Baked Goat Cheese Dip

cream cheese, softened

Parmesan cheese

extra virgin olive oil,

garlic,

black pepper

flat-leaf parsley

thyme

Salt

lemon zest

Crostini, crackers, or mini naan

Preheat oven to 400ºF.

In a food processor, combine goat cheese, cream cheese, Parmesan, olive oil, garlic, and pepper until smooth, scraping down sides as needed. Fold in herbs and lemon zest. Taste and add salt if desired.

Spread into a baking dish and bake for 10-12 minutes or until warm and just starting to bubble around the edges. Don’t overheat the dip. It should be creamy and not starting to separate.

Drizzle with olive oil, if desired. Serve with crostini, crackers, or mini naan.

Pre-heat oven to 400 degrees. Place goat cheese, cream cheese, parmesan cheese, black pepper, and olive oil in the bowl of a food processor. Pulse a few times to break the goat cheese logs and then process until fully mixed, 30 seconds or so.

Transfer to an oven-proof bowl. Smooth out the top with the back of a spoon and brush it with a little bit of (no more than ½ teaspoon) olive oil.

Bake in the oven for 16-18 minutes or until it starts bubbling.

Serve immediately with crackers, veggies, and fruits.

Roasted Garlic Goat Cheese Dip

garlic

olive oil, divided

Kosher salt

cracked pepper

goat cheese, room temperature

milk

thyme leaves

grape tomatoes

bread

Slice the top off of each head of garlic. Drizzle the cut side of each head with 1 teaspoon olive oil and season with salt and pepper.

Roast for 30 minutes or until the cloves of garlic are soft. Allow to cool until you can handle it.

Add goat cheese, Parmesan, milk, and thyme to a medium bowl.

Squeeze cloves of roasted garlic into the bowl and stir to combine all ingredients together.

Lightly oil a small baking dish with 1 teaspoon of olive oil. Then spread goat cheese mixture in an even layer in the baking dish.

Top goat cheese with tomatoes, then drizzle tomatoes with remaining teaspoon olive oil and season with salt and pepper.

Bake for 20 minutes or until warmed through. Then broil for 1-2 minutes to brown the top.

Garnish with a drizzle of olive oil and fresh thyme if desired.

Serve warm with sliced French bread and crackers.

This dip is perfect for a Super Bowl party or family get together!

I was thinking about using sun dried tomatoes instead of grape tomatoes. Do you think that would work with the recipe?

This is delicious.  I have to admit, I took the lazy way out but it still was so good!  I only had 2 - 4 oz logs of Honey flavored goat cheese - mixed it with shredded parm, milk and a heaping teaspoon of jarred garlic.  I halved the cherry tomatoes and let them sit in olive oil, splash of balsamic vinegar, a dash of italian seasoning and more garlic.  When ready to cook, I just piled the tomatoes on top of cheese mixture and baked for 20 minutes.
