Fill a pot with about 3 inches of water. Bring to a boil.

Add gnocchi, boil for 2-3 minutes until gnocchi floats. Drain, then toss gnocchi with 2 teaspoons olive oil to keep it from sticking together.

Melt butter in a large skillet over medium heat. Add garlic and saute 1 minute until fragrant.

Add gnocchi and dried herbs, and saute 2-4 minutes until gnocchi begins browning on the edges.

Transfer gnocchi to a bowl and cover to keep warm.

Add tomatoes, tomato sauce, and broth to the skillet over medium heat and bring to a simmer.

Stir in heavy cream, crushed red pepper flakes, and salt and pepper. Simmer 4-5 minutes until sauce is reduced and creamy.

Stir in gnocchi, taste and add salt and pepper if needed. Garnish with thyme or basil and freshly grated parmesan and serve.

Creamy Tuscan Gnocchi

Melt butter in a large skillet over medium heat. (Use a skillet with a lid.) Add garlic and cook for 30-60 seconds, just until fragrant, then stir in the cream and broth.

Bring the mixture to a gentle simmer, then stir in the gnocchi and sun-dried tomatoes. Cover the skillet and cook for 4 minutes, untouched.

Uncover the pan, stir well, and test a gnocchi. Continue to cook, uncovered, stirring frequently, until the gnocchi is tender and the sauce slightly thickened.

When the gnocchi is tender, stir in the spinach, Parmesan, and lemon juice. Season with salt, pepper, and more lemon juice to taste. (I usually start with 1/2 teaspoon salt and 8-10 cranks of black pepper, but this will vary to your preference.) Once the spinach has wilted, remove pan from the heat.

Garnish with fresh basil and more Parmesan, as desired. Serve and enjoy!

Watch the video to see all the instruction steps.First, finely dice the onion and mince the garlic. Then, heat the oil (or vegan butter) in a large skillet over medium heat.

Once hot, sauté the onion for 3 minutes before adding the sage and garlic and sautéing for a further minute, stirring frequently.

Add the salt and pepper, mustard, white wine, dairy-free cream, and peas to the pan, then stir well and bring to a boil.

Reduce the heat to a simmer, add the gnocchi to the sauce, and cook for about 7-8 minutes, stirring occasionally, until the gnocchi are tender, and the sauce has thickened.If it becomes too thick, add more cream/milk. If it isn’t thick enough, allow it to simmer for a few more minutes.

Finally, sprinkle the sage gnocchi with vegan Parmesan, taste it to see if it requires more salt and pepper, then serve and enjoy!
