Healthy Peanut Butter Granola

old-fashioned (or quick cooking oats*)

cinnamon

sea salt

peanut butter

honey

½ tsp pure vanilla extract

Preheat oven to 325 degrees F. Grease a large cookie sheet and set aside.

In a small bowl, mix together oats, salt and cinnamon. Set aside

In a microwave safe dish or on the stovetop, melt the peanut butter and honey (or maple syrup) together until smooth.

Remove from heat and stir in vanilla.

Stir in dry ingredients and mix until well combined.

Spread mixture on prepared cookie sheet.

Bake in the preheated oven for 15-20 minutes, or until granola is lightly browned, stirring the granola once gently half way through. (A great way to test for doneness is to remove a small portion of the granola from the pan and set it on the counter. If it hardens as it cools the rest of the granola is done)!

Remove from oven and let sit until cooled.

Once cooled, break apart and eat!

An easy Granola recipe made on the stovetop and ready in under 20 minutes! You only need 5 ingredients and to follow a simple skillet cooked method to achieve a delicious granola in no time! 

Easy Stovetop Granola Recipe

Tbsp coconut oil

oats

Tbsp honey

salt

pecans

Tbsp coconut ((optional))

Measure out ingredients and have ready to add. Line a baking sheet with parchment paper.

Melt coconut oil in a 12-inch non-stick skillet over medium heat.

Add oats and cook, while stirring and spreading even almost constantly, until oats are slightly toasty and crisp (just lightly deepening in color), about 4 to 6 minutes.

Reduce heat to medium-low. Pour in honey and salt. Stir right away.

Let cook, while stirring and spreading even constantly, until just starting to turn lightly golden, about 1 minute.

Add pecans and coconut and cook mixture just until barely golden brown, about 1 minute longer.

Immediately pour and spread over parchment on baking sheet, press down using spatula til you get clusters.

If you&#39;d like it to set faster chill in fridge or freezer about 5 minutes until cool and crisp. Store in an airtight container at room temperature or in the fridge for longer shelf life.

Our Healthy Granola recipe yields the big crunchy granola clusters we love, and it&#39;s incredibly easy to make. At just 100 calories per serving it&#39;s a delicious snack and my favorite for my morning yogurt.

Healthy Granola

raw sunflower seeds

coconut ((I like Bob's Red Mill))

almonds

raw brown sesame seeds (,

butter or coconut oil

brown sugar

vanilla extract

baking soda

Preheat oven to 325 degrees and spray a large sheet pan with cooking spray, or line with parchment paper.

Mix dry ingredients: Add oats, sunflower seeds, coconut, almonds, and sesame seeds to a large bowl and stir to combine.

Make Syrup by adding butter to a large saucepan over medium heat. Stir in brown sugar, honey and salt. Bring the mixture to a boil and once boiling, remove from heat and stir in baking soda and vanilla.

Combine: Pour syrup over the dry oat mixture and mix well until everything is evenly coated.

Bake: Pour mixture onto prepared pan and spread into an even layer. Bake for 8 minutes. Remove from oven and toss mixture, then gently press down on it with your spatula to flatten it back into the pan. Bake for another 8-12 minutes until golden brown.

Press and Cool: Remove pan from oven and use the back of a metal spatula to press the hot granola firmly down into the pan. Allow granola to cool completely in the pan before stirring or breaking it up (this will yield clusters that stick together).

I've tried several granola recipes and they've not been successful.  I was resigned to having to eat expensive store-bought granola until now. Oh my word this is the best granola recipe so easy and tastes perfect! It's an excellent base with so many add n possibilities. 

 The only fundamental change I'll make next time is to omit the 1/4 tsp of salt - with the baking soda in there it was a little on the salty side more than my liking.

Easy to make, delicious and very crunchy.  Love the baking soda trick and will try that with other granola recipes I will make in the future.

So good! Nervous to try; only made granola once and it was a disaster from a woman know for "pioneering" recipes. Can't afford to throw out food, had to keep adding more ingredients to make edible. Really made me angry! So I read all your reviews first. Love how versatile your recipe is. Hate coconut so used pecans, walnuts, almonds, dried pineapple and apricots and of course oats. Used up maple flavored margarine instead of butter, thought might be too sweet so only added 1/4  cup honey. Appreciate food science of baking soda in this. It came out fabulous even though I burned it a little, more brown than golden. Still yummy. Can't wait to try again with other fruits, nuts. Thanks!!!

I searched for lighter granola without boatloads of sugar, dried fruit, etc.  Just healthier, crunchy, and versatile.  This one checked all the boxes in a very delicious and gratifying way!

I've tried a lot of Granola recipes and this one has changed my world!  I didn't skimp on anything, added dried cherries, cranberries, and raisins.   I eat this as is, with chocolate chips, and in my yogurt.   Thank you for sharing this recipe!!

I’ve made this recipe for a couple years now and finally wanted to thank you for it. It has become my GoTo granola. My Son in law requests it for hunting trips, my college granddaughters NEED it for their dorms and my husband has it EVERY morning with berries and yogurt. Thank you again for making my family, and me very happy and I add piñon nuts, pepitas and cinnamon . Yummmm
