 meals AND snacks~. I added some frozen spinich and about 1/2 cup frozen peas; added the rest of the cream in the bottle, maybe 1/4 cup and one handful of chese extra..............the result?  Pure Heaven!

Peel and dice onion

Trim celery ribs and dice. Peel carrots and dice. Measure 1 cup of each.

Core cabbage and cut into shreds. Trim mushroom stems and slice into 1/4&quot; pieces.

Cube leftover (boneless, skinless) turkey meat.

PREP:

Heat a large soup pot over medium heat. Once hot, add oil along with diced onion, celery, carrot, fresh thyme and a pinch of salt.&nbsp;Cook 8 to 10 minutes, stirring occasionally, until vegetables begin to soften and onion is aromatic.
