Hamburger Soup with Macaroni (Goulash Soup)

vegetable oil

Italian seasoning

salt (or

black pepper (or

(28 ounce) can diced tomatoes

dry small elbow pasta, uncooked

fresh parsley, chopped (optional, for garnish)

Heat oil in a 6 quart Dutch oven or large pot over medium-high heat until the oil is sizzling hot, about 2 minutes.

Add ground beef and cook until browned evenly, about 6-8 minutes. Use a spatula to break the ground beef into small pieces. Drain the excess fat.

Add onions, garlic, and carrots and sauté until tender, about 2-3 minutes. 

Stir in Italian seasoning, salt, pepper, tomato paste, and Worcestershire sauce until evenly combined. Add diced tomatoes and beef broth. Mix well and bring the soup to a boil.

Stir in macaroni pasta and reduce the heat to medium-low. Cover the lid and simmer until the pasta has cooked through, about 15 minutes. Stir occasionally to prevent pasta from sticking to the bottom of the pot.

Serve warm with a sprinkle of chopped parsley, if desired.

Using your hands, mix together ½ cup flour and egg, kneading into a dough ball. Add extra flour until you make a dough.

Pinch small, pea size pieces from the dough, and roll them using your fingers.

Place Csipetke on a plate sprinkled with flour so they don&#39;t stick together.

Making Csipetke 

Heat oil in a large pot and caramelize onions for about 8 minutes.

Remove from heat and mix in ground Paprika. You don&#39;t want the Paprika to burn while on the heat.

Add cubed beef, stir until coated. Cook beef until starts to brown (about 4-5 minutes). Add salt and pepper.

Mix in tomatoes and Paprika peppers. Juices will release while cooking, but can add 1 cup of water if too dry.

Add red wine and allow to simmer for 30 minutes.

Mix in carrots, parsnips, potatoes and Caraway. Fill pot with water and allow to simmer for 50 minutes.

Add Csipetke dough balls and cook for 15 minutes.

Taste, add salt and pepper if needed. Garnish with parsley when serving.

Beef and Tomato Macaroni Soup is one of the most comforting soups out there! It's filled with flavorful,&nbsp; pieces of grounnd beef, sweet tomatoes, hearty macaroni and a herbed broth. Destined to become a dinnertime staple!

Goulash Soup - Beef and Tomato Macaroni Soup

lb beef

onion

carrots (2 medium)

garlic (, minced)

Salt and black pepper

low-sodium beef broth

tomato sauce

(14.5 oz) cans petite diced tomatoes

Tbsp chopped fresh marjoram ((or 1 tsp dried))

thyme ((or 3/4 tsp dried))

bay leaves

(5.6 oz) dry small elbow pasta

corn ((optional))

Heat 1 Tbsp olive oil in a large pot over medium-high heat. Add onions and carrots and saute 3 minutes then add garlic and saute 1 minute longer. Pour mixture onto a plate.

Heat remaining 1 Tbsp olive oil in pot over medium-high heat, add beef, season with salt and pepper and cook until browned. Drain fat from beef.

Return sauteed veggies to pot along with beef broth, tomato sauce, tomatoes, Worcestershire, marjoram, thyme, bay leaves and season with salt and pepper to taste. Bring to a boil. Add in pasta, cover and reduce heat to medium,. Boil stirring occasionally, until pasta has cooked through, about 15 - 20 minutes. If adding corn, stir in corn during last 3 minutes of cooking.

Remove bay leaves, serve warm garnished with fresh parsley and parmesan cheese if desired.
