Paleo Gochujang (Korean-inspired Red Chili Paste)

medjool dates (pitted)

water

apple cider vinegar

tomato paste (no salt and sugar added)

tbsp coconut aminos

garlic powder

onion powder

salt

Use your hands to roughly break the pitted dates to smaller pieces. Blend with 3 tbsp water in a small (4-cup) food processor until the dates are finely chopped to small bites.

Add the rest of ingredients. Pulse and toss a few times until smooth (no fruit chunks). You might need to scrape the bowl a few times with a food scraper until the paste is creamy smooth.

Taste and see if you’d like to add more salt, coconut aminos, gochugaru, or vinegar. The flavor profile should be sweet, savory, and slightly spicy. Store in glass jar container in the fridge until ready to use. Best finish in 3 weeks for best flavor.

Gochujang substitute (Korean hot pepper paste substitute) for Paleo, Whole30, Vegan,  Gluten-free

Gochujang is a spicy fermented chilli paste. It has a dark, red colour with an intensely savoury, sweet, spicy, and almost smoky taste. If you struggle to find gochujang in the grocery store, this homemade gochujang substitute recipe has you covered.Makes roughly 1 cup.

Homemade gochujang substitute

miso paste

gochugaru ((Korean chilli powder))

maple syrup

soy sauce

rice vinegar

Skip this step if you have a fine chilli powder. Otherwise, add the chilli powder to a blender or spice grinder and blitz until fine (or at least finer).

Place all the ingredients in a small food processor or use an immersion blender to blend everything into a smooth paste.

If your paste is too thick to blend, add water, one teaspoon at a time. I typically add about two tablespoons of water. You want a thick paste similar to the texture of tomato paste.

Chinese five-spice is a fragrant spice blend with a warm cinnamon and liquorice-like anise flavour. Use this recipe for homemade five-spice powder, or see the full post for more substitutes. This blend is so good you&#39;ll never want shop-bought five-spice again!

Chinese five-spice substitute

star anise pods (5 grams), (or 1 tablespoon of ground star anise)

cinnamon (5 grams), (or 1 tablespoon of ground cinnamon)

fennel seeds, (or 1 tablespoon ground fennel)

Szechuan peppercorns (optional)

cloves

Break the cinnamon bark into smaller pieces. Add it to a spice grinder (or coffee grinder) along with the rest of the whole spices, and blitz into a fine powder.

Transfer the ground spices to an airtight container (or spice jar) and use it within a few months for the best flavour.
