Million Dollar Pie

(9-inch) graham cracker crust

sweetened condensed milk

lemon juice

(8-ounce) can crushed pineapple (well drained)

pineapple tidbits (well-drained)

pecans (chopped)

coconut

(8-ounce) container frozen whipped topping (thawed)

coconut (toasted)

maraschino cherries

In a large bowl, mix together sweetened condensed milk and lemon juice, using a hand-held electric mixer, until it's slightly thickened.&nbsp;

Stir in the crushed pineapple, pineapple tidbits, 3/4 cup pecans and 1 cup coconut until well incorporated.

Fold in 8 ounces of the thawed whipped topping. Pour into prepared crust and smooth evenly. Cover and refrigerate until well chilled, about 4-6 hours.&nbsp;

Before serving, top with remaining 8 ounces of thawed whipped topping, and garnish with 1/4 cup pecans, 2 Tablespoons toasted coconut and&nbsp;Maraschino cherries and serve.

The bread is dense, hearty and has a sweet molasses flavor. No yeast and no kneading required. Just mix everything in bowls, and pour the batter into a loaf pan to bake.

Old Fashioned Brown Bread Recipe

⅓ cup old fashioned rolled oats

all purpose flour

whole wheat flour

tsp baking powder

tsp baking soda

brown sugar

white cane sugar

unsalted butter (cold,

molasses

buttermilk

water

Preheat the oven to 350°F. Grease the inside of a loaf pan with vegetable oil and a paper towel.

Toast the rolled oats in a pan over medium-high heat until golden brown, about 3-4 minutes. Keep an eye on them during this process so they don&#39;t burn.

Add the toasted rolled oats to a blender or food processor and blend until they form a flour-like consistency.

Add the oat flour, all purpose flour, whole wheat flour, baking powder, baking soda, brown sugar and white cane sugar to a large bowl and whisk together.

Cut the cold butter into small cubes, then add it to the flour mixture. Use your fingers or a pastry cutter to mix the butter with flour until it forms pea-sized crumbs.

In a separate bowl, mix together the buttermilk, molasses, water and egg.

Add the buttermilk molasses (wet ingredients) to the dry flour ingredients and mix everything together.

Pour into the greased loaf pan and spread into an even layer.

Bake for 55-65 minutes, or until edges are golden brown and a toothpick comes out clean when poked through the center. Let cool 10 minutes, then run a butter knife along the edges to help loosen. Gently flip and transfer to a wire rack to cool completely.

Every time I go back to visit my grandma, I would bring bags of her roasted peanuts back from Taiwan. You can add the roasted peanuts on top of rice, salad, or noodles, or even enjoy it on its own.

Grandma’s FAMOUS ROASTED PEANUTS

In a large wok, add 4 cups of salt. Turn the heat to medium-high, and stir till the salt is warm.

Once warm, rinse the peanuts, drain, and add the peanuts to the heated salt.

Keep sautéing and stirring for 13 minutes or until peanuts become slightly red, and the house smells amazing. It will be hard to stir and sauté at the beginning since there is water, but after 5-8 minutes, it should be a lot lighter and easier to stir-fry.

Turn the heat off, sift the peanuts, and let them evenly rest on a piece of parchment paper for 10 minutes or until fully cooled down.

Store in an air-tight container.

Grandma's Nugget Cookies

Preheat Oven

Cream

Cream softened butter and powdered sugar until fluffy.

Mix together

In a separate bowl mix together flour and salt.

Combine

Gradually add flour mixture into the butter mixture and mix until well combined. The mixture will be dry and crumbly.

Add vanilla and almond extract to the cookie dough and mix until well combined.

Finally, fold in nuts.

Form cookie

Roll cookie dough mixture into small balls about the size of a walnut and flatten. Place on an ungreased cookie sheet.

Bake

Bake cookies at  325º for 25 minutes or until very lightly browned.

Let cookies cool completely, then dredge in powdered sugar.
